3 RICK S SELECTION 750ml 500ml 175ml PICPOUL DE PINET 'PRÉAMBULE', CAVE DE L'ORMARINE, COTEAUX DU LANGUEDOC, FRANCE 2016 Since I first discovered Picpoul deep in the Camargue on my T.V. barging trip, I've been a fan of this fresh tasting fish wine from the Languedoc. CHABLIS, JEAN-MARC BROCARD, BURGUNDY, FRANCE 2015 This is one of the liveliest, freshest wines I ve tasted for a long time. Rick CABRIZ, ALFROCHEIRO, TINTA RORIZ & TOURIGA NACIONAL, DAO, PORTUGAL 2014 We really like this red wine from Cabriz. Made from Touriga-Nacional, Tinta-Roriz and Alfrocherio, it has gorgeously juicy fruit and is very gluggable CHARLIE S SELECTION I have highlighted these wines because they are tasting so good and also they are what I like to call fish wines meaning they go so well with fish FIANO, LUNATE, IGT SICILY, ITALY 2016 Floral with peach fruit, a great alternative to Pinot Grigio ANIMA DE RAIMAT, COSTERS DEL SEGRE, SPAIN 2016 This is my favourite Spanish wine on the list. Made from a blend of Chardonnay, Xarel-lo and Albariño. Chardonnay adds roundness, Xarel-lo freshness and the Albariño adds aromas. PINOT NOIR, AVES DEL SUR RESERVA, VALLE DE MAULE, CHILE 2015 Red ruby colour with violet tones. Elegant aromas of cherries, raspberries and strawberries mixed with sweet vanilla notes. Soft and delicate in the palate with smooth tanins. - Charlie

4 CHAMPAGNE & SPARKLING 750ml 125ml PROSECCO ORA DOC, TREVISO, ITALY NV As we all know now there are Proseccos and there are Proseccos and this is a particularly special DOC one, memories for me of Venice to Istanbul. - Rick CHAMPAGNE BEAUMONT DES CRAYÈRES BRUT, FRANCE NV I ve tasted a huge number of Champagnes at this level and have yet to find a better one, which is why it s been on our lists for so long. - Charlie RICK STEIN'S CHAMPAGNE BLANC DE BLANCS, FRANCE NV René & Vanessa Beaudouin have been producing this Champagne for us for the last thirty years from their tiny winery to the east of Reims. Charlie CAMEL VALLEY SPARKLING BRUT ROSÉ, CORNWALL, ENGLAND 2014 Bob and Sam Lindo have won countless awards for their sparkling rosé grown just along the Camel River in Cornwall. We are immensely proud to have listed their wonderful fizz for the last 20 years. - Charlie NYETIMBER CLASSIC CUVÉE, SUSSEX, ENGLAND NV Unquestionably the finest vinous product ever to have come from the UK. Grown on soil similar to that in Champagne - sensational. Try it. - Charlie (375ml) CHAMPAGNE BILLECART-SALMON BRUT, FRANCE, VN CHAMPAGNE BOLLINGER SPECIAL CUVÉE, FRANCE NV Have you noticed how they ve changed the Bollinger bottle to look like Dom Perignon? It s very dry, biscuity and muscular. Rick CHAMPAGNE VEUVE CLICQUOT BRUT, FRANCE NV Notwithstanding this is a first-class Champagne, you either love the colour or hate it. I adore it, they even make an orange cycle in the firm s colours. - Rick CHAMPAGNE BILLECART-SALMON ROSÉ, FRANCE, NV We think this is the best pink fizz to come out of Champagne. - Charlie CHAMPAGNE DOM PÉRIGNON, FRANCE 2006 One of the world's most recognisable wines. Wonderful stuff. - Charlie Prosecco and Blanc de Blancs Champagne are available in Magnum size, p.11 4

5 WHITE WINES VERMENTINO, LES ARCHÈRES, IGP PAYS D'OC, FRANCE 2016 Bright, crisp and refreshing. I ve wanted a good value Vermentino on our list for years and I m thrilled to find one that totally overdelivers on flavour. - Charlie GARGANEGA, TORRE DEL FALASCO, IGP VENETO, ITALY 2016 I think this wine really over delivers on flavour. Pale lemon in colour, with great citrus fruit and rounded body. - Charlie SAUVIGNON BLANC, LE TUFFEAU, IGP D'OC, FRANCE 2016 Le Tuffeau is a super-fresh, zippy Sauvignon with vibrant, ripe citrus-fruit aromas. The grapes are sourced from the vineyards near the beautiful town of Carcasonne in Southern France. A versatile wine that will match most of the fish dishes. Charlie VIURA/VERDEJO, RICK STEIN'S SPANISH WHITE, CASTILLA Y LEÓN, SPAIN 2016 After several seafood delights whilst filming in Galicia and drinking a number of Castilla y León from white china cups I had to find a really good one for us. I asked Charlie to find something made from the Verdejo grape, it s a wine to celebrate my Spanish book and TV series. - Rick PINOT GRIGIO 'VILLA FIORE', IGP VENEZIA-GIULIA, ITALY 2016 Many Pinot Grigios that you come across these days are weak and dull with none of the smell and flavour of the grape. This shows exactly how Pinot Grigio should taste, soft but crisp acidity and a faintly spicy element which marks the fruit of this wine. Charlie GEWURZTRAMINER, AVES DEL SUR, VALLE DE MAULE, CHILE 2016 This Gewurztraminer from Chile is a real winner. With aromas of rose petals and lychees, typical of the grape. Ideal partner to our fish curries. - Charlie MUSCADET SÈVRE-ET-MAINE SUR LIE DOMAINE GADAIS, LOIRE, FRANCE 2016 Great to have a proper Muscadet on the list this is a Sur Lie, it reminds me of the early days of the Seafood and trips to Brittany and plats of Fruits de Mer. - Rick 750ml 500ml 175ml

6 WHITE WINES MOSCHOFILERO, FEAST, SEMÉLI, PGI PELOPONNESE, GREECE 2016 Gone are the days of just drinking Retsina on your greek holiday, this Moschofilero is juicy, floral. A total delight. - Charlie FALANGHINA, ROCCA DEL DRAGONE, IGP CAMPANIA, ITALY 2016 Falanghina has its home just outside Naples in Campania and gives floral rounded wines that are great with a variety of foods. A must try! - Charlie CHARDONNAY, XANADU EXMOOR DRIVE, MARGARET RIVER, AUSTRALIA 2016 I first heard about Xanadu in Margaret River when one of our chefs went over to run their restaurant and was raving about the wines. This is their Exmoor Drive Chardonnay which is fresh and creamy with not too much oak. - Rick VIOGNIER, LE CHOIX DE VOLTAIRE, LANGUEDOC, FRANCE 2015 This peach scented Viognier is perfectly pitched, soft-ripe & delicious. - Charlie SAUVIGNON BLANC, SNAPPER ROCK, MARLBOROUGH, NEW ZEALAND 2016 I find many New Zealand Sauvignons to be almost oppressively fruit laden. Snapper Rock though is much more subtle and at a recent tasting we liked it best because of its good balance of leafy flavour with a pleasing round finish. - Charlie GROS MANSENG/SAUVIGNON, ALAIN BRUMONT, CÔTES DE GASCOGNE, FRANCE 2016 We've listed this Gascogne white at the Seafood restaurant for years and it goes so well with the Indonesian Curry. - Charlie CHABLIS, JEAN-MARC BROCARD, BURGUNDY, FRANCE 2015 This is one of the liveliest, freshest wines I ve tasted for a long time. 7 WHITE WINES WHITE BURGUNDY, RICK STEIN'S, MÂCON, FRANCE 2015 In 2014 I travelled with the family to Beaune to find the perfect wine to commemorate The Seafood Restaurants fortieth anniversary. This nutty, buttery and complex wine is fleshy and ripe, but with a wonderful citrus freshness and a touch of oak. It s a fresh, thirst-quenching celebration for people who love the world s best chardonnays. - Charlie ALBARIÑO, BODEGAS VIÑA NORA, RÍAS BAIXAS, SPAIN 2016 Fascinating white wine made from the characterful Albariño grape. We think this is one of the best we have tasteddelicious. Rick RIESLING, DEVIL'S CORNER, TASMANIA, AUSTRALIA, 2015 Bright crisp Riesling with lots of citrus lime, lemon fruit & wet stone minerality. - Charlie SANCERRE 'LA MERCY-DIEU', DOMAINE BAILLY-REVERDY, LOIRE, FRANCE 2016 I must say this is a serious wine, it s slightly austere and extremely elegant from a famed producer. - Rick VIÑA GRAVONIA BODEGAS R. LOPEZ DE HEREDIA, RIOJA SPAIN 2007 Lovely old-style Rioja, unashamedly touched with oak & full-bodied fruit, but with a good acidic edge. Charlie RULLY, DAVID MORET, BURGUNDY, FRANCE 2015 I go out every year to taste David Moret s new vintages and every year they keep getting better and better. Rich, ripe and fleshy with smoked butterscotch flavour. Without a doubt the best wine to match with Turbot and Hollandaise. - Charlie PULIGNY-MONTRACHET, DAVID MORET, BURGUNDY, FRANCE 2015 We tasted this vintage from the tank in David s tiny cellar in Beaune. It has now developed into a fantastic Puligny. Full and creamy with unctuous fruit and weighty mouthfeel and a great backbone of acidity. - Charlie 750ml 500ml 175ml

8 ROSÉ WINES 750ml 500ml 175ml GRANFORT ROSÉ DE CINSAULT, IGP D'OC, FRANCE 2016 A light and refreshing style rosé from the south of France. Crisp clean and bursting with crunchy strawberry and raspberry fruit. - Charlie CHÂTEAU BAUDUC ROSÉ, BORDEAUX FRANCE, 2016 We made this lighter style of rosé using Merlot, Cabernet Franc & Cabernet Sauvignon grapes with minimum skin contact it is crisp, dry & fruity a sort of St. Tropez meets Bordeaux says Gavin Quinney of Château Bauduc PROVENCE ROSE, MADO, FRANCE This is the sort of rosé that should be drunk all year round dreaming of a beach in the south of France. - Charlie 8

9 RED WINES GRENACHE/SYRAH, PEYRASSE, IGP D'OC, FRANCE 2016 Juicy, round and easy Grenache and Syrah from Southern France. Rick CORVINA, TORRE DEL FALASCO, VENETO, ITALY 2015 This lush and smooth Italian red always impresses with its bouquet of blackcurrant and bramble aromas and its long velvety finish. - Charlie GARNACHA, RICK STEIN'S SPANISH RED, CAMPO DE BORJA SPAIN 2016 Rick and his son Charlie worked together to select this wine to match with the flavours he encountered on his journey through Spain. A delicious, juicy and ripe Spanish red made from Garnacha. - Rick MALBEC RESERVE, KAIKEN, MENDOZA, ARGENTINA 2015 The vineyard sits at 950ft in Mendoza, Kaiken Reserve is deep violet in colour with rich fruit, layers of chocolate & little spice too - stunning Malbec. - Charlie 750ml 500ml 175ml BELLA FIORE, ROSSO DELLE VENEZIE, ITALY 2016 Red ruby colour with violet tones. Elegant aromas of cherries, raspberries and strawberries mixed with sweet vanilla notes. Soft and delicate in the palate with smooth tanins. - Charlie RIOJA SANTIAGO, CRIANZA SPAIN 2014 Smooth and mellow with coconut hints. Charlie CÔTES-DU-RHÔNE, DOMAINE LAFOND ROC EPINE, RHONE, FRANCE 2015 Thick, dark and full of mature fruit, as the late great Bill Baker our wine advisor for 30 years, might have said Proper Côtes du Rhône. Rick GEVREY-CHAMBERTIN, HERVÉ KERLANN, BURGUNDY, FRANCE 2010 A proper Gevrey-Chambertin from a great vintage full of bright red cherry, raspberry and a toned down Burgundian earthiness. - Charlie

LUSTAU PEDRO XIMÉNEZ, BODEGAS EMILIO, JEREZ, SPAIN (37.5cl/70ml) Pedro Ximénez is made from grapes dried under the hot Spanish sun, concentrating the sweetness to create a thick, dark wine with intense flavours of raisins and molasses that is then fortified and matured in Solera. MONBAZILLAC, DOMAINE DE GRANGE NEUVE, FRANCE (50cl/100ml) If the grape harvest is particularly good our friend Gavin Quinny makes a Monbazillac which is unctuous and fragrant
