6 Cooking Instructions The bag will contain some liquid known as cook-out this hasn t been added but is the liquid that has come out of the meat during cooking. The cook-out has a natural meat flavour making it perfect for gravies, stocks and jus nothing goes to waste! All products need to be heated to an internal core temperature of 72 C for two minutes before serving. Frozen products need to be defrosted in the refrigerator a day prior to service. Specialty The pork belly product is boneless so it can be portioned prior to service. We recommend scoring the skin and salting liberally a day prior to service. Product can be heated in the oven, deep fried or grilled as desired. Lamb shanks can be heated in the oven or braised as desired. Carvery Our carvery products are 70% cooked and need to be finished in a combi-oven (preferred), a regular oven, BBQ hood or spit roast however times will vary. Pre-heat oven to 180 C and cook for: Lamb: 40 45min Beef: 50 60min Pork: 60 70min (A day prior to service score the skin, salt liberally and leave in the refrigerator. This will ensure the skin crackles nicely in the oven!) Ribs Our ribs can be heated using an oven, salamander heater or combi-oven to bring product to temperature and then finished on the grill or alternatively they can be heated entirely using the grill. We recommend coating with a quality rib sauce before grilling to achieve a perfect, caramelised finish.
