Hwy 261 Hardinsburg, KY (270) Fax: (270) Countdown to the Thanksgiving Holiday As Thanksgiving approaches, cooking the traditional turkey dinner gives rise to anxieties and questions. What kind of turkey should I buy? Should I buy a frozen turkey or a fresh one? How do I store my turkey? A few simple steps will not only ease your holiday fears, but will ensure a delicious and a safe meal for you, your family, and your friends. The following information may help you prepare your special Thanksgiving meal and help you countdown to the holiday. Plan Ahead Plan your menu several weeks before the holiday. Shopping early will ease the countdown tension for your Thanksgiving meal. Ask these questions to help plan your meal. Do you want a fresh or frozen turkey? Do you have enough space to store a frozen bird if purchased in advance; if not, when should you purchase a turkey? What size bird do you need to buy? Fresh or Frozen If you choose to buy a frozen bird you may do so at any time, but make sure you have adequate storage space in your freezer. If you buy a fresh turkey, be sure you purchase it only 1-2 days before cooking. Do not buy a pre-stuffed fresh turkey. Thawing in the refrigerator Place frozen bird in original wrapper in the refrigerator (40 F or below). Allow approximately 24 hours per 4 to 5 pounds of turkey. A thawed turkey can remain in the refrigerator for 1-2 days. In cold water If you forget to thaw the turkey or don't have room in the refrigerator for thawing, don't panic. You can submerge the turkey in cold water and change the water every 30 minutes. Allow about 30 minutes defrosting time per pound of turkey. Cook immediately after thawing. 2 Countdown to the Thanksgiving Holiday (continued from front page) In the microwave Microwave thawing is safe if the turkey is not too large. Check the manufacturer's instructions for the size turkey that will fit into your oven, the minutes per pound, and the power level to use for thawing. Cook immediately after thawing. Preparation The day before Thanksgiving Make sure you have all the ingredients you need to prepare your holiday meal. Check to make sure you have all the equipment you will need, including a roasting pan large enough to hold your turkey and a food thermometer. Wet and dry stuffing ingredients can be prepared ahead of time and refrigerated separately. On Thanksgiving Day mix ingredients just before placing the stuffing inside the turkey cavity or into a casserole dish. Then, bake immediately. Thanksgiving Day If you choose to stuff your turkey, stuff loosely. The stuffing should be moist, not dry, since heat destroys bacteria more rapidly in a moist environment. Place stuffed turkey in oven immediately. You may also cook the stuffing outside the bird in a casserole. Judging cooking time for your turkey will be easier if the following chart is used. The times listed are for a fresh or thawed turkey in an oven at 325 F. These times are approximate. Use a food thermometer to check the internal temperature of the turkey. A whole turkey is safe cooked to a minimum internal temperature of 165 F throughout the bird. Check the internal temperature in the innermost part of the thigh and wing and the thickest part of the breast. All turkey meat, including any that remains pink, is safe to eat as soon as all parts reach at least 165 F. The stuffing should reach 165 F, whether cooked inside the bird or in a separate dish. When turkey is removed from the oven, let it stand 20 minutes. Remove stuffing and carve turkey. Storing Leftovers Cut the turkey into small pieces; refrigerate stuffing and turkey separately in shallow containers within 2 hours of cooking. Use leftover turkey and stuffing within 3-4 days or freeze these foods. Reheat thoroughly to a temperature of 165 F or until hot and steaming. 7 Christmas Tree Trimming Friendly Reminder Cloverport Homemakers are in charge of decorating the Christmas Tree in the Extension Community Building. All members are invited to help. Due to holiday meetings and parties the tree will need to be trimmed by Friday, November 30 th Taste of Christmas Club Assignments To ensure a successful and delicious event, we need the help of all clubs. We will need volunteers for setup on Friday, December 7 th at 1 p.m. (ct) For the event, please call the Extension Office to volunteer your club or as an individual. The following work schedule has been formed for Sunday, December 9 th. 9 to 11 a.m. (ct) (includes set up) 11 a.m. to 1 p.m. 1 to 3 p.m. (ct) (includes clean up) The following donations are needed. Soups and Stews Cloverport 2 pots chili Countryside 2 pots beef stew & 1 pot potato soup Irvington 1 pot kale soup, cheese & crackers Rough River 1 pot kale soup & 1 pot potato soup Desserts Each club is asked to provide 2 home baked desserts Sandwiches Hites Run variety of crackers & cheese balls New Bethel chicken salad & cheese & crackers Carolyn French pimento cheese sandwiches **The county organization will provide ham sandwiches and drinks. Door Prizes Each club is asked to donate a $10 to $15 door prize. The annual Taste of Christmas Cookbook We will once again create a Taste of Christmas Cookbook of special Holiday recipes from the event and other family favorites. Please turn in your recipes to the Extension Office by Wednesday, November 21 st. Save the Date Cloverport Homemaker Christmas Bazaar Irvington Parade Saturday, November 17 th Contact Irvington City Hall for details The Cloverport Homemakers Christmas Bazaar will be Saturday, December 1 st. Starting at 11 a. m. (ct) and continuing until after the Cloverport Christmas Parade. We will need each Homemaker Club to donate 4-5 dozen home baked cookies or an equal amount of goodies as mentioned above. Also, a few jars of home canned jellies from each club would be appreciated. The non-perishable items may be dropped off at the Extension Office by Wednesday, November 21 st by 10 a.m. (ct). The baked items will need to be brought to the Extension Office by noon (ct) on Monday, November 26 th for the baskets to be completed and presented to the Fiscal Court and Officials that afternoon at the court meeting. Helping Hands, Helping Others The Family & Consumer Sciences Program has the opportunity to share basic sewing skills with young Head Start families. As a homemaker you are invited to join us as a helper. The following dates have been scheduled. Irvington Elementary School, Tuesday, November 13 at 8:15 a.m. (ct) Hardinsburg Elementary School, Friday, December 7 at 8:15 a.m. (ct) Please call the Extension Office, , to volunteer and to get more details. CPR CLASS First Priority Farm families Monday, November 12, 2018, Extension Community Building 4 p.m. 9 p.m. (ct) Class limit 30 Limit four (4) participants per family. Fee: $40 per person Balance sponsored by Breckinridge County Extension Board A light meal will be furnished. Pre-registration required by Friday, November 9. Call to register. 8
9 Homemakers Hosting Migrant Meal November 8th The Homemakers will once again sponsor a meal for the Spanish to English classes on Thursday, November 8th. Food donations may be brought to the Extension Farmers Market & Educational Facility at 5:30 p.m. (ct) that evening. The plan is to feed participants. Cloverport 2 taco/fajita seasoned chicken - shredded Countryside 2 lbs. seasoned taco meat and 2 large onions chopped Hites Run 1 lb. seasoned taco meat and 2 heads lettuce shredded Irvington Friendly 2 lbs. seasoned taco meat New Bethel 1 lb. seasoned taco meat & 1 taco/fajita seasoned chicken - shredded Rough River 2 taco/fajita seasoned chicken shredded FCS Program 1 large container sour cream and 2 large cans refried beans November Homemaker Lesson Training The November Lesson which was scheduled to be Economical Entrees with Time Saving Appliances has been moved to the March lesson. The leader lesson is scheduled to be taught in February. The March Lesson Ever Had a Leak? Urine Not Alone! will be the November Lesson; it will be a mail out lesson. The materials for it will be prepared by Danielle Ford, Marion County Extension Agent for Family and Consumer Science Education. December & January Homemaker Lesson Training There is NO lesson in December. The January Lesson, How Sweet It Is will be a mail out lesson. Save the Date Annual Homemaker Christmas Party Thursday, December 13 th at approximately 11:30 a.m. (ct) In the Breckinridge County Extension Community Building. Bring a tasty dish for the potluck lunch!! Each member is invited to bring a $5 gift for a fun gift exchange. 10 Paper Crafters Scrapbooking The Paper Crafters Club would like to invite everyone out to enjoy evenings of creative scrapbooking & card making. The group is focusing on Holiday Cards at their meetings. There is a $6 fee to cover the cost of materials and equipment. Upcoming dates include Thursday, November 8 th, Wednesday, November 14 th and Wednesday, November 28 th. These meetings are held in the basement of the Extension Office at 5:30 p.m. (ct). 11 New in 2019 Book Club Study Group- There will be a special leadership development book study program offered beginning in January As a group we will read and discuss John Kotter s That s Not How We Do It Here! This book takes a look at a clan of meerkats that have lived the good life and are now facing troubling times. Their clan leadership must decide how they will adapt to changing times and try to survive in a hostile environment. This will be a great opportunity for participants to examine their personal leadership strengths and weaknesses and give considerations to the growth of the community organizations in which they are involved. Have you ever said, that s not how we do it here? Meeting schedule and times will be determined based on the group make-up and size. Call the Extension Office at to sign-up for the program. A loaner book will be provided for the first 10 participants to sign-up.
