Using small vats and production techniques largely powered by human hands, the small team of Agour cheesemakers have some of the best raw materials and innovative tools at their disposal. Arpea is one of the first new cheeses to come out of the Irati Dairy. A small format cheese made with 100% sheep s milk and a washed rind, the wheels are aged at the dairy for 2 weeks before being packed to travel. The paste is smooth and creamy with small eyes throughout. Lactic and vegetal when young, Arpea develops a nutty complexity as it ages.
