3 Hello Thank you for joining me here. If you are looking for some inspiration to help shape your week into one that is more deliciously raw, then I hope that these recipes will extend your culinary canon and become a regular feature in your repertoire. Some of these recipes might sound like the sort of thing that someone else makes, but you really don t need much experience or fancy equipment in the kitchen department to be able to make these. In fact, I love the fact that there is no cooking involved which in my experience makes these recipes a lot more likely to succeed. Please feel free to bring your own character to each of the recipes.. a handful of goji berries soaked in orange juice with some chopped ripe pear added to the coronation kale, or some seasonal fruits on the vanilla cheesecake, or luscious raspberries at the bottom of the chocolate mousse. Whatever you choose to make, being creative in the kitchen can help to transform your food from the everyday raw to the extraordinary and therefore you are more likely to keep on track. 5 The Delicious Green I just love green juices they are guaranteed to put a spring in your step and a glow on your face. This one is a classic. Yield: 1 large glass Effort: Easy Time: 5 mins TIP Use only the skin of the lemon if they are organic or unwaxed. 5 apples, chopped 1 stalk celery 4 kale leaves ⅓ cucumber ¼ lemon, skin on Simply push all of the ingredients through your juicer. If you have a centrifugal juicer, you may find it helpful to sandwich your kale leaves between other ingredients. Deliciously Raw 05

6 Tomato Soup What could be more comforting than a warm tomato soup? This is a delicious raw alternative for anyone who has a craving for Heinz. Yield: Serves 1 Effort: Easy Time: 5-10 minutes TIP Choose the best quality baby plum or cherry tomatoes for the best flavoured soup. 2 carrots ½ red pepper (bell pepper) 1 cup baby plum tomatoes 1 tsp lemon juice ½ tsp olive oil ½ sun dried tomato, soaked in warm water 1/8 tsp celery salt 1. Juice the carrots and the pepper (bell pepper). 2. In a blender, whizz the juice with the other ingredients. 3. Season to taste. 4. Warm in a saucepan until just warm to the touch. 5. Serve in a warmed bowl. Deliciously Raw 06

7 Golden Coronation Kale One of the most irresistible ways to eat kale that I know. Creamy, nourishing with the warmth of the curry, this is real good mood food. Yield: Serves 4 Soaking: 2 hours Time: mins TIP Try adding raisins instead of goldenberries Coronation sauce: 1 cup cashews, soaked and rinsed ¼ cup water 1 tbsp lemon juice 1 tsp mild curry powder 1 tsp agave 1 pinch of cayenne pepper 1 large head of kale 1 tsp olive oil A pinch of salt ¼ cup dried apricots, finely diced 2 tbsp golden berries 1 spring onion (green onion), finely sliced ¼ cucumber, finely diced 1. Massage the kale with olive oil and salt 2. Rinse and drain the cashew nuts under cold running water 3. In a blender, whizz all the coronation sauce ingredients until smooth 4. Massage the kale with the coronation sauce, reserving a little of the sauce back in the jug. 5. Stir in the apricots, goldenberries, spring onion and cucumber. 6. Add a splash of water to the blender to water down the remaining sauce and pour as a dressing over the salad. Deliciously Raw 07

8 Hot Schokolade When it gets to Thursday, I m generally ready for a little bit of indulgence. This raw hot chocolate is so rich, thick and creamy that you could almost think it could be in one of those little cafes in Switzerland. Free from cream, dairy and sugar so it s a perfect healthy treat. Yield: 1-2 servings Time: 10 minutes TIP I always feel a little bit more comforted if I warm the mug first. It gives the feeling of a hot drink and makes it feel even more indulgent. 3 cups almond milk ½ cup cacao powder 1 tbsp agave or maple syrup (to taste) 1 tbsp of ground mesquite 1 tsp vanilla A pinch of cinnamon 4 tbsps grated cacao butter, melted 1. Warm the almond milk in a saucepan. 2. Add the cacao powder, sweetener, mesquite, vanilla and cinnamon and stir until well combined. 3. Alternatively you could whizz all of these ingredients together first in a blender and then warm it in the saucepan. 4. Add the melted cacao butter and whisk until frothy. Deliciously Raw 08

9 Spicy Dressing THANK GOODNESS IT S FRIDAY By the time it gets to Friday evening, all I want to do is relax and not spend too much time in the kitchen and this recipe hits the spot perfectly. It works well poured over red cabbage and broccoli providing the mouth-watering feel of eating a stir fry but with a lot more freshness. It is also a very useful dressing to serve over steamed veggies, if the rest of the family are eating cooked. It is delicious with steamed rice too. Yield: 5-6 Effort: Easy Time: 5 minutes TIP This will keep in the fridge for two days if covered. 6 tbsp tamari 2 tbsp sesame oil 1 2 tablespoons agave 3 tbsp lime juice 1 tbsp fresh ginger, grated 1 spring onion, chopped 1 small red chilli, minced In a jam jar (mason jar), shake all the ingredients together until well combined. 10 Blueberry Vanilla Cheesecake Luxurious and luscious, what could be more mouth-watering than this for a weekend celebration with family and friends? Yield: Serves 10 Effort: Medium Soaking time: 2 hrs Time: 30 mins Setting time: 2-6 hrs Setting time: 2-6 hrs Cheesecake: 1 ½ cups cashews, soaked ½ cup coconut milk ½ cup agave syrup 1 tbsp vanilla extract 1 cup melted coconut butter Blueberries and Raspberries: 1 cup blueberries 1 few raspberries for colour Cashew crust: ½ cup cashews, dry ½ cup coconut flour 4 tbsp oat flour ¼ cup date paste 1 ½ tbsp agave syrup 1 tbsp melted coconut butter 1. In a food processor, grind the cashews until they resemble fine breadcrumbs. 2. Add the coconut flour, oat flour, date paste and agave syrup and mix until well-combined. 3. Add the coconut oil and enough water to form a sticky crust. 4. Press the crust into the bottom of an 8 inch spring form cheesecake tin lined with cling film and place in the freezer until firm. 5. In a blender, whizz the cashews, coconut milk and agave syrup. Blend until smooth. 6. Add the melted coconut butter and blend again. 7. Pour the cheesecake mix on top of the cheesecake base and place in the freezer until set. 8. Once set, remove the cling film and add the blueberries and raspberries. Deliciously Raw 10

11 Chocolate Mousse COMFORT FOOD On a Sunday during the late afternoon when everything is quiet and we are settling down for the week ahead, I can often be found in the kitchen rustling up a little chocolate mousse for teatime. This one tastes creamy and super indulgent and be warned it is incredibly rich. Serve with luscious raspberries to cut through the deep deep chocolatiness. Yield: Serves 4-6 Effort: Easy Time: 5 10 minutes Setting: 30mins 1 hr TIP If you cannot find raw cacao powder use good quality cocoa powder instead. 2 medium sized ripe avocados 1 cup coconut sugar 1/3 cup coconut butter, melted 1 tablespoon vanilla paste Pinch of Himalayan pink salt 1 cup cacao powder In a blender or food processor, mix all of the ingredients except the cacao powder until smooth. Then add the cacao powder and blend again. Place in the fridge for an hour to two to set. Deliciously Raw 11

15 Almond Milk Bonus RECIPE Almond milk is so useful and not just for breakfast with porridge, granola or drinks. It can add creaminess to smoothies, be a useful ingredient in desserts and also form the basis of sauces too. Yield: 3-4 servings Soaking time: 8 hrs Time: 5 minutes TIP You can store the almond pulp in the freezer and use it to make cakes. Why not try my Almond Orange Zest Cake recipe 1 cup almonds 3-4 cups water In a blender, whizz the almonds with the water to form an emulsion. Pass this through a nut milk bag to collect the liquid.
