E D U / P O W E L L Powell County Extension Homemaker News With the summer months coming to an end it means the beginning of a new Homemaker year. It s time for the Fall Craft Festival which is held in Madison County. The complete catalog of classes and registration form can be picked up at the Extension Office or downloaded from our website, powell.ca.uky.edu. It s also time for the County Fair and the Homemakers Annual Meeting. I hope to see all of you at the fair entering your beautiful crafts, foods, and canned goods. In this newsletter you ll find important dates and information about upcoming events and activities. If you know a neighbor, friend, or coworker that would enjoy Extension programs, please encourage them to get involved! We always welcome new ideas and suggestions for programs. However, these appliances can be beneficial when it comes to making a quick meal and saving energy. Do you have a toaster oven collecting dust in your basement or garage? Join us for an educational session on the benefits of toaster ovens. The program will be held on September 7th at 1:30 p.m. at the Extension Office. The Fair Book will be coming out soon, a few changes have been made to the Quilt and Photography section of the exhibits so be sure and read your Fair Book to make sure you re entering in the correct category. KEHA State Educational Program Chairmen are charged with developing, implementing and evaluating a three-year program of work related to their chairmanship subject matter. If you would like to fill one of these positions please contact Lawrence, All positions must be filled as soon as possible. Each position with have the support, guidance, and resources of the Extension Office. Food, Nutrition, & Health Chairperson Promote University of Kentucky Ovarian Cancer Research Promote Diabetes Awareness Project Promote women s health issues Family & Individual Development Chairperson Promote and support programs that strengthens the family unit. 6 At the Farmers Market: Apples Source: Heather Norman-Burgdolf, assistant extension professor As summer comes to a close and September approaches, the Powell County Farmers Market sees a shift in fresh produce. Not only does fall bring corn mazes, squash and pumpkins, it is also a perfect time to visit the market to pick the freshest apples. A medium size apple about 2 to 2.5 inches in diameter contains approximately 75 calories and provides bulk in the diet, helping the body digest food. Apples are low in sodium and high in potassium, making them a great natural snack. When choosing an apple, look for firm, crisp, well-colored fruit. Avoid those with shriveled skins, worm holes and decayed spots. Use those with bruises or skin breaks as soon as possible. Store slightly under-ripe apples in a cool place. Once ripe, apples will keep a week or longer stored in the refrigerator vegetable drawer or in a plastic bag. Apple Cranberry Waldorf Salad Ingredients: 1 cup chopped Granny Smith apple 1 cup chopped Red Delicious apple 1 cup diced celery 1 cup halved seedless green grapes As you prepare apples, remember raw ones will darken when the cut surface is exposed to air. Protect cut or peeled apples from darkening by mixing with ascorbic acid, such as lemon or orange juice. Working only with five apples at a time, mix one teaspoon of ascorbic acid with three tablespoons of water. Toss gently with the apples. You can find more than 2,500 varieties of apples in the United States. The most popular varieties available in Kentucky are: Lodi, Red Delicious, Rome, Winesap, Gala, Jonathan, Cortland and Golden Delicious. For more information, please contact Powell County Extension office. Of course, you can enjoy apples right after picking or purchasing, but they can also be part of a delicious end-of-summer recipe. The Plate It Up Kentucky Proud recipe below is an example of a simple recipe that requires very little preparation. It will be a favorite all season long. Educational programs of the Cooperative Extension Service serve all people regardless of economic or social status and will not discriminate on the basis of race, color, ethnic origin, national origin, creed, religion, political belief, sex, sexual orientation, gender identity, gender expression, pregnancy, marital status, genetic information, veteran status, or physical or mental disability. 1 cup halved seedless red grapes 1 ½ cups dried cranberries ½ cup chopped walnuts 8 ounces non-fat vanilla yogurt 2 tablespoons honey ¼ teaspoon cinnamon Yield: 8, 1 cup servings Directions: Combine chopped apples and diced celery in a medium sized bowl. Add grapes, cranberries, and walnuts to the mixture. Stir ingredients together. In a separate bowl, add the yogurt, honey, and cinnamon. Stir together and pour over the fruit mixture. Cover and chill before serving. Nutritional Analysis: 210 calories, 5 g fat, 0 mg cholesterol, 35 mg sodium, 41 g carbohydrate, 3 g fiber, 34 g sugar, 3 g protein
