Facebook.com/MoneyWise Lynnette Allen County Extension Agent For Family and Consumer Science Vacationing on a Budget Sunshine, warm temperatures, and more flexible family schedules make summer the ideal travel season. However, summer is also the most expensive travel season. Planning your next vacation in advance, and with a budget in mind, is a great way to ensure that you will get the most bang for your buck without going into post-vacation debt. Check out the following travel tips: Create an annual vacation fund and budget. Decide the maximum amount of money that you can afford to spend on each trip and then break down your budget to include specific categories including transportation, hotel, food, and entertainment. Don t forget to include an emergency fund in case of an unexpected flat tire or a trip to the urgent treatment center! Plan early. You will often find the lowest prices on airfare and hotels by booking up to six months in advance. Consider traveling during the off season. Winter is the least expensive travel season, followed by fall and spring. Airfare. If your travel dates are flexible, consider signing up for an airfare alert website. You can receive alerts when your desired destination is being offered at lower-than-normal prices. Look for package travel deals or all-inclusive vacation packages. Research low cost vacation options. Consider camping, visiting a nearby beach or historic site, or choosing a travel destination with multiple free activities. Cash in on rewards. If you use a credit card that offers cash back, gift cards, or airline miles, consider using these rewards for your vacation. Consider reserving a hotel room with a small kitchenette or a refrigerator and microwave, so that you can eat-in as many meals as possible. Also, be on the lookout for hotels that offer a free continental breakfast. Researching cost-saving travel strategies, and doing so well in advance, is a great way to guarantee that you will get everything you want out of your vacation while avoiding post-vacation debt.

2 Breckinridge County Homemakers Council Meeting is scheduled for Thursday, June 9th 12:30 (ct) in the Basement of the Extension Office. NOTE: Committee members are still needed. If you would be willing to serve on a committee, please contact the office at Year End Club Reports Due July 1st As the Homemaker year comes to an end. It is time to complete the annual club reports. Club and county chairs and officers should have received report forms at the beginning of the year, but if new copies are needed, please call the Extension Office and new copies can be mailed or picked up. It is time to start making plans to enter your homemade goodies, handmade items, vegetables, flowers and other items in the BRECKINRIDGE COUNTY FAIR The fair this year will be from Wednesday, July 13th to Saturday, July 16th Entries will be received: Tuesday, July 12th from 4:30 to 6:30 p.m. (ct) & Wednesday, July 13th from 7 to 9 a.m. (ct) Judging will be on Wednesday, July 13th at noon Entries need to be picked up on Sunday, July 17th from 1 to 2 p.m. (ct) If you have questions or need more information, contact or lallen@uky.edu WEIGHT THE REALITY SERIES A 6-week course of self-discovery, skill-building and support to help people learn about weight control. This program is based on current approaches that are promising ways to achieve better health. While health concerns are important to most people, other reasons seem to provide more motivation to change behaviors The program will address the health and wellness, while also covering physical activity, positive body image, in a fun supportive environment. The series will cover such topics as: wills, preplanning a funeral and other legal issues relating to death, coping with independence, expressing kindness and offering support to others. 4 Roll Call & Thought for the Month June: National Fresh Fruit and Vegetable Month Eat the Rainbow-Make sure your fruit and vegetable choices are very colorful. The darker the green the more nutritional value it has. Make fresh fruits and vegetable your snack of choice. You will save calories and feel more satisfied. 53% of Kentuckians eat one or more fresh fruits a day and 75% will eat at least one or more vegetables a day. Make good choices for better health. 5 MICROWAVE COOKING TIPS: Cooking for one or two can be a challenge when most recipes are formulated for 4 or more servings. But with a mug and a microwave some really delicious meals can be prepared for single servings. Things to remember: Microwave ovens vary. If the stated cooking time does not seem to be enough, add additional cooking time in seconds. It is easy to overcook. Cut meats and veggies in uniform sizes so they cook evenly and quickly. Caution: Mugs will be hot when removed from microwave. When covering the mug for cooking put a small slit in plastic wrap to allow steam to escape. Follow standing time recommendations for cooking to complete. Stir as recommended to ensure even cooking. Food heats more evenly at the edge of the microwave s carousel. Boil water on stove top to ensure correct temperature and to avoid the risk of overheating in microwave and chance of water exploding. BEEF COBBLER This hearty meal makes a perfect Sunday lunch. Use a cup rather than a mug to make it; otherwise the cobbler will sink. Prep/cook time: 8 minutes Microwave: 1000W 1 teaspoon vegetable oil 1 tablespoon chopped onion ¼ cup ground beef ½ carrot, peeled and chopped 2 small red potatoes, quartered ½ cup store-bought beef gravy 2 tablespoons frozen peas FOR THE TOPPING 2 tablespoons butter, softened ¼ cup self-rising flour 2 tablespoons milk Cooking for One Put the oil, onion and beef in a medium cup. Microwave on high for 1 minute, then stir with a fork to break up the beef. Add the carrot, potatoes and gravy to the beef, stir well, and stand the cup in a shallow microwaveable bowl, as some of the liquid will boil over. Cover with plastic wrap and pierce with a knife. Microwave on medium for 2 minutes. Add the peas, stir well, cover again with the plastic wrap, then return to the microwave and cook on medium for 1 minute, or until the vegetables are just tender. Meanwhile, make the topping. In a small cup or bowl, rub the butter into the flour, then mix with the milk to form a slightly sticky dough. Divide the dough into two pieces, roll into balls, and flatten slightly. Arrange over the top of the beef, cover the cup with plastic wrap and pierce with a knife, then return to the microwave and cook on medium for 2 minutes. Allow to stand for 2 minutes before serving. 6 LET S GET SNAPPY WITH SNAP ED! Tasha Tucker is the Nutrition Assistant at the Extension Office where she is offering FREE nutrition education classes. Tasha is a part of the Kentucky Nutrition Education Program (KYNEP) which is designed to reach SNAP recipients or individuals who are eligible for SNAP benefits to educate themselves in health and wellness. Participants will receive the opportunity to learn hands-on food preparation skills, receive resources for making healthy lifestyle changes, tips to preparing easy meals that taste great and save money on groceries.
