Dr. Joe Fiola, UME Bryan Hed, Penn State New UME Pathologist Commercial industry 2:30-2:45 Break What the Market Wants. You re going to start, or have already started, a winery. The session will cover understanding the marketplace, identifying your customers, targeted marketing and social media to each, and considerations for the type/style of wines you offer. Kevin Atticks, Executive Director, MWA Judy Crow, Owner, Crow Winery Red, White, Rosé and Orange? In 2016 Bloomberg News declared, orange wines have finally arrived. However, this style dates back about 5,000 years. This session will discuss different styles of orange (extended skin contact) wines, and considerations for including them in your product lineup. MD, VA and Georgian wine tasting will be offered during lunch break. Dr. Joe Fiola, UME Jordan Harris, Winemaker, Tarara Winery The Care and Use of Oak in Winemaking. Oak can lift up the flavor of your wine, provide structure and aging potential, but also overwhelm a wine. This session will talk about barrel selection, as well as the use of other forms of oak in your winemaking process. Tasting component. Dr. Joe Fiola, UME Alice Blayne-Allard, Free State Cooperage Bubbles, Bubbles, Everywhere. Learn about some of the multiple methods (méthode champenoise, pétillant naturel, force carbonation) for achieving a bubbly product, as well as the cost, time and bottling considerations for each method.
