2 Dear colleagues Getting Fit for Summer is really important because consumers change their purchasing habits during the summer months. Both the temperature and the weather can have big impacts on the sales mix of your business. What s more, the unreliable and unpredictable nature of our summer weather means that demand for certain menu items can vary dramatically from one week to the next. In 2009 the hottest month of the summer was actually May, but in 200 both June and April were warmer In 200 September was much warmer than August Although we can t control the weather we can control our preparation and ensure we are on top of our game. Getting fit for summer will mean we can maximise our sales and be ready to respond when the temperature changes.

3 Over the summer months, keeping an eye on the weather forecast is crucial to your planning. Being aware of the weekly forecast as well as the daily forecast means you and your team can react accordingly. WEATHER WATCH Plan for it to be hot. It s best not to assume the summer will be as poor as previous years. Nominate a weather watch person within your team. Make sure they check the forecast at least every two days. Be prepared to adjust your orders accordingly. 5. If we are due for a prolonged hot spell make sure you are up to date with the LATEST PRODUCTS to help you maximise sales. (see pages -5). 4 SUMMER impacts Understand more about how consumers change their purchasing habits is key to a successful summer. expect hot sales on...:: soft drinks The chart below shows how the demand for certain types of soft drinks increases as the temperature rises. Water is the big winner but you should also consider new healthier soft drink options. 5 chilled confectionery Sales of key confectionery lines are less likely to suffer in hot weather if you keep them chilled. The facts speak for themselves: 8% of consumers like chilled confectionery (67% of consumers like it all year round not just in the summer) ** Top 0 Confectionery Lines 67% say they would buy more confectionery if it was presented to them chilled ** Within a canteen, if you have chocolate sited at the till point and with the chilled snacks your footfall will increase. It can deliver an uplift of over 5% *** The use of units to merchandise chocolate bars in the chiller and to maximise sales opportunities in hot weather produces a sales uplift over % ***. Kit Kat 2. For example, sales of the Go Ahead brand can increase by 30% in May and June * and, last year, Walkers Sunbites increased both sales and share in our business from May to September.

7 AIR CONDITIONING Is it working? If not, call out an engineer. Also, make sure your team know how to set it 20 C is the ideal summer temperature and should not be adjusted Remember air conditioning only works if the windows and doors are closed Filters in air conditioning units do require cleaning. Get your engineer to check these on their next visit to avoid a breakdown Remember, your customers won t sit in a hot environment to eat. OUTDOOR SEATING Have you got enough and is it in good repair? If not speak to your Regional Manager about ordering more Make sure you deep clean all outside furniture before you put it out Remember, if smoking is allowed in your outside eating area make sure you have ashtrays ready and on every table. THINKING AHEAD REFRIGERATION Are all your fridges working and do you have back up for sales areas? Make sure that all filters are clean and that nothing else is obstructing the airflow into them Think about how you can store additional cold drinks in fridges so that when you fill up your displays the drinks are already cold Remember, these fridges are going to work hard this summer so help them all you can.

8 SETTING UP YOUR JUICE AND SMOOTHIE STATION Whatever the weather, your drinks station should contain the core range but as the weather heats up, include a selection or all from the premium range and add in trade up accompaniments to offer customers a broad and appealing selection of juices and smoothies. Make sure the juice area is clear of other distraction and the full range is on view. THE BASICS Self serve from juice dispensers Disposable domed cups with straw from the chiller cabinet or iced vessel Fresh retail juices and smoothies within easy reach (see Best Practice examples). 10 salad selection Salad bars should contain an appropriate ratio of basic undressed (or naked ) salads versus dressed (i.e. composite salads), and that ratio should be a 50:50 equal split between both An appropriate ratio of fresh produce versus tinned or frozen/convenience should also be observed. Therefore; 60%-80% of your salad bar should be freshly prepared using fresh produce dressings, dips and accompaniments To add variety, a selection of oils, vinegars, mayo and dressing should be offered Likewise, offer a selection of flavoured mayo (see over page), salsas, vegetable and bean purées and crushes Ensure that customers can enhance their meal and add texture and flavour through a range of crispy toppers, croûtons, spice and herb sprinkles, nuts and seeds ADDED VALUE AND TRADE UPS To take advantage of impulse purchase opportunity, always offer premium related products to be suggested at point of sale such as breads, proteins, bundled meal deals and linked offers. PRESENTING YOUR SALAD OFFER When presenting your salad bar, the food within will be greatly enhanced by the service equipment in particular, but also the disposables used, signage and labelling displayed, and how the offer is marketed. Toppings, sprinkles, croûtons and breads consider the following when planning the layout of your salad bar Use any available space, shelves and counter areas to sell related or retail items If customers stop regularly at certain points, observe this and use these hot spots for trade ups and impulse buys to increase sales Place your salad items in the order you wish your customers to build their salad, i.e. cheaper undressed product at the beginning to bulk out the portion if selling as a complete boxed price.
