15 Appetizing & Delicatessen Classic Salads SMOKED WHITEFISH SALAD We mix Door County, Wisconsin whitefish fillets, smoked over hard woods, with cucumber and celery, a touch of mayonnaise, a hint of sour cream, and some Worcestershire sauce to make this clean-tasting smoky treat. PICKLED HERRING SALAD May not be the prettiest salad of the bunch but it s surely one of the tastiest! A real party in your mouth and a balanced complement to the smokier and saltier whitefish or baked salmon. SMOKED BLUEFISH SALAD WITH ORANGES, FENNEL, AND ROASTED HAZELNUTS Rhode Island smoked bluefish brings a campfire essence to this salad. Coupled with oranges, fennel, and roasted hazelnuts, it s a medley of nuanced flavors. TRADITIONAL CUCUMBER SALAD An appetizing classic. Cucumbers in a lightly sweet vinegar sauce with white onions. CHICKEN SALAD Slow-poached Quebec chicken with raisins, pecans, and celery. TUNA SALAD White albacore tuna salad a classic. We re told ours is simply the best there is. Who are we to argue? EGG SALAD WITH CORNICHONS The just-perfect balance of hard-cooked eggs, mayonnaise, Dijon mustard, and cornichons. BAKED SALMON SALAD A sumptuous treat to be sure, we make this spread using only the richest Norwegian salmon, and include all the belly meat to ensure the ultimate decadence. CITRUS-ROASTED BEET SALAD Lighten things up with our citrus-roasted beet salad. Red beets, roasted with fresh thyme and orange zest, tossed with fresh squeezed orange juice, zest, and fine olive oil. AUSTRIAN POTATO AND CUCUMBER SALAD Sliced potatoes are mixed with sliced cucumbers, fresh dill, whole grain Dijon mustard, red wine vinegar and beef bouillon. CHOPPED LIVER We hand-chop our chicken livers and gently fold the chopped liver with duck fat, hard-cooked eggs, and sautéed onions. Cognac rounds it out to make it the perfect chopped liver. VEGAN/GLUTEN-FREE CHOPPED LIVER Walnuts and lentils are the base for this amazingly luxurious vegan/g-f knockoff of deli-classic chopped liver. Even the most ardent carnivore will love the stuff! Ours is shredded (not chopped like our coleslaw), with vinegar, a bit of sugar and our special blend of health salad spices. This slaw the perfect salad to cut right through the richness of our homemade pastrami, corned beef, and tongue. KASHA VARNISHKES A delicatessen classic. Bowtie pasta, toasted kasha (buckwheat groats), fried onions, and duck fat. RIESLING-BRAISED SAUERKRAUT Braising sauerkraut cleans away that raw funk. We braise ours in Riesling and add a bit of grated potato to thicken it just a touch. This sauerkraut and our deli meats are a marriage made in heaven. 27 Shelsky s Caviar Selections Market Price PADDLEFISH CAVIAR The paddlefish is a close relative of the American freshwater sturgeon. Harvested from wild paddlefish in Mississippi River, this small and glossy caviar is earthy and bold is priced for gatherings of any size. HACKLEBACK WILD AMERICAN STURGEON CAVIAR The hackleback sturgeon have made a comeback over the last couple decades. The caviar from these sturgeon is proudly labeled, American Caviar. The eggs are small, black to dark brown orbs with sweet notes up front, a light earthiness, and a buttery finish USA PRESIDENTIAL TRANSMONTANEOUS STURGEON CAVIAR This elegant caviar is harvested from the same farm raised, luxurious California white sturgeon we sell here at Shelsky s. It is reminiscent of the finest wild Russian osetra of years ago. Smooth and robust, this caviar is simply wonderful. KALUGA CAVIAR This luxurious caviar will remind you of beluga! These large, dark brown eggs have an assertive mineral flavor on the front and the finish is nutty and smooth. The Kaluga sturgeon are a cross breed of two of the most prized sturgeon from the Amur River Basin, the Husu Dauricus and the Acipenser Schenckii. They are farmed with the utmost care and attention in China to produce some of the very best caviar available today. RUSSIAN OSETRA CAVIAR Our carefully selected osetra is farmed in cold Russian lakes and rivers. Round, plump eggs that have notes of fresh water and hazelnuts are extraordinarily silky on the tongue and quite unforgettable. FRENCH TROUT ROE Slightly smaller than the salmon roe, these eggs have a nice pop to them with strong notes of fresh water that make you know you are enjoying fresh trout that would ve been!
