What are your specific needs, what should you ask when purchasing a gas monitor, are there alternatives to purchasing a gas monitor, and when should you use them? Neil Crosby, Industrial Scientific Corporation and Peter Baker, Acklands Grainger B) Introduction to Winery Self-Assessment Tools This workshop will provide a demonstration of the new online sustainability assessment tool developed for BC wineries and winery hospitality areas. This nifty, user-friendly tool includes checklist-style assessments linked to score cards and graphs. The tool enables the user to quickly see which areas of sustainability the winery is excelling in and where improvements can be made, evaluate how the winery is progressing from year-to-year, and compare the winery s scores with industry averages. The online tool is a component of the BC Sustainable Winegrowing Program. Kellie Garcia, Insight Environmental Consulting Inc. 09:00 Concurrent Workshops (Choose one) A) Labour Market Program Project The workshop will focus on a Labour Market Partnership Project sponsored by the BC Ministry of Jobs, Tourism and Innovation to address labour market issues of the wine and grape sector in BC. Key areas include an overview of the LMPP program and then a close look at the sector s project including a review of the objectives and outcomes (including an industry assessment to determine the viability of an apprenticeship training program for viticulture/viniculture technicians.). Carolyn McLaren, Human Resources Consultant, & Anne Kadwell, CEO of HortEd BC B) Malolactic Fermentation: A tool to fine-tune your wine s sensory profile? Malolatic fermentation has often been seen as just something to get through after the hectic time of harvest, but as the research shows, your ML bacteria can have an important impact of the sensory profile of your wine. Timing of MLF; co-inoculation as a tool; positive and negative aspects to be aware of; and recent update of ML research around the world. Sigrid Gertsen-Schibbye, Lallemand Inc. 10:00 Coffee Break Tradeshow 10:15 Fundamentals of Electrochemistry ph Seminar A brief discussion of ph theory will lead to a practical discussion of electrode selection, calibration suggestions, the effect of temperature on ph measurements, care and maintenance ideas, best practices as they relate to buffer use, troubleshooting guidelines, and measurement hints. An update of the newest ph technologies will be given. Mark McElroy, Thermo Scientific 11:00 Cap Management and Blending The process by which Pulsair equipment is used during red wine fermentation is called PNEUMATAGE. This replaces conventional methods of managing the cap such as punch down, pump-over, rack & return, etc. The workshop session will discuss the various aspects of using PNEUMATAGE. Discussion with authors of a Study of BC, Spain, Italy, Chile, and Australia This panel presents the authors of a 3-year study of the wine industry based on a Genome Canada/BC grant. Using a common framework, each author studied the factors behind the overall performance and evolution of industries in his/her home country. The results were then compared to draw out lessons for what seems to work in promoting industry success in the long-run.
