1 NEWS FROM SUNSHINE CARE ~A MEMORY CARE COMMUNITY Issue 264 March 2018 A Memory Care Community Monte Vista Road Poway, CA Resident of the Month Robert Schimmel Bob was born on May 17, 1928 in the Hoosier state of Indiana. He is the tenth of eleven children. His father, Frederick worked in a large department store as a maintenance manager, while his mother Estelle was a homemaker. He married Maxine Price in 1951, whom he met while they both were employed at the same bank. The following year Bob was drafted into the Army during the Korean War. His basic training was in California, and later he was fortunate to be selected to serve in the Counter Intelligence Corp where he attended school in Baltimore, Maryland. Returning to Indiana, they settled into their new home where they had two sons, but memories of California remained with Bob. They decided the sunshine of California was calling them, so they were on their way out west. Bob secured a job position at a bank in Southern CA, which began his long career in the banking industry. They had two more children making the family complete. During this time Bob enjoyed many family activities, vacations and attended church, while meeting life long friends. Bob retired in 1987, and in 1989 decided to move to Rancho Bernardo. Bob was then asked by a friend to join him in the auto racing field for about five years, and soon after he helped one of his sons start a successful photography business. Bob & Maxine spent the next 20 years traveling around the world and especially enjoyed time in Puerto Vallarta, Mexico where they owned a condominium and later a wonderful time share. They also enjoyed time with their two grandchildren and five great grandchildren. Bob came to Sunshine Care in May of 2017, and especially enjoys the gardens and the local school children visiting, which is an added treasure. Bob, we are so glad to have you as part of our Sunshine Care Family! 2 Sunbeams March 2018 Page 2 Employee of the Month Rod Wilwayco Rod was born and raised in the Philippines where he learned the value of work at an early age. He joined the Sunshine Care team six years ago, a few months after he and his family migrated to the U.S. He is happily married for 33 years now and blessed with a daughter and son, who are also blissfully married. Rod has one grandchild. Rod started as a caregiver and soon became a med tech. He works in both the Palms and the Willows/ Elms buildings and he will help any caregiver or resident in any of the seven Sunshine Care homes when needed. Thus, he has become a familiar face campus-wide among the residents and their family members. When asked about his driving force in serving the Sunshine Care residents, Rod says: The things we now enjoy are the fruits of labor of the people like the residents we serve at Sunshine Care. We tend to ignore the things they did or contributed - from the simple things to the complex inventions to making our life a lot easier and better. They worked so hard and when we think of their contributions to mankind, these serve as positive reminders of why we are here for them. It s payback time. 3 Sunbeams March 2018 Page 3 GARDEN GATE Howdy gardeners! Things are busy here in the Sunshine Care gardens in March. Tomatoes and squash are planted with trays of cucumbers, peppers, spaghetti and butternut squash, melons and green beans filling the greenhouse. Our kids from Garden Club have been busy, along with our residents, sowing seeds like crazy. This will be the last month that we will plant our winter favorites such as cauliflower and broccoli. Romaine lettuce is an on- going weekly task until the dead of summer. So you can see that the month of March allows you to plant a multitude of veggies, but tomatoes are still the King of Spring. This month s free garden lecture is on Saturday, March 17 th at 10:30 with the topic: Successes and Failures in Our Fall/Winter Organic Gardens and Time to Prepare for Spring! Guests are encouraged to share their good, bad and ugly experiences throughout the cool season in the garden. The weather was warmer than usual so earliness and size were welcome pluses with rodents and aphids being the minuses. Happy gardening! Easter Honey Glazed Carrots Ingredients: Salt 1 pound baby carrots 2 tablespoons butter 2 tablespoons honey 1 tablespoon lemon juice Freshly ground black pepper 1/4 cup chopped flat-leaf parsley St. Patrick s Day Beer-Battered Broccoli Directions: Whisk 1 cup beer, 1 cup flour, 1/4 cup chopped parsley and a pinch of salt. Directions: In a medium saucepan, bring water to a boil. Add salt and then carrots and cook until tender. Drain the carrots and add back to pan with butter, honey and lemon juice. Cook until a glaze coats the carrots, 5 minutes. Season w/salt & pepper and garnish with parsley Let the batter rest 1 hour. Dip 4 cups broccoli florets in the batter and fry in 375 vegetable oil until golden brown, about 2 minutes. Drain on paper towels. Serve with sour cream.
