In a large pan with a tight fitting lid, put the sesame oil. Add the garlic, shallot, ginger, lemongrass and lime leaves. Cook for 2 minutes to release flavour. 2. Add the mussels and wine and close the lid tightly, cook for a further 4-5 minutes until all of the mussels have opened, discard any that haven't. 3. Add the coconut milk, rice wine and soy sauce and simmer for 2-3 minutes. 4. Lastly give a good squeeze of lime and throw in a good handful of coriander.
