2 WHAT IS METRIC?

3 ABOUT US Founded in 2013, Metric Coffee is a collaborative effort between Darko Arandjelovic (owner of Caffe Streets) and Xavier Alexander (former Roasting Manager at Intelligentsia) that strives to create a shared vision for quality coffee and service. The inspiration behind the name Metric is twofold. We like that the technical definition of the word, a system or standard of measurement, is a thread that runs through every aspect of life. We use metrics every day in order to navigate the world around us. Additionally, our 1960s German Probat roaster, the beating heart of our business, came to us with nuts and bolts measured in metric units. Refurbishing and customizing this machine from the ground up required us to make conversions and work within a different system from the familiar. Thus it only seemed fitting to name our coffee company with the concept of Metric in mind and adapt to a new familiar. All of our coffees are roasted in this self-restored 61 Probat UG 15. Working with this vintage, built-to-last machine produces exceptionally well balanced, sweet, and clean coffees. Roasting our beans in one of these rare and highly sought-after old roasters makes us grateful to blend oldworld method with modern advancements in technology. The story of Metric is still being written. We started with just two people and have grown into a small but solid staff united by our common passion: excellent coffee and service. With a growing fleet of fantastic wholesale partners and construction of a cafe underway inside our roasting works, we are constantly growing and eagerly embracing whatever is next for us and our industry WEST FULTON ST. 5 ROASTING APPROACH All of Metric s coffees are roasted on a robust 1961 Probat roaster. Constructed of thick, quality cast-iron, this remarkable machine provides the control, precision, and consistency needed to fully exhibit the flavors and nuances of our carefully sourced coffees. Metric approaches roasting coffee as both an artisanal craft and as a science. Great coffee roasting is a function of time, temperature, airflow, and intuition, along with an incisive understanding of a given coffee s density, moisture level, and unique characteristics. 7 COFFEE SOURCING WE BELIEVE there are a number of critical factors contributing to the growth of a truly exceptional coffee, and that farmers are one of the key factors. Therefore we believe those farmers who do great work should receive a great price. WORKING WITH producers and farmers to deliver the highest-quality coffees for our customers requires that we listen and give feedback on their coffees cultivation. WE KNOW that great coffee can be produced through sustainable methods. We only work with farmers who think long and hard about the economic, social, and environmental conditions that impact both their farms and their communities. 9 EDUCATIONAL WORKSHOPS COFFEE EDUCATION & TRAINING Education is at the core of everything we do. Our role in the specialty coffee industry allows us to be both students and teachers in every facet of coffee production, from the producer level to the barista level. We provide education because we believe that paying forward experiences and lessons with our wider community will progress our industry as a whole. Sharing knowledge and providing a platform for education matters to us and our team, and it will continue to be our primary focus moving forward for the advancement of specialty coffee. 14 When we embarked on our voyage to create the smoothest, most invigorating cold brewed coffee around, we set our sights on an old Turkish proverb, telling ourselves the perfect glass should be Black as Hell, strong as death, and sweet as love. Putting our hearts and souls toward this lofty goal, we present to you Metric s Hellion cold brew coffee. Hellion will delight the senses, awaken your spirit and add a vibrant pep to your step. At Metric, we pride ourselves on cold-brewing a perfectly sweet and delicious drink that can be enjoyed straight-up, but is equally as good with a splash of cream or mixed into an adventurous craft cocktail. 16 REGULAR & NITRO COLDBREWS REGULAR Cold brew, also known as cold press or toddy coffee, is brewed without heat over a long period of time. We craft our well-loved version by steeping freshly roasted coffee in room temperature water over the course of twelve hours, in order to fully extract the richest, deepest flavors and the most silky body from the coffees. We then use a double filtration process to produce the end result: a complex, smooth, sweet brew that is full-bodied with bright juiciness, low acidity, and a long chocolate finish. Hellion is refreshing and uplifting straight out of the refrigerated 12-ounce bottle or over ice. Pair with cream or cut with water for lighter fare, or experiment with it as a mixer with your favorite spirits. Nitro coffee is slightly effervescent, ice-cold coffee on tap. It s treated with nitrogen and/or carbon dioxide under high pressure, then chilled in a keg and served on draft with a foamy head like a draft stout beer. Rich, creamy and velvety because of all of the tiny bubbles, it becomes sweeter and less acidic than large-batch cold brew making it equal parts chocolatey and silky smooth.

19 Q & A WHAT IS A KEGERATOR? A kegerator is a refrigerator used to dispense beverages. It keeps the contents refrigerated, and the liquid travels out of the taps at the top. The unit may be a single, double or triple door. A single door with a single tower may have up to three faucets (to dispense regular, nitro, and single origin cold brews). HOW DOES IT DISPENSE? The cold brew dispenses through the kegerator faucet, propelled by the gas in the tank (gas tank sold separately). Regular and single origin cold brews dispense through a standard beer tap, while nitro cold brew dispenses through a stout-specific tap. We recommend all metal coming into contact with cold brew be stainless steel. HOW MANY KEGS CAN A KEGERATOR HOLD? Up to three kegs plus the gas tank. CAN YOU MOVE THE KEGERATOR? Yes, it s a mobile unit on casters. WHAT KIND OF OUTLET DOES IT PLUG INTO? A standard 115 VAC outlet.

20 Q & A WHAT KIND OF KEGS WILL THE COLD BREW (REGULAR, NITRO OR SINGLE ORIGIN) BE DELIVERED IN All varieties of cold brew will arrive in 5 gallon Corny Italian-made stainless steel kegs with a ball connection. When the keg is empty, place a new order and the used units will be collected no need to clean them. WHAT IS THE RECOMMENDED PRESSURE ON THE REGULATOR FOR THE GAS TANK? The pressure pushing the liquid through the tap lines should bearound 35 PSI. WHAT IS THE RECOMMENDED TEMPERATURE AT WHICH THE KEGERATOR SHOULD BE KEPT? Recommended between 38 and 42 degrees Fahrenheit. HOW MUCH IS THE COST OF COLD BREW PER OUNCE The average cost is around 18 cents per ounce.
