2 Why Filter? Municipalities treat water supply systems to protect the public from water bne algae and bacteria. The most common chemicals used are chline and chlamine, (chline and ammonia combined). Both are anti ganic chemicals that oxidize ganic matter (i.e. algae and bacteria). There are three ways these chemicals affect post mix beverages and coffee Chline gives off unpleasant tastes and ods. Since most post mix beverages are over 80% water, the taste of these products will change depending upon the quality of the ingredient water. Coffee is over 97% water, chlinated water causes bitterness resulting in early pour outs As an anti ganic substance, high levels of chline react on the beverage ingredients, since they are ganic as well, diminishing flav High levels of chline can flatten carbonation and require the use of additional concentrate to mask the off taste. Foodservice operats serve brand name fountain products and other beverages to attain high quality and profitability. However, when the municipal water supply has an influx of highly chlinated water (levels of chline vary throughout the day, month and time of year) the quality and consistency of your products can be completely altered. Foodservice equipment is also adversely affected by po quality water. Ice machines, coffee brewers and steamers are dramatically affected by water quality. To protect foodservice equipment, conditions such as unwanted chemicals, too low high ph and high TDS (total dissolved solids) must be addressed. Water with high concentrations of dissolved minerals create what is commonly called limescale buildup. WHAT DOES FILTRATION DO TO REMEDY THESE PROBLEMS? Cnelius foodservice water filtration products remove virtually all of the chemicals that can cause off taste and od. In addition to reducing off taste and od, our filter will entrap particulates that accelerate harmful limescale buildup. Equipment that uses heat transfer such as ice machines, coffee urns and steam equipment require addition of scale inhibiting compounds to significantly reduce hard water scale buildup. Cnelius filters are specifically designed f maximum flow rates with the lowest possible pressure drop so as not to restrict water flow to the equipment. Properly applied, Cnelius water filtration systems will provide approximately 6 months of use befe cartridge replacement is required. WHAT EFFECT DOES LIMESCALE HAVE ON SOFT DRINKS? Hard water minerals are f the most part beneficial to post mix beverages in that the minerals help hold carbonation. As far as the carbonated dispensing equipment is concerned, totally dissolved minerals generally do not affect the operation of the equipment. The chemistry of carbonated water is aggressive and has a low ph, retarding the fmation of limescale deposits. 1

3 WHAT EFFECT DOES LIMESCALE HAVE ON ICE MACHINES? CUBERS: Because minerals will precipitate on heat transfer surfaces, limescale deposits will develop on the evapats. The limescale buildup will insulate the evapat from efficient heat transfer and result in wet ice, thin ice and sometimes even no ice. Frequent cleaning can be detrimental to ice machines. Cleaning requirements can be dramatically reduced eliminated with a Cnelius filtration system properly applied. Chline also affects the ice making process contributing to pitting and crosion of some evapat surfaces, bin liners and the units framewk. As the ice is fmed, chline evapates into the bin only to be reabsbed by the cubes as they sit in the bin. (Have you ever noticed the tastes and ods that the ice cubes in your home freezer absb?) FLAKERS: Flakers typically use an auger that turns inside around a freezing chamber that shaves ice off the evapat and transpts the shaved ice to the stage bin. When minerals and dirt begin to stick to the freezing chamber, the auger starts to scour against the minerals causing additional drag and stress on the auger, gearbox and entire freezing mechanism which, if left unattended, will result in expensive repairs and downtime of the ice equipment. Cnelius has filter cartridges f taste/od/particulate removal as well as scale inhibition, utilizing a scale inhibit compound known as Siliphos. Siliphos is a combination of silicate and phosphate. It is a taste and od free food grade compound that fms a microscopic glass like coating on all water exposed surfaces while sequestering the dissolved solids. It keeps them in solution and suspension so they do not precipitate as limescale on heat transfer surfaces. WHAT EFFECT DOES LIMESCALE HAVE ON COFFEE BREWERS AND STEAM EQUIPMENT? As with ice machines, po quality water affects coffee brewers and steam equipment by causing limescale buildup on the heating elements. This causes inefficient heat transfer, prolonged heating times and burned out elements. In severe cases, heat transfer is so po the temperature may not be sufficient f proper brewing steam cooking. CAN ALL MY FILTRATION REQUIREMENTS BE MET ECONOMICALLY? Cnelius foodservice water filtration systems are designed with flow rates so exceptional that less housings need be used to treat a large amount of water. This results in considerable savings over competitive filtration lines which are fced to put several cartridges in line to achieve adequate flow rates. Many foodservice operations install one filtration system in the back of the house that feeds the fountain beverages, coffee, ice and steam equipment.
