2 Ir h W skey In order to be called an Irish Whiskey, distilled spirit must be aged in wood barrels for a minimum of 3 years a minimum of 40% ABV. distilled and matured on the island of Ireland. There are several types of Irish Whiskey including; If you prefer CREAMY & FULL BODIED A SINGLE POT STILL Irish Whiskey is what you are looking for. If you want something with a strong sherry influence with a touch of spice then Redbreast is perfect if you want a single pot still which is FRESH and LIGHT then Greenspot is a wonderful choice. If you would like something a little more special with a spectrum of flavours such as vanilla, citrus and pepper then Midleton Barry Crockett is a rare treat Pot S Ir h W skey Pot still whiskey is whiskey made from a combination of malted barley and unmalted barley and is distilled in traditional copper pot stills. Pot Still Irish Whiskeys are characterised by full bodied flavours and a wonderful creamy mouth feel. Blended Ir h W skey A blended whiskey is a combination of 2 or more styles of whiskey grain, pot still or malt whiskey). Gra Ir h W skey Grain whiskey is typically produced from a mash of maize and malted barley. Grain whiskey is lighter in character than pot still whiskey and generally the characteristics display delicate, fragrant and floral notes. Ma Ir h W skey A single malt whiskey is made exclusively from malted barley and is distilled using a pot still. Wh W skey? If you want to treat yourself to something a little lighter and more fragrant then Midleton Very Rare is an exceptional choice Me Our whiskeys are described in terms of Nose, Taste and Finish Nose Terms to describe the nose can vary from light to rich, robust to mellow and simple to complex. The addition of a little water brings the full bouquet of the spirit to the fore. However, be careful when adding ice to a whiskey as it can mute the aromas slightly. T As the first sip is held in the mouth, the numerous, acutely sensitive taste buds of the tongue differentiate the taste profile of the whiskey. The tastes that you will experience are often described in terms of the following; Sherry richness, spicy, nutty, vanilla, dark chocolate, woody, honey, full bodied and creamy. A good whiskey will stimulate your taste buds to enjoy many of these flavours. F h Having savoured the taste, the finish refers to the more defined flavour that is left in your mouth. This may be quite different from the initial sips, leaving either a sweet, dry or smooth essence on the tongue. *Chill filtering: Prior to bottling the whiskey is cooled to -2C so certain elements such as fatty acids drop out at this temperature. For whiskeys of 43% or more this is not needed. At 40% a haze can form if its not chill filtered.

PADDY 4.00 In 1920s and 1930s Ireland, whiskey was sold in casks from the distillery to wholesalers, who would in turn sell it on to publicans. Cork Distilleries Company was very proud of the strong reputation which its whiskey had earned and wanted to prevent any fluctuation in whiskey quality due to bonder underhandedly diluting the casks. Thus, the company was one of the first to bottle their whiskey, which became known as Paddy. DINGLE SINGLE MALT, BATCH NO When the first drops of new spirit started to flow in the Dingle Distillery on a cold November night in 2012 something momentous was happening. This was the first whiskey to be produced in Ireland outside of the big three: Midleton, Cooley and Bushmills. The spirit was literally reborn. The very special stills are a key part of the Dingle Story. We take the best Irish malted barley and make pure pot still malt whiskey. Then we put it in casks and let the mild, moist, unique Dingle air do the rest. No whiskey in Scotland or Ireland experiences a maturation process like that. Dingle is Dingle. REDBREAST SINGLE POT STILL 12-YEAR-OLD 7.50 Redbreast dates back to 1903 when John Jameson & Son entered into an agreement with the Gilbeys Wines & Spirits Import Company to supply them with new make spirit from their Bow St. Distillery. Made from a mash of malted and unmalted barley and then triple distilled in traditional copper pot stills, Pot Still whiskeys are characterised by full, complex flavours and a wonderful creamy mouthfeel.

HENNESSEY COGNAC 4.70 Founded in 1765 by the Irish aristocrat, Richard Hennessy. Hennessy had served with the French forces and the company began as an eaux-de-vie trader based in Cognac. He based his company on the land he had been granted by King Louis XV as compensation for his mercenary work. The brand grew under the ownership of Richard s son, James. The original master blender was Jean Fillioux, who joined the company in The brand became a popular choice among the landed gentry; George IV ordered a bottle of Hennessy VSOP in TASTE; Woody and nutty, with a little sweetness. Develops rounded floral notes, with elements of berries, vanilla spice and plenty of oak later. SCOTCH WHISKEY TEACHERS 4.40 It is said that William Teacher would not give his name to his blend until he had found perfection. Highland Cream is that whisky. It uses fully smoked peat single malt whisky from The Ardmore distillery as its fingerprint whisky. This gives it incredible depth and smoothness combined with a rich Smokey undertone. 5 GIN LIST DINGLE GIN 5.50 Dingle Original Gin is made in small batches of 500 litres. In terms of its broad style, this is what is categorised as a London dry gin but the unique character and flavour come from our painstaking and original choice of botanicals. This secret combination of flavour elements are macerated in spirit for 24 hours. Then, when the spirit is distilled, it passes through a flavour basket in the neck of the still. Some ingredients used are rowan berry from the mountain ash trees, fuchsia, bog myrtle, hawthorn and heather for a taste of the Kerry landscape.
