The Basques insist that their cheeses date back 4,000 years, and often call them ardi-gasna, which means ewe or local cheese in the local dialects Arpea / 1.54 lb Case Arpea is a small sheep s milk cheese with a washed rind and a paste that is smooth and creamy, with small eyes throughout. Lactic and vegetal when young, Arpea develops a nutty complexity as it ages. The remote location was selected for its proximity to a group of 20 small farmers who live and work in the mountains, as their families have for generations. Using small vats and production techniques largely powered by human hands, the small team of Agour cheesemakers work with some of the best raw materials and innovative tools to produce unique and excellent Basque cheeses.
