This mission has over the last few years been incorporated within each of our restaurants and into our everyday policies. We hope that you have already seen some of the benefits of these changes in our products and services and have recognized the sustainability factor which is the underlining reason for our efforts. Mission Statement It is our mission to measurably reduce our carbon footprint on the environment and to provide high quality food and beverage service with a sustainable, recyclable and local emphases on all products used in the course of our business. It is our goal to fully establish these practices throughout our restaurants and continually learn about the newest developments in all areas of sustainability and implement changes as an ongoing practice of our businesses. Chesapeake Greenhouse Locally grown from a family farm located in Queen Anne s County, Maryland. Their commercial sized greenhouse is 24,000 square feet. (1/2 acre) They have 38,000 heads of lettuce growing in different stages of production. They pick fresh lettuce every day. The lettuce is sold with the roots on so it will stay fresh longer than field grown lettuce. The greenhouse is categorized as Controlled Environment Agriculture. The lettuce is grown indoors, in water. (Hydroponic) High density production, higher yields, more efficient use of energy, lower water consumption, more ecologically acceptable disease and insect control, and greater control over the plants nutritional requirements are a few of the significant advantages. ~ 7 ~

8 Introduction from page one: Welcome to Brian Boru Irish Restaurant and Pub We named our establishment after a famous figure in Irish history --Brian Boru -- who rose to be Ardh Ri or high king of all Ireland and ruled the land from 1004 a. d. to 1014 A.D. Ireland in the beginning of the 9th century was a fractured and war torn country. Brian Boru became the high king of all Ireland by defeating invaders and internal warlords alike. He then set to rebuild the churches, colleges and cultural institutions destroyed after generations of conflict during his reign he sought to bring peace to his people and restore old traditions lost to invasion. Irish traditions and history have been built on people like Brian Boru and are what has made Irish hospitality what it is today We are here to deliver that to you our valued customer over the years we have developed and refined our menu to represent what we have found to be the best of traditional Irish cooking and recipes. We hope you enjoy the food and libations and family friendly service. While visiting --relax in the truly Irish atmosphere -- enjoy a pint or two and revel in the artifacts and culture we are so proud of.
