2 WHAT WE HAVE TO OFFER Casa Loma is dedicated to the highest standards of hospitality and customer service. We pride ourselves on making each and every event one of a kind. Following is a list of the services we have to offer. COORDINATOR SERVICES Casa Loma will provide you with a Venue Coordinator who acts as a guide in planning all the important details of your wedding day with us. We are happy to recommend a list of preferred suppliers (wedding planners, décor vendors, musicians/djs, photographers etc.) who know the Castle and have worked with us many times. You are also welcome to arrange for your Venue Coordinator to be with you on your wedding day to assist your vendors with any load in and set up of your personal items. Please speak to your coordinator to arrange this service. TASTING We include a complimentary tasting of the proposed menu for two guests within two months of your wedding date. COMPLIMENTARY BRIDAL SUITE Your wedding booking includes a complimentary bridal suite, a bottle of sparkling wine and chocolate dipped strawberries upon your arrival at the venue. PARKING Parking lots are available for your guests convenience and parking fees can either be paid by the event host or charged directly to your guests. LIQUOR SERVICE Casa Loma is a fully licensed establishment throughout, with 7-hour bar packages at standard, premium and deluxe levels. Select wine, beer and spirits may be upgraded at additional costs. MENU SELECTION The enclosed menus are an example of what our culinary team can create. If you have a specific menu in mind that does not appear in our package we would be more than happy to create a custom designed menu for your needs. STAFF Each member of our service team is required to successfully complete the Smart Serve program for the benefit of the safety of our guests. Uniformed wait staff are expertly trained in attentively providing discerning service for all events.

3 Library The Heritage Library is the largest event space inside the castle. Decorated in traditional early 1900 s elegance, with rich wood finishes, this spectacular room boasts hand crafted Austrian crystal chandeliers and stunning views of the Terrace and city skyline. 5 Glass Pavilion Complementing the magnificence of the interior of Casa Loma, the all glass structure of the Pavilion set amid the beautiful heritage gardens with the castle as a backdrop, allows you to dine out under the stars within the comfort of an air conditioned venue. The outdoor Gazebo offers the perfect location for a wedding ceremony with breathtaking views of Lake Ontario and the Toronto cityscape as your backdrop. 7 Executive Chef CHEF MICHAEL EWING Corporate Executive Chef, Vice President of Operations Liberty Entertainment Group Michael Ewing, a thirty year veteran of the culinary art industry, began a classical apprenticeship at Westin Hotels at the tender age of 15. Working throughout the city in many of Toronto s top restaurants and catering companies, Michael draws upon his many years of culinary expertise and artistry as Executive Chef at the Liberty Grand Entertainment Complex and as the Executive Chef for all of the Liberty Entertainment Group properties (Toronto: Casa Loma, Liberty Grand Entertainment Complex, BlueBlood Steakhouse, Rosewater Room, Spice Route, Cibo Wine Bar and Miami: Coral Gables Country Club & Cibo Wine Bar). Following his apprenticeship, Michael worked in various capacities to perfect his skills and harness his talent with various establishments notably; Winston s, the Royal York Hotel, the Windsor Arms Hotel, and the Metro Toronto Convention Centre. In 1988, Michael, at the age of 23, was promoted to Restaurant Chef at the prestigious 3 Small Rooms at the Windsor Arms Hotel under Michael Bonacini. Shortly after that, Michael moved to the Skydome in 1990, assisting as Executive Sous Chef and Chef De Cuisine to the launch of the Founder s Club cooking for numerous heads of state, royalty and prestigious politicians. In 1994, after a stint at Centro s Wine Bar with Marc Thuet, Michael was ultimately led to a post as Executive Chef at Acqua. Yearning for his roots, he returned to the hotel industry supervising a staff of 120 as Executive Sous Chef at the Royal York Hotel producing four thousand to six thousand meals a day for nine restaurant outlets and thirty-four banquet and meeting rooms. Throughout his career, Michael has been involved with many facets of culinary excellence. As an educator, he frequently conducted seminars and classes at George Brown College and Humber College. Many protégés have been inspired over the years following his lead in the kitchens of such food and hospitality icons as the Royal York Hotel and Windsor Arms Hotel. Among his peers, Michael attained much notoriety, particularly in 1988 winning the Gold Medal at the coveted Culinary Olympics in Frankfurt, Germany. His culinary philosophy is simple, Buy the best product, keep it simple, concentrate on flavour. His culinary style is 21st century. Whether cooking for Nelson Mandela, Queen Elizabeth or Tom Cruise, focusing his time and energy to developing the chefs of tomorrow, or attaining international acclaim and award-winning excellence Michael Ewing is a devoted, passionate and talented credit to his craft and to the Liberty Entertainment Group.
