Rum is a distilled drink made from either fresh sugarcane juice or refined Sugarcane by-products such as molasses. The clear liquid achieved from refining the sugarcane known as the distillate is usually aged in oak barrels, some for over 50 years. The majority of rum available is produced in the Caribbean and Latin America however some superb bottles are being produced all across the world. Modern rum can be traced to the 17th century Caribbean and more specifically Barbados when Plantation slaves first discovered molasses could be fermented into alcohol. These were the first recorded true rums; however, earlier less refined examples of sugar based spirits have been written about. Caribbean rum can crudely be categorised into 4 main regions and styles: SPANISH Speaking islands including Cuba, Puerto Rico & Dominican Republic produce Anejo rums. Aged, Golden and smooth. ENGLISH Speaking islands generally produce darker navy and Demerara rums typical of the molasses used in production. FRENCH speaking islands such as Martinique and Haiti produce Agricole Rums made from fermented and distilled sugarcane juice. These retain a lot of the original sugarcane flavour. And finally rude rum from JAMAICA. Originally containing a whole array of intoxicants and still to this day, although cleaner and more refined, Jamaican rum is very strong and distinct and has become iconic in long fruity cocktails. These days rum has become much more controlled and refined and because of this, spiced, flavoured and stunning sipping rums are now available and as well presented and respected as Cognac or Whisky. This exceptional quality of sugarcane plus a very favourable climate meant that it grew like wildfire and Cuba has since become known as the Isle of Rum. With the introduction of copper column stills in the 1800s and the know-how of the Cuban Maestro Roneros (Master rum makers) the quality of rum dramatically increased and became the light, crisp and exceptionally smooth spirit we know and love today. Havana Club Anejo Blanco 37.5% 3.50 The youngest rum in the range with fresh notes of vanilla and cherry. You will struggle to find a mixer this versatile rum doesn t go well with. Balanced between sweet and fruity. Simply serve on the rocks with ice-cold Cola. Havana Club Anejo 3 year 40% 3.50 After three years this rum has gained not only an attractive straw colour but an incredible complexity. Accents of vanilla, caramelised pears, banana and oak on the nose are followed by smoky chocolate and vanilla. Mixed with fresh mint and lime this rum makes a true Cuban Mojito. Havana Club Anejo Especial 40% 3.50 Selected white oak barrels are used for the second ageing adding spice and woodiness as well as orange and floral notes. Combined with homemade Demerara syrup, fresh lime and slapped mint, this rum is the base for our ever popular house Mojito and traditional Cuba Libre. Havana Club Anejo 7 year 40% 4.50 First introduced to the public by legendary Cuban Maestro Ronero Don Jose Navarro this rum is made to be sipped. A blend of spirits between 7 and 14 years of age makes this rum incredibly smooth yet complex. Depth of sugarcane, tobacco, spice & vanilla. Havana Club Seleccion de Maestros 45% 6.50 Triple barrel aged and selected by the Maestro Roneros from only the finest aged rums. The colour is rich with amber and reds. Toasted pecan, caramel & spice greet the nose followed by coffee, cocoa & tobacco balanced by a brown sugar sweetness on the palate. Oak from the barrel shines through for a long aftertaste. Havana Club Anejo 15 year 40% Havana Club Añejo 15 años is a limited edition for the passionate connoisseurs who know how to appreciate a rare and luxurious Cuban rum. Sitting proudly in the Iconica range of exceptional rums, Havana Club 15 is comprised of a carefully selected blend of rums, featuring truly distinctive aromas and flavours to give the extra smoothness that is the top mark of top quality rum. 4 DOMINICAN REPUBLIC The wide range of distillers and styles of rum from the Dominican Republic can be attributed to the islands diverse influences including Spanish, French, Haitian and African. This beautiful island is not only full of history and culture but still produces some of the most exciting and fine rums available on earth. HAITI N o: 16 BaRbAncourt 3 Star 40% 3.50 Pale gold. Fresh delicate vanilla and spice. Very versatile adding a delicate floral nature to fruity cocktails. N o: 17 BaRbAncourt 5 Star 43% 4.50 Aged for 8 years this spirit has gained some complexity. Initially vanilla on the nose then plenty of citrus on the palate. Sweet and tangy with cooked fruit and orange marmalade. Serve with ice and a good twist of lemon zest. Matusalem Solera 7 year 40% 4.50 Sweet caramel and molasses are at the forefront of this rum. The sweetness is soon balanced by a touch of spice, spirit and woody notes. Matusalem Clasico 40% 4.50 Aged for 10 years this spirit has gained complexity and depth. Coffee, vanilla and coconut break through toffee sweetness. Toasty oak and nutmeg finish this smooth and exceptional rum. Brugal Blanco Extra Dry 40% 3.50 A triple distilled rum aged between 2 and 5 years in ex-bourbon American oak casks. Sophisticated and dry with fruit and coconut. Tonic and a twist of lime work a treat. Brugal Anejo 38% 4.00 Probably the most famous rum from the Dominican Republic. Smooth & dry with buttery toffee, pepper and spice. Dark sugar and oak makes for a very smooth finish. Brugal % 5.50 A very special rum from Brugal with a second aging in Oloroso Sherry casks. Rich toasty oak, dried fruits, honey and wood smoke. Brugal XV 38% 4.50 Blended from a combination of rums from ex Bourbon & ex Pedro Ximanez casks this spirit has a wonderfully balanced sweetness. Notes of coffee and nutmeg make this a great match for a piece of strong dark chocolate. Ron Barcelo Gran Anejo 37.5% 4.50 Hugely popular in Spain this rum is well balanced, sweet and full bodied. Honey and chocolate notes are lifted by warming spice of black pepper and cinnamon. Very smooth on a couple of lumps of ice with a squeeze of lime. Originally under Spanish rule before being conquered by England in 1655 the production of rum has maintained many of its Spanish influences. Pungent, Powerful and Sweet these rums are consumed like water in Jamaica however over here maybe require a little more care. Appleton Estate Signature Blend 40% 3.50 The flagship rum from Appleton previously known as the V/X. A blend of 15 rums at an average of 4 years old. Sweet with honey and marzipan flavours. Citrus, especially orange and dry apricot breaks through for a smooth fruity end. A quality base to give fruity cocktails and extra element. Appleton Estate Reserve Blend 43% 4.50 Another no-age statement from Appleton, this time a blend of 20 aged rums averaging around 6 years old. More complexity than the Signature with Honey, Orange, Oak and Nutty elements. Goes very well with fruit cake. Appleton Estate Rare Blend 43% 4.80 Aged for a minimum of 12 years this rum has a deep bronze hue. The flavour profile is bold adding molasses, cocoa and oak to the palate in comparison to the younger expressions. One to savour! Appleton Estate 21 Year 43% Aged for a minimum of 21 years in oak barrels. Nutmeg, Molasses and wood. A superb purity and elegance for such an old spirit. One of the greats! Koko Kanu 37.5% 3.50 Natural coconut essence is mixed with white rum from Kingston to make this ever popular drink. Plenty of ice and fresh pineapple is a great combination. Mezan Jamaican 40% 4.80 A blend of rums from different distilleries in Jamaica. After blending it is then re-aged to marry the flavours. Pungent and sweet with subtle spice and banana. An exciting & rare rum to try before it s all gone! SMITH & CROSS 57% 5.00 This pure pot still rum is a mix of heavy bodied Wedderburn style rum and medium bodied Plummer. Bottled at navy strength, this has bags of tropical fruit and a touch of yeast making it a great base for cocktails, however it can also be sipped like a scotch. Very rich, warming and will take you straight to Jamaica on the palate. Wray & Nephew 63% 4.50 The most popular rum in Jamaica accounting for over 90% of its sales. A very powerful rum with sugarcane and plenty of spirit on the nose and palate before softening out with tropical fruit, banana and coconut. 5 - CARIBBEAN - Greater Antilles Sugarcane was first introduced to Puerto Rico in 1515 from Hispaniola quickly followed by the first ox-powered sugarmill 8 years later. After this many water powered mills popped up all over the island and produced raw sugar until the mid 19th century. PUERTO RICO Today Puerto Rican rums are crisp and clean, similar to those of Cuba, and some of the most widely known and popular in the world. N o: 31 Bacardi Carta Ocho 40% 4.80 A fantastic 8 year expression from Bacardi. On the edge of too sweet however with a lump of ice this is complex and refined. Rich dried fruits, oak and vanilla fill the mouth. This can stand proudly on the top shelf. N o: 26 N o: 27 N o: 28 N o: 29 Bacardi Carta BlancA 37.5% 3.50 Originally from Cuba and probably the world s most well known white rum. Dry and smooth with tropical fruits, almond and vanilla. Very versatile and a smooth base to many cocktails. Bacardi Carta Fuego 40% 4.00 Bacardi s fiery cinnamon rum drink. Aged in torched oak barrels and charcoal filtered, this rum has some serious spice and is great to warm up with on a cold Sheffield night. Bacardi Oakheart 35% 3.50 A rum based spirit from ex Bourbon Oak casks. Plenty of honey, sugar and burnt vanilla. A slightly spicy cinnamon to finish. Bacardi Carta Oro 40% 3.50 The golden rum from Bacardi. Very smooth and mellow. Serve with plenty of ice and a long fruity mixer. N o: 32 N o: 33 N o: 34 Bacardi Reserva Limitada 40% A powerhouse of a rum and Bacardi s finest hour. Rare to find but a must to try. A splendid blend of well aged Puerto Rican rums resulting in an oaky and complex spirit with bags of fruit and sweet vanilla. Very very special. Bacardi % refers to the alcoholic proof of the spirit. Exceptionally strong and overwhelming if drunk straight. We certainly do not recommend it! It can however be a welcome addition in cocktails to add a spirity kick. Bacardi Facundo Neo 40% 4.80 A sliver rum from Bacardi s new premium range created in honour of Don Facundo Bacardi Massó who bought the first small distillery on the 4th February 1862 in Santiago de Cuba. This expression is aged for up to eight years. Beautifully balanced with notes of banana, almonds and freshly cut grass, this is great on the rocks or in cocktails. N o: 30 Bacardi Carta Negra 40% 4.00 The new presentation of the popular Bacardi Black. A dark rich rum great served sweet and short with cola. N o: 35 Bacardi Facundo EXIMO 40% 6.00 The 10 year expression from the Facundo range. Medium-bodied and spicy with notes of cinnamon, nutmeg and vanilla

6 - CARIBBEAN - Lesser Antilles LESSER Antilles A long arc of small and partly volcanic islands consisting of 21 island states creating the eastern boundary between the Caribbean Sea and Pacific Ocean. These islands are categorised into three groups. The two main groups are the Windward Islands in the south and the Leeward Islands in the north. The third is the Leeward Antilles in the west. A dry, crisp & versatile rum made with coral filtered water and aged on the shore of Barbados. Cockspur V.S.O.R. 43% 5.00 V.S.O.R. stands for Very Special Old Rum and is made with the oldest reserves from the distillery. Very hard to find in the UK this beautiful expression is a rich Mahogany colour with plenty of Vanilla, Spice and Oak on the palate. Cockspur Spiced Rum Drink 22% 3.50 Mixed with exotic spices this rum is great in pineapple cocktails and even as a shot. Smooth and incredibly warming. Mount Gay Eclipse 40% 3.50 From one of the world s oldest rum distilleries established in 1703 this is their flagship rum. A standard by which many golden rums are held. Apricot and banana are evident within a bright smoky palate. Mount Gay X.O 43% 4.80 Aged for a minimum of 8 years this rum exudes elegance. Toast, vanilla & ripe banana. Rich and oaky with a long, smooth finish. Mount Gay Black Barrel 43% 4.50 The Black Barrel is double aged, the final aging taking place in deeply charred black bourbon barrels. This creates bold rum with toasty oak and plenty of warm spice. Mount Gay % Allen Smith, Master Blenders finest rum. Over 40 blends to reach the final exceptional spirit were needed. Beautifully balanced vanilla, caramel and spice with a long and well rounded finish

7 BARBADOS N o: 43 Doorlys XO 40% 4.50 Aged for at least 6 years before finishing in Oloroso sherry cask. Complex for a youngish rum with a full bodied, sweet and rich palate. N o: 51 R.L Seal s 10 Year 43% 5.00 A superb flagship from David Seale at Foursquare. Buttery oak and almonds linger on the palate. N o: 44 Doorlys 3 Year 40% 3.50 A crisp white rum from Foursquare in Barbados. A versatile cocktail rum with plenty of pinapple and coconut. N o: 52 Rum Sixty Six Family Reserve 40% 5.00 Aged for a minimum of 12 years in small white oak casks this rum presents dried fruit including prunes. Vanilla on the nose and plenty of oak at the finish. N o: 45 N o: 46 N o: 47 N o: 48 N o: 49 N o: 50 Doorlys 5 Year 40% 4.50 An excelent golden rum from R.L. Seales, as at home being sipped or mixed. Spice, pepper and soft, dark sugar with a touch of wood from the barrel. Doorlys 8 Year 40% 4.80 A brilliant 2016 edition to the Foursquare range with dried fruits, rich toffee and classic Bajan spice. A fantastic way to beef up a long tropical fruit cocktail. Why not upgrade a Piną Colada! Doorlys 12 Year 40% 5.50 A full flavored, golden rum with plenty of tropical fruit and apple. An impressive, rich rum to be sipped on the rocks. Plantation XO 40% 6.00 The 20th anniversary Barbados rum from Plantation. The stunning bottle is only the beginning of the qualities of this rum. First aged in ex bourbon Caribbean casks then moved to small French Oak casks. A smooth and creamy spirit that reveals notes of Oak, Vanilla and aged cigar tobacco. Cocoa and toasted coconut is also present. For a perfect serve pour a large measure into a glass and light a Romeo Y Julietta Churchill cigar. A personal favourite of mine. Plantation Barbados % 6.00 A blend of rums aged for 9 years in Bourbon and Sherry casks before being extra aged in Cognac casks. Caribbean fruits including Plantain and Pineapple make for a smooth exotic palate. Plantation Grand Reserve 5 Year 40% 4.80 After 5 years in Bourbon casks before being refined in French Oak casks. Toasty coconut, buttery fudge and vanilla. N o: 53 N o: 54 N o: 55 N o: 56 N o: 57 N o: 58 Foursquare Port Cask Finish 9 Year 40% 8.00 An outstanding and exciting rum from foursquare. After 3 years in ex bourbon casks it then spends another 6 in port casks. Bags of dried fruit and sweet brown sugar. Great for after dinner! Foursquare Zinfandel Cask Finish 11 Year 40% 8.00 A new and intriguing rum from Barbados. This expression is a blend of two rums: the first aged for five years in bourbon and then six years in ex-zinfandel wine casks, and an 11-year-old matured full term in bourbon casks. These were then blended together and bottled in September Fruity and full of vanilla notes with sweet notes of the wine shining through.. St. Nicholas Abbey White 40% 5.50 St. Nicholas Abbey has been producing rum for over 350 years and the expertise really shines through. This crystal clear rum is creamy, full of depth and in my opinion a shame to mix. Fresh sugarcane and spirit on the nose and marshmallow, vanilla and coconut on the palate. St. Nicholas Abbey 5 year 40% 7.50 Made from sugarcane pressed on the estate on which it is grown. American oak aged for over 5 years creates this fruity rum with a good hit of spice. St. Nicholas Abbey 10 Year 40% 9.50 This Bajan ten year expression is aged for up to 12 years and bridges the gap between 5 and 15 year expressions. Complex and fresh with a little more leather and oak than the 5 year. St. Nicholas Abbey 15 Year 40% A totally unblended, hand bottled rum. Sealed with a beautiful mahogany cork and mahogany in colour this spirit is full of oaky complexity and a rich tropical fruit bouquet. Outstanding

Un-aged from fresh sugarcane juice. Crisp dry rum with fresh cane, spicy ginger and winter berries. A long warming finish. J Bally Ambre 45% 4.50 A fantastic amber agricole perfect on the rocks. Lots of wood and sugarcane. J Bally Millsime % 8.50 A visually stunning vintage rhum from J Bally. Rich mahogany colour and a flavour profile that lives up to the aesthetic. Syrupy and woody with plenty of warming sugarcane. Clement V.S.O.P. 40% 6.00 Aged for a minimum of four years in virgin Limousinbarriques and re-charred Bourbon casks. Warm caramel, exotic spice, and dried fruit aromas lead into nutty coconut, banana, and dried fruit flavours. Charred, woody sugarcane, peppery spices and delicate wet minerals. Well refined and exciting! Clement Select Barrel 40% years in oak barrels make this rum rich and sweet with plenty of oak and vanilla. A great base for rum heavy drinks. Clement X.O 44% A superb spirit masterfully blended into one of the finest sipping rums available. Blended from very old rums this expression is rich, complex and yet well refined with plenty of wood, leather and cigar smoke. The sweetness is of honey and brown sugar with a well balanced refined finish of nutty dark honey. Clement 6 Year 44% 9.00 A surprisingly delicate rum with plenty of floral notes peeking through the fresh sugarcane. Very subtle spice including Christmassy peppercorn and cinnamon. A very pleasant sipping rum that benefits from a few minutes to warm up in your hands. N o: 66 N o: 67 N o: 68 N o: 69 N o: 70 N o: 71 Clement CanneBleue 40% 5.50 An exciting white agricole with white sugar, fresh sugarcane and a pleasantly smooth and creamy texture. Produced only from blue sugarcane this is an exceptional white rum in a class of its own. Clement Creole Shrubb 40% 4.00 A superb blend of the finest white and aged agricole rum, married with macerated Créole spices and sun-bleached bitter orange peels. RhuM J.M Agricole Blanc 50% 4.80 A high strength powerful rum that shows off all of its sugarcane. Tropical fruits on the nose and palate make this a superb addition to exotic cocktails. Rhum J.M Gold 50% 5.50 Naturally aged in re-charred Bourbon barrels for a period of 12 months. Raw sugarcane and warm gingerbread flavours are softened by hints of vanilla and hazelnuts from its limited time in the barrel. Rhum J.M Vintage % This single-vintage rum has been aged in re-charred ex-bourbon barrels. Distilled in 2003, this is a rich and full-bodied agricole with notes of walnuts, pecans brown sugar, leather and tobacco. One of the finest agricoles you can get your hands on! Rhum J.M X.O 45% 7.50 Aged in 100% re-charred Bourbon barrels this rum has developed a superb bouquet and huge depth of flavour. Lemon, nut and sage on the nose, with cinnamon, nutmeg and pepper on the palate. Note of a sticky Caribbean black cake. N o: 72 N o: 73 N o: 74 N o: 75 N o: 76 Westerhall Estate Plantation Rum 43% 4.80 Westerhall Estate is one of the most fertile in the caribbean and produces cocoa and bananas as well as sugarcane. Blended from unaged sweet rums. Great for sipping. Westerhall Estate Vintage Rum 40% 5.50 An aged expression of the Westerhall Estate. More oak and brown sugar sweetness. St Vincent Sunset, Captain Bligh X.O. 40% 4.30 From Georgetown and our only rum from St. Vincent the Sunset is one of the smoothest on our menu. Punching well above its price point this full bodied rum has loads of honey and fruit. Goes perfectly well on its own. St Lucia 1931, 3rd Edition 43% 8.50 A limited edition rum celebrating 82 years of St. Lucia distillers was the year in which Denis Barnard founded the Dennery distillery in St. Lucia. Using the 3 Pot stills and 1 Coffey still this edition is a blend of rums between 6 and 12 years of age. A superb sipping rum that is increasingly hard to find. Perfect with a good cigar! Chairman s Reserve, the forgotten casks 43% 5.00 A limited edition rum blended from casks at St. Lucia that had been forgotten after a fire damaged the distillery in An older expression that has plenty of warmth and spice and compliments a good powerful cigar. N o: 77 N o: 78 N o: 79 Chairman s Reserve 40% 4.00 Blended from pot still and continuous still rums. A sweet fruity nose with brown sugar sweetness and spice on a creamy palate followed by dark fruits. A lovely sipping rum. Chairman s Reserve White 40% 4.00 Still aged and rich like the Reserve however it is then filtered to create this fruity clear rum. Chairman s Reserve Spiced 40% 4.00 A rich spiced rum with plenty of warmth, syrup and christmas cake qualitys. Lovely to sip of mix with cola. WINDWARD ISLANDS

A powerful, rich rum which holds up well with a strong cocktail or mixer. Angostura 7 Year 40% 4.50 The bold big brother of the 5 year with developed flavors of Maple, Honey, Chocolate and Oak. Works just as well sipped alone or in a rum heavy cocktail. Angostura % 5.00 Skillfully blended from charred casks from 1919 after they were purchased following a fire in Long aged to give plenty of toasty oak. An exceptional well refined sipping rum. Angostura % 6.50 Aged for a minimum of 12 years in charred american oak ex-bourbon barrels then blended and re casked untill optimum. Very Special and very good with a cigar. Angostura No.1 2nd EdItion 40% Aged for 10 years before being transfered to single use French Oak casks for an additional 6 years of aging. Layer after layer of delicate fruit and soft oak flavours. Ron Zacapa Reserva Limitada % Reserva Limitada is Ron Zacapa s annual release selected by master blender Lorena Vazquez. The 2014 expression is a blend of reserve rums aged between 6 and 24 years in a combination of Spanish and American white oak casks which have been aged in a herb garden for three years, where fennel, coriander, anise and tarragon aromas escape into the air and casks, to add a herbaceous element to the spirit. Abuelo 7 year 40% 4.50 The extra 2 years in white oak has allowed this rum to develop a syrupy sweetness as well as still showing off toasty oak and sugarcane. Lovely to just sip with a big chunk of ice. Abuelo 12 year 40% 4.80 A great dark rum from abuelo. Aged for 12 years in ex whiskey casks this is well refined with an elegant smokyness and vanilla sweetness. Abuelo Centuria 40% Aged using the Solera method and Jack Daniels Whiskey casks some of the rums are as old as 30 Years. A big sweet rum with a complex and soft palate. Diplomático, Reserva 40% 4.50 Aged for up to 8 years this rum has a rich golden hue and has taken on more oak and dried fruit notes than the Blanco. Santa Teresa, Rhum L Orange 40% 4.50 Valencia orange liqueur made with 2 year old Venezuelan rum from Santa Teresa. Fresh sugarcane cut with zesty orange and pepper. We use this liqueur in our spiced orange daiquiri however it is easily good enough to drink on the rocks. Pampero, Especial 40% 3.50 A lovely sweet continuous still rum from Venezuela. Japan Nine Leaves, Almost Spring 48% 9.50 Nine Leaves is a micro distillery founded in 2013 in Otsu, Shiga. Almost Spring is a new style of rum aged in cabernet sauvignon wine-barrels imported from Wente Vineyards in California. The resulting colour is slightly reddish or pink gold from the red wine. In early spring 2015, Nine Leaves Clear was stored in barrels and aged for 1 year through the ups and downs of climate change in the mountains of Shiga prefecture. With a hint of sweetness, Genshu (raw Sake) - like aroma, and distinctive berry flavour from the wine barrels. A lovely refined rum to enjoy slowly on the rocks. Takamaka St. Andre Vesou 40% 5.00 This rum is distilled from cane grown locally in the granitic soils on the island of Mahé. The cane is pressed once only to release the sweetest juice, known locally as Vesou, which is then fermented for flavour and alcohol. It has also gained a spiciness but is still soft enough to enjoy alone! Owneys Original New York City Rum 40% 5.50 Produced as a tribute to Owney a Rum Runner who smuggled Caribbean rum into the US. Made from Sugarcane imported from Florida and Louisiana and distilled in Brooklyn. An exciting twist in many classic cocktails. We use it for a very appropriate twist on a New York Tavern Sour.
