This management system is used to identify, assess, and control hazards in any workplace scenario. Participate in this interactive session and walk through a risk assessment based on common hazards in a viticulture/winery setting. The focus will be on hazard identification, evaluation of risk, and selection of risk reduction measures. Participants will receive simple risk assessment tools that can be used for all workplace scenarios. 4 14:30 Concurrent Workshops (Choose one) A) Non-subtractive Methods for Tartrate Stability Traditional tartrate stabilization is achieved through chilling of finished wine allowing excess tartaric acid to precipitate. This methodology is costly in terms of time, labour and utilities including energy and water as well as being unpredictable which can impact winery logistics and wine sensory impact. Non-subtractive tartrate stability products such as Mannoproteins and Carboxymethyl-Cellulose have been developed to address these concerns and are currently available for commercial use.
