While the most expensive option pound-for-pound, PSMOs offer considerable savings over other tenderloin options as they require little handling, since the fat and trimmings have already been removed. Trimming the silver skin from a tenderloin is a job best done by experts, as inexperienced meat cutters can damage the steaks, reducing either the yield or the visual presentation. Since it is the tenderest part of the animal, beef dishes requiring exceptionally tender meat, such as steak tartare, are ideally made from the tenderloin. 11 Export Rib This primal is a Ribeye Roll with the lip-on and bone-in and is commonly referred to as Export Style. It contains seven ribs (6 th-12 th) and part of the vertebral bones. 12 Strip Loin STRIP (VEIN STEAK) End Cut Strip Steaks The Strip Loin is a boneless whole muscle fabricated from the loin primal. Strip Loin steaks are also known as New York Strip Steak, Shell Steak, Boneless Club Steak, Ambassador Steak, and Hotel-Style Steak. All the bones and tail have been removed. 13 BEEF FACTS: Rib Eye RIBEYE LIP OFF Also known as Ribeye Roll, this cut starts as a 112A Beef Rib and is made by removing all the bones and surface fat. In the case of the Ribeye Roll, the lip refers to the tail of the cut which measures 2 inches in length from the end of the ribeye. On the Ribeye Roll the lip is removed. 14 Short Loin Short Loin is a cut of beef that comes from the back of the steer. The short loin contains part of the spine and includes the top loin and the tenderloin. This cut yields steaks like Strip Steak, Porterhouse, Kansas City Strip, New York Strip and T-Bone (a cut also containing partial meat from the tenderloin). The T-Bone also yields bone-in Kansas City steaks (this is the T-Bone without the tenderloin portion). The T-Bone is a cut which contains less of the tenderloin than does the Porterhouse. When the sauce is simmering this can be whisked in for a thicker consistency. Directions (Steak): Trim the fat off of the strip steak and cut each 12 oz steak in half. Rub the steaks in olive oil and black pepper. Allow the steaks to come to room temperature for 10 minutes before cooking. This will help retain moisture in the meat. Over an open flame grill place each of the four steaks and cook until desired internal temperature. Remove steaks from grill and allow to rest for 2-3 minutes and slice. Sprinkle the meat with the sea salt and put some of the chili glaze on the plate then serve.
