3 A guide to the Scotch whisky regions Like wines, the single malts Scotland are grouped by region although these regions fer a guideline rather than a rule. The regions Scotland the Lowlands, the Highlands, Campbeltown and the island Islay have their origins in the regulation licences and duties, but they do also embrace certain characteristics. The Lowlands This area tends to produce ster malts, without the peat the Highlands or the brininess the coastal malts. The Lowlands is defined by a line following old county boundaries and running from the Clyde estuary to the River Tay. The line swings north Glasgow and Dumbarton and runs to Dundee and Perth. The Highlands, Islands and Speyside By far the largest region, the Highlands embraces wide variations in style. The western Highlands has only a few scattered distilleries, and it is difficult to generalise about their m character. If they have anything in common, it is a rounded, firm, dry character, with some peatiness. The far north the Highlands has several whiskies with a notably heathery, spicy, character, probably deriving both from the local soil and the coastal location the distilleries. The more sheltered East Highlands and the Midlands Scotland (sometimes described as the South Highlands) have a number notably fruity whiskies. None these Highland areas is ficially regarded as a region, but the area between them, known as Speyside, is universally acknowledged as the heartland malt distillation. This area, between the cities Inverness and Aberdeen, sweeps from granite mountains down to fertile countryside, where barley is among the crops. It is the watershed a system rivers, the principal among which is the Spey. Although it is not precisely defined, Speyside is commonly agreed to extend at least from the River Findhorn in the west to the Deveron in the east. Within this region are several other rivers, notably the Livet. The Speyside single malts are noted in general for their elegance and complexity, and ten a refined smokiness. Beyond that, they have two extremes: the big, sherryish type, as typified by The Macallan, Glenfarclas and Aberlour; and the lighter, more subtle style. Within Speyside, the River Livet is so famous that its name is borrowed by some whiskies from far beyond its Glen.

4 Only one may call itself The Glenlivet, only Braes Glenlivet and Tamnavulin are produced in the valley, and only Tomintoul in the parish. These are all delicate malts, and it could be more tentatively argued that other valleys have malts that share certain characteristics. The Highland region includes a good few coastal and island malts, but one peninsula and just one island have been such historical importance in the industry that they are each regarded as being regions in their own right. Campbeltown On the peninsula called the Mull Kintyre, on the west coast Scotland, Campbeltown once had about 30 distilleries. Today, it has only two. One these, Springbank, produces two different single malts. This apparent contradiction is achieved by the use a lightly peated malt in one and a smokier kilning in the other. The Campbeltown single malts are very distinctive, with a briny character. Although there are only three them, they are still considered by serious malt lovers to represent a region in their own right. Islay Pronounced "eye-luh", this is the greatest whisky islands: much it deep with peat, lashed by the wind, rain and sea in the Inner Hebrides. It is only 25 miles long, but has no fewer than eight distilleries, although not all are working. Its single malts are noted for their seaweedy, iodine-like, phenolic character. A dash Islay malt gives the unmistakable tang Scotland to many blended whiskies. Tasting notes We have included a brief tasting note for each the many single malt whiskies on our list which we hope will prove useful to both novice and seasoned drinkers. By their nature, tasting notes are always subjective and so you may not agree with what we say! We are indebted to the many different sources who have provided these notes, not least which provides a wealth information for the whisky enthusiast. 5 Bin end list 608 Brora 24yrs Dun Bheagan Coastal Highlands, bottled by William Maxwell & Co A cask strength & sherried bottling from the magnificent but closed Highland distillery. Rich, with a good balance between wood & spirit, & a thread smoke. Originally known as Clynelish, this distillery became a victim its own success when a new distillery was built alongside it to increase capacity. The new distillery took over the name, & the old distillery was renamed & limped on until being mothballed in Despite the persistent clamour by malt fans to have Brora re-opened, it now seems impossible for the distillery to go back into production. 816 The Arran Malt 14yrs Isle Arran, distillery bottling An initial burst brine leads onto warming tfee apples and hazelnuts. This is followed by dates, chocolate orange and spiced tea cake. The mouthfeel is overwhelmingly rich & weighty 48.5% % Fettercairn yrs Eastern Highlands, distillery bottling The nutty, leafy nose has hints tfee and sherry, perhaps cookie dough. The palate is clean with a sweet maltiness and hints oatmeal and raisins. A warm, sweet finish. 648 Glengoyne 10yrs Highlands, distillery bottling Fresh green apples, tfee & a hint nuttiness. This is the taste distilling slower than anyone else in oak casks selected by hand. Improved by barley they dry by air, never peat. 854 Glengoyne 12yrs Highlands, distillery bottling Lemon zest, tfee apples & a scent coconut. Handselected sherry & bourbon casks help create this paradise flavours & rich, golden colour. 40% % % 12.20

6 46% Ardbeg 10yrs Bold menthol & black pepper slice through the sweet smoke followed by tarry ropes & graphite. As you dip your nose in further, savour the aroma smoked fish & crispy bacon alongside green bell peppers, baked pineapple & pear juice. An explosion crackling peat sets f millions flavour explosions on the tongue: peat effervesces with tangy lemon & lime juice, black pepper pops with sizzling cinnamon-spiced tfee. This is followed by a wave brine infused with smooth buttermilk, ripe bananas & currants. Smoke gradually wells up on the palate bringing a mouthful warm creamy cappuccino & toasted marshmallows. 611 Ardbeg Uiegeadail Ardbeg Uigeadail (pronounced Oog-a-dal ) is a special vatting that marries Ardbeg s traditional deep, smoky notes with luscious, raisiny tones old ex-sherry casks. It's non chill-filtered at high strength, which retains maximum flavour and gives more body and added depth. Ardbeg Uigeadail was recently voted by the 80,000 strong Ardbeg Committee as their favourite Ardbeg. With whisky this good, who can blame them? 54.2% 15.20

Not overly challenging but quite satisfying, particularly with dessert. 633 Auchentoshan Three Wood Lowland, distillery bottling Sweet butterscotch with prunes, custard, Christmas cake & roasted almonds. The Three Wood expression is matured in three different casks American Bourbon, Spanish Oloroso sherry then finished in Pedro Ximenez casks 786 Auchroisk 10yrs Speyside, Flora & Fauna The style is pungently aromatic on the nose (lemongrass, citrus & a whiff smoke), & richly flavoured/creamy on the palate, evocative custard, apple pie & spices. 742 Balvenie 12yrs Signature Speyside, distillery Bottling On the nose this is rich & complex with honey, citrus fruits & vanilla oak notes. Rich, honeyed flavours with a hint sherry fruitiness. A spiciness cinnamon & nutmeg & a subtle oakiness develop with time. 738 Balvenie Single Barrel 15yrs Speyside, distillery Bottling On the nose a fragrant aroma vanilla, honeyed sweetness, hints heather & dry oaky notes. The taste is rich & complex, suggestive years careful ageing, it has a honeyed maltiness with vanilla, oak flavours & delicate spice notes. The finish is long & complex with a hint liquorice. 698 Balvenie Port Wood 21yrs Speyside, distillery Bottling The nose is rich, creamy and malty. Creamy & smooth fading to a smoky finish 787 Benrinnes 15yrs Speyside, Flora & Fauna The only Speysider to be triple-distilled like a Lowland malt or Irish whiskey, but with a lot more body & character than either those styles. Impressive stuff. 788 Blair Athol 12 Highland, Flora & Fauna A great, but sadly neglected, Highlander. This expression has always tended towards the chunky, sherried style, with spices & oak adding complexity to rich maltiness. 735 Bowmore Islay 12yrs On the nose, plenty American oak showing lots vanilla & toasty notes. Smoke is a subtle presence with fresh seashells & seashores. Light cigar smoke/cedar wood, malty & clean. The palate has a rounded feel with a light maltiness, smoke to the back palate, seaweed & turf. 741 Bowmore 18yrs Heather, woodsmoke, & waxy apple peelings, with a citrus fruitiness becoming more evident with time. A broader feel on the mouth than the nose suggests, with more evidence sherry casks. Intensely floral with more citrus & chocolate. 736 Bowmore 25yrs Full & round, with a gentle stness, the nose has a strong herb-like fragrance over-lying the sherry & peat notes. The palate has plenty sherry, but surely as night follows day, you will find the oak, the smoke, the brine, the ozone, ending with tfee & hazelnut. The finish is mellow, gentle & warming. Try in front a peat fire with a Gale Force 8 raging outside. 43% % % % % 74.40

9 54.3% Brora 30yrs Coastal Highlands, distillery bottling A delicate, complex & appetising old nose that slowly reveals a balance buttery stness & acetic sharpness. (Rather like the aroma a Hollandaise sauce). Develops gently, vanilla alternating with sharper, faintly coastal notes. With time, in true Brora style, there s a pleasing waxiness, & hints old lavender, as in a dried-out potpourri. Water enhances these fragrant notes, & adds the scent crisply laundered fine linen, while the waxiness becomes heavier (polished church pews). Later, there are traces roast meat, & that appealing herbal fragrance persists. Palate: At first smooth, sweet & honeyed, then a split-second later drying, with instant smoke & medicinal notes. More savoury notes rise with (a little) water. There s a lightly teeth-coating waxiness. Sweet overall, but with slight saltiness & an intriguing herbal flavour 690 Bruichladdich 18yr Matured for 18 years in Bourbon casks & then in Willi Opitz red pinot wine casks. St flavours crème brulée, syrup, tfee & citrus fruits. 692 Bruichladdich 1970 Luxurious scents honeysuckle, butterscotch, orange blossom & mint tfee. Warm flavours fruit, coconut, hazel nut & creamy oak. Heavily textured with a rich & balanced finished, Simply stunning. 614 Bunnahabhain 12yrs The 12yr old is less peaty than some Islays, with a superbly long finish. It is gentle & smooth with just a hint peat & brine with a touch oiliness & mocha hints on the finish. 630 Bunnahabhain 18yrs Built in 1881 its name comes from the Gaelic, Bunnahabhain (Bu-na-ha-venn), meaning mouth the river, a reference to the Margadale, the river from whose clear spring waters the whisky is distilled. A smooth, slightly sherried dram with all the understated elegance one would expect from the gentlest malt on Islay. The epitome Bunnahabhain s st Islay style. 46% % % % 20.50

A succulent citrus flavour with salt intensities. 836 Boisdale Longmorn 1992 Speyside, Cask #71762, 260 bottles Yellow fruit skins & honey & just a little spice. A creamy texture with abundant fruit and white chocolate cut with spice 837 Boisdale Linkwood 1991 Speyside, Cask #10344, 229 Fruity & floral, with peach skins & vanilla. As befits its age, the trademark smokymedicinal character Caol Ila is controlled. Good mouthfeel. Adding water gives a sweeter start, then a light smokiness elegantly envelopes the palate. Sweetly drying overall. Medium bodied, elegant & smooth. 795 Cardhu 12yrs A gentle nose, with scents violets & fresh fruits (melon, white grapes, fresh pears) - some sweety malty notes to start, but these disappear. Even fresher with water. a st mouthfeel & a crisp taste - sweet & slightly acidic, with a trace milk chocolate in the aftertaste 621 Clynelish 14yrs Northern Highlands, distillery bottling Fruit cake & vanilla crème anglaise with a waft smoke on the nose & a fruity finish. 622 Cragganmore 12yrs Very herbal & aromatic, the palate is dry but exquisitely balanced. Water releases an aroma hot, roasted chestnuts. Mouth-coating, full-bodied & fruity, then very slowly drying to mild, oaky liquorice. 629 Dalmore 1263 King Alexander III Northern Highlands, distillery bottling The nose presents a complex blend almonds, hedgerow berries, plums, brittle tfee & a faint whiff treacle. Equally complex on the palate, with sherry & fresh berries merging with plum notes, plus vanilla & tfee. 627 Dalwhinnie 15yrs Northern Highlands, distillery bottling Strikingly clean flavours with salt & malt in the nose. The texture is almost like a good, butter shortbread & it really does dissolve in the mouth. 766 Glenfarclas Family Cask 1977, Cask: 0061, bottles: 582 This possesses a honey sweetness &, although not as sherried as other expressions, the nose on this whisky is divine. Sweet & well balanced. A buttery smooth whisky with spicy undertones & an intense finish. 765 Glenfarclas Family Cask 1972, Cask: 3546, bottles: 645 The nose is marked by chocolate, smoke & clove. It is reminiscent mulled wine. Initial caramel makes way for tfee apples, then pears. The finish brings more spices, liquorice & bitter chocolate. 772 Glenfarclas Family Cask 1969, Cask: 3185, bottles: 121 Rich & dark, the 1969 has mouth-filling flavours light sherry, spice & nuts but leaves you with an overall feeling power. It finishes with molasses & chocolate 764 Glenfarclas Family Cask 1963, Cask: 4098, bottles: 420 A lovely, rich, dark whisky. Bold & heavily sherried, this is great if you like them big & powerful. This bottling has lost none it s appeal, still strong but not overpowering. Some vanilla & citrus are present at the back the mouth, almost like the caramelised fruit from a fruit cake. 763 Glenfarclas Family Cask 1957, Cask: 2111, bottles: 158 A big, powerful, sherry nose, really rich with fruit cake, almonds, sultanas & vanilla. A big whisky that fills your whole mouth. Bitter chocolate & smoke dominate a long, powerful finish. An all-round great dram. 762 Glenfarclas Family Cask 1952, Cask: 1710, bottles: 55 A thick & heavy whisky, smoky on the nose with floral notes & a hint vanilla. Tannins are immediately apparent on the taste buds, flavours peat & burnt, malty sweetness. A long & lingering finish. 59% % % % % %
