1 Cranberry-Walnut Wild Rice Salad 8 servings Ingredients 1 cup Wild Rice 1/2 cup Brown Rice 3 cups Natural Chicken Stock 2 Oranges, peel and remove pith, segment and slice 8 Basil Leaves, Chiffonade Cut 1/4 cup Red Onion minced 3 tablespoons chopped Walnut, lightly toasted 1 teaspoon finely grated Orange zest 3/4 cup dried Cranberries, dehydrate with orange juice Dressing 1/3 cup Red Wine Vinegar 1/4 cup Olive Oil 1 tablespoon Orange Juice 11/2 teaspoon Dijon Mustard 1 teaspoon Honey 1/4 teaspoon Kosher Salt Directions Combine brown rice, wild rice, and chicken stock in a saucepan and bring to a boil. Cover, reduce heat to a simmer and cook until all water is evaporated and rice is fully cooked, about 45 minutes. Remove from heat and cool completely. When rice is cool, add oranges, basil, red onion, walnuts, cranberries, and orange zest; mix to incorporate ingredients. Dressing Combine the red wine vinegar, olive oil, orange juice, honey, and salt in a bowl and whisk to incorporate. 4 Tim DiMenna of Centerplate was extremely thoughtful and caring in making sure that our food choices supported the mission of our conference. Since our conference focused heavily on cancer and nutrition, we wanted our selections to show that eating healthy can be delicious. As the official caterer for the Alliant Energy Center, we have the privilege to provide food service for many outdoor events, including the Willow Island outdoor venue, a 29-acre natural green area including two ponds encircling a nearly seven acre isthmus. Debuting in the summer of 2003, Willow Island is an ideal outdoor event venue for events including festivals, outdoor music concerts, consumer shows, picnics and much more.
