3 2016 RESOURCE GUIDE Welcome to BSG Canada Greetings, BSG Canada (formerly Gilbertson & Page [Canada] Inc.) has been producing and distributing brewing products to Canadian markets since the early 90s. We believe in old fashioned concepts such as customer service and relationship building. Most of our customers have been with us since the beginning and we have grown organically from word of mouth. As a one stop shop we are able to offer our full lineup of products from one warehouse on one pallet! This offers our customers savings on transportation costs and flexibility with scheduling and warehousing space. We are proud to be the Canadian distributors of such quality products as Weyermann Specialty Malts, Kerry Bio-science brewing aids and others. Our innovative can program was developed to help smaller craft breweries compete by offering a cost effective solution to an expensive but essential packaging option in the marketplace. A keystone of BSG Canada is our OIO brand of brewing adjuncts which are made from infrared roasting of various grains. We developed these products in the early 90s and they have been well received and popular ever since. An additional 1-5 days may be needed to mill products. Payment We accept payment by cheque, wire transfer and money orders. In addition, we accept VISA, Mastercard and American Express payments as well. Receiving Credit A credit application with bank authorization must be completed in order for credit to be established. Failure to comply with credit terms may result in revocation of credit purchases. For new customers, please allow up to 2 weeks for credit approval upon receipt of a completed credit authorization form. Prepayment may be required. Please contact us directly to discuss terms. Freight The following items need to be requested at the time of order and may have an extra charge: Specific delivery dates and times Liftgate Pallet jack Call first Driver notification of hand-unload For our Ontario customers, we have our own delivery truck and can quote you competitive delivery rates to your location. For others, we have established relationships with a number of different carriers and can arrange delivery on your behalf. If you prefer to arrange your own freight, please let us know at time of ordering. Note, you are welcome to pick up your orders at one of our three warehouse locations, but you must make an appointment with us in advance of your arrival. We do not guarantee that you will be able to pick your order without an appointment. Receiving Bagged Malt Before signing the shipment Bill of Lading, each bag and/or pallet must be inspected. Look for torn or broken bags and insure every bag and pallet is accounted for. You can reference the pallet contents on your Bill of Lading attached to the pallet. If any problems arise: First, note how many bags were shorted, broken, or any other circumstances on the Bill of Lading before signing. Please take a photo. Then call the BSG Canada s Customer Service within 72 hours to report, and you will be instructed on how to submit the photo. Receiving Bulk Malt To ensure the best quality of malt, we suggest the following: Ask the driver for documentation of the trailer pre-load cleanout. Inspect the condition of the malt and trailer before unloading. If pneumatic, we insist upon a slow and steady load-out of malt into the silo. Malt should not be loaded out at a rate greater than 5 psi. Please ensure driver complies. The Bill of Lading should not be signed until the malt is fully unloaded and inspected. The driver is required to note the unload pressure and unload time before it is signed by the receiver. Problems should be noted on the Bill of Lading. If you have any questions at the time of unloading, don t hesitate to call us. The driver must wait if you have any concerns. Malt Storage All grain suppliers do their utmost to provide a product that is insect free. However, once the product leaves the plant or warehouse it is beyond their control. We recommend the following: Inspect the malt area at regularly scheduled intervals. This is of particular importance when the room temperature is above 18 degrees C. Malt should be stored in a clean, cool, dry area and if at all possible, away from walls. To reduce the likelihood of insect activity, you may choose to fumigate periodically (Organic malt cannot be fumigated). For best results, we recommend using all milled products within 3 months and all whole kernel products within 6 months of receipt. Keep malt away from strong odors for extended periods of time. Brewer s Malt Best Ale Malt from 2 row Norfolk winter barley has low protein. The elevated colours and malty sweet flavour make this a popular malt for the traditional ale brewing technique of infusion mashing and top fermentation. Maris Otter Ale Malt has long been the favorite of the English ale brewers for its rich flavour and very forgiving brewing performance. In the field, it is lower yielding than the more modern varieties, so it is grown under contract to Crisp Malting each year by selected Norfolk farmers. In the brew house, excellent yields and efficient run-off make it the malt of choice for producing English-style beers. This malt is principally produced in the modern Saladin boxes, but is also available to be purchased under the exclusive Gleneagles Maris Otter brand, highlighting it as the product of the traditional floor malting plant. Wheat Malt, when brewed in conjunction with barley malt, can improve head retention, mouthfeel and introduces typical wheat flavour changes. Rye Malt* also improves head retention, mouthfeel and introduces flavour changes of a toffee/caramel note at lower inclusion rates, and a spicy after-palate at higher use rates. Rye malt will impart a reddish hue to beer. 13 Dextrin Malt has been developed by Crisp Malting to provide the brewer with an opportunity to increase head retention and body when used in conjunction with a well-modified base malt. Unique to Crisp, Clear Choice Malt is produced from naturally-bred Proanthocyanidin-free barley. In short, proanthocyanidins are polyphenols, and removing these eliminates protein hazes, saves time and money on cold conditioning by reducing the polyphenol loading and therefore hop haze in heavily hopped beers. 17 Patagonia Extra Pale Malt Medium modified malt. Low DMS due to higher kiln temperature allows boiling for 60 min. Blend of at least two barley varieties from: - Sebastian - Barke - Scarlett Developed to offer a new and challenging alternative to craft brewers, it is a great choice for ales and lagers due to its versatility, low colour and undesired aromas. Caramel Malts Also known as Crystal Malt, it s made from green malt. During the toasting process, sugars are caramelized developing unique flavours, aromas and colours. Outstanding high colour caramel malts, because of its complex flavour and higher red colour. Features Appearance: Friable golden brown kernels Aroma: Pleasant, sweeter and more intense than pilsner malt Flavour: Sweet, fresh and clear caramel taste on lower colours. As roasting increases, flavours become more complex, adding toffee, raisins, dry prunes, some sweet bitterness and roasted bread flavours. Roasted Malt Whether you want to add a subtle touch of complexity to an ESB or taste bold and striking, these unique roasted malts can be a good option. Going from bready, smoky and slightly roasted, to chocolate and coffee, to strong bitter black malt. It is one of the biggest producers in the German malting industry and known for outstanding quality and service. 20 MALT The Simpson family has been in the malting business since 1862 and the company is the largest independent maltster in the UK, with an annual production output of 285,000 tonnes. Simpsons headquarters and largest malting plant is located at Berwick-upon-Tweed, Northumberland. Their agricultural trading division, McCreath Simpson & Prentice is located nearby. Berwick lies between the Lammermuir Hills to the north and the Cheviots to the south, an area famous for its barley. The soils are derived from glacial drift, which gives the lightness necessary for the growth of high quality barley. In fact, the very name Berwick is derived from the early Anglo-Saxon words for Ber(e) = barley, and wick = small town. At their Tivetshall Maltings in Norfolk, the heart of the English malting barley growing area, all of their roasted malt is produced and also the bulk of their export tonnage. All Simpsons malts are made exclusively from the highest quality two-row malting barleys. Simpsons store almost 100% of their annual barley requirements at harvest time in their own quality assured storage areas and are able to provide full traceability of products from seed to finished malt. We buy only the very best quality from the best growers in the United States, and around the world including Germany, England, the Czech Republic, New Zealand, Australia, France and Slovenia. Our hops are processed in the Yakima Valley of Washington state (U.S.). This new facility means that BSG has complete control of the entire supply chain from bale receipt and storage to shipping of finished goods in one location. Our processing facility features a sealed/clean system; once the bales go into the bale-breaker, the system is completely closed all the way through to the inert atmosphere packaging. Along with this, the production room is secure, floors are sealed/polished for a clean environment, and interior walls are lined with metal panels. The entire processing facility, including all equipment selections, was designed with a focus on a total Food Grade environment. This state of the art equipment and environment ensures that quality and care is built into all hops coming from the facility. On pellet quality, the system is designed to maintain a constant and level feed to the pellet mill with no interruptions allowing the pellet temperature and pellet density to be controlled with minimal fluctuation. This new technology and equipment allows the mill s internal components to be adjusted on the fly, allowing fine-tuning of the pellet density without shutting down. Constant real time temperature monitoring, and automatic application of cooling will limit pellet temperature ensuring preservation of hop aroma. Atmospheric controls within packaging are ensured by real time monitoring of the residual oxygen in the packaging machine, that will automatically adjust the nitrogen volume to meet designated residual limits, and ensure that every single package contains minimal residual oxygen. 27 Forward Contracting We encourage brewers, both small and large, to forward contract for their hop requirements. By placing a contract, the brewer signals clear demands to the supply chain. Contracts enable the grower and distribution partners to plan and plant appropriately. Contracting is vital for a crop with high establishment costs.
