1 Summer 2012 Dr. Toad s Wine Club Dandelion wine. The words were summer on the tongue. The wine was summer caught and stoppered. Ray Bradbury. Summer is certainly the time for sipping wine and taking in as much enjoyment and sunshine as you can. To help you out with that, we ve included a bottle of our 2010 Francine s Selection Unoaked Chardonnay in your summer wine club selection. An excellent accompaniment to lighter meals, salads and appetizers, sharing this wine at picnics or parties is a great way to celebrate summer. Our 2010 Chardonnay is clean, crisp and full flavored, with green apple and bright lemon zest finishing with a hint of grapefruit. Delightful, delicious and perfect for these warmer days. Now, if we could capture a bit of summer sun in a bottle, I would save it for the times when we need a few rays! Also included in this selection is the newly released 2010 vintage of our Goldie s Vineyard Pinot Noir. Our friend and co-founder Rod named this Russian River Valley vineyard in honor of his Mother Goldie and is quoted to have said Pinot Noir, the diva of the reds, loves to sleep late and awaken slowly as the sun gently warms her flesh. In the beautiful Russian River Valley, the cool evening fog rolls in like a soft blanket to embrace and protect her until late morning.. Goldie s Vineyard Pinot Noir is rightly deserving of this Diva treatment and the resulting reward is evidenced in the bottle. Aromas of dark berries and spice lead to silky black cherry and raspberry flavors that linger on the palate. This wine is just mouth watering! Rounding out this summer set is another new release, our 2010 vintage of Erik s the Red Proprietary Red Wine. This new vintage has a new assertive look in a broader shouldered Bordeaux style bottle containing a delicious blend of Syrah and Merlot. This wine is fruit-forward and balanced with a backbone of firm acidity and toasted oak. In keeping with the tradition of our Erik s the Red being a bold and full bodied wine, the latest release is hearty, delicious and rich with flavors of plum, black cherry and hints of vanilla and spice from the oak. Wow! What a wine! Toast with toadally delicious wines!
2 Toad on the Go New Art from Maureen Erickson! She has done it again! Toad Hollow artist extraordinaire Maureen Erickson has just finished a new group of paintings she s calling Toad on the Go. I thought it would be fun, she said, to paint the Toad using every means possible to get his wine to all the Toad fans out there. He ll be riding a bike through grape vines, piloting a biplane for Toad Air, and driving an auto in our own version of Dr. Toad s Wild Ride. Erik s the Red will also be represented with his Viking ship. In case you had not yet heard, Maureen Erickson is the fabulous artist who designs the colorful, fun and whimsical wine labels for Toad Hollow and is a dear member of our Toad family. For the last few years during the month of June, Maureen, or Mo as we affectionately call her, has created new original works of art to display in our tasting room. All paintings hanging in our tasting room are for sale and many of them have been reproduced as posters and/or limited prints. You can come see her works in person starting Saturday, June 2nd. 3 A Proud Announcement - New Release of Our 2007 Toad s Pride Pinot Noir! Toad s Pride was inspired by our company s founder and namesake, Todd Williams. Todd s love for Pinot Noir and his desire to produce approachable, and outstanding wine pushed him to find the perfect location and method to forge this wonderful wine. We carry on his dreams and the end result? An absolutely stellar combination of exceptional vineyards, amazing fruit, the finest French cooperage and world-class winemaking. The grapes are carefully grown and harvested from a single source, our beautiful Goldie s Vineyard located in the heart of Sonoma County s Russian River Valley, an appellation world renowned for producing Pinot Noir of the highest quality. Our grapes flourish here in this south facing sloped vineyard which is planted with six different clones on four different root stocks. The 2007 growing season got off to a slow start after a colder than normal winter. These weather conditions resulted in small berry size and low yielding cluster weights. Grapes were whole cluster picked, sorted, and destemmed. Juice was fermented then gently pressed and when all fermentation was complete the wine was racked and put on oak for nine months. This unique season created extraordinary, concentrated, rich and full flavored juice expressing itself with well developed varietal characteristics in the finished wine was an excellent year! 5 Dr. Toad s Recipe Selection - Tasha's bà nội (Grandmother's) Spring Rolls Ingredients: 1 lb pork tenderloin, trimmed 12 (10-inch) rice paper wrappers (banh trang) 1/2 lb fine rice vermicelli (bun) 1 & 1/2 cups thinly shredded romaine lettuce bundle of mint leaves 1 bundle of washed cilantro sprigs 3 apples cored sliced very thin 1 cucumber peeled and thinly sliced lengthwise (Granny Smith work well) 1 bundle of Thai basil leaves (optional) Peanut Sauce: Recipe Provided by 1/2 a bottle of hoisin sauce Tasha Hoang 1/2 a cup of peanut butter aka Bubbles from our 1/4 of a cup of water Healdsburg Tasting Room Optional toppings for garnishing: Sriracha sauce 1/4 cup unsalted roasted peanuts, finely chopped Directions on Reverse Side - Hoisin and Sriracha Sauce can be found in the Asian food section of most supermarkets. Dr. Toad s Recipe Selection - Tasha's bà nội (Grandmother's) Spring Rolls These fresh, crunchy and delicious spring rolls are a favorite in Tasha s family. Tasha s Grandmother makes them for her whenever she comes for a visit. Pair with Toad Hollow Francine s Selection Chardonnay. Directions: Trim the pork tenderloin. Place the whole peice of meat in a sauce pan and cover with water. Bring to a boil and then reduce heat to medium simmer. Poach the meat for about 20 to 30minutes. Drain and let cool. Slice the cooled meat thinly and set aside. Boil noddles on medium high for 8-10 minutes. Drain the noodles and set aside. Prepare vegetables as indicated in the ingredient list. Rolling it all together: Get a large bowl and put some warm water in it. You will use this for the rice paper wrappings. Dip the rice paper in to the water bowl then lay it flat on a plate, the rice paper wrapper will soften as it sits. While its on the plate you can start adding the raw ingredients on top of each wrapper. - Lettuce - Small hand full of noddles - mint leaves - Cilantro - basil - 3 apple slices - a few slices of cucumber - 3 slices of pork Try to lay the ingredients off center on the wrapper. Start with one side and roll like you would roll a burrito. A helpful tip is not to over stuff your spring roll or it will break. It may take a few attempts to get the perfect roll. Also don't over wet the wrapping - just dip the whole rice paper once. If it is still stiff don't worry. Once it is on the plate it will soon soften. To make the peanut sauce - Simmer together the hoisin sauce, peanut butter and water. Garnish the spring rolls with any or all of the optional toppings an enjoy! Makes rolls, depending on how much filling you use. Ingredients on Reverse Side
6 2010 Erik s the Red Propriet ary Red Wine Toad Hollow Erik s the Red is named for the famous Norseman-sailor-conqueror, Erik the Red, as well as our very own Erik Thorson! This mighty wine shows deep shades of purple and aromas of rose petal intertwined with dark fruit. Our 2010 Erik s is a blend of Syrah and Merlot. The Syrah is grown on the California Central Coast where warm days are tempered by the cool marine influence resulting in ripe, concentrated fruit with a solid acid backbone. Our Merlot is perfectly situated here in Sonoma s Russian River Valley with sandy soils and warm, long days that add complexity and structure. This low yield vineyard creates concentrated, rich berry flavors making this wine both approachable and elegant. We planted six different clones grafted on to three different root stocks, which combined with river bottom gravel soil to reveal the mystery behind this delicious wine. Grapes were whole cluster picked, sorted, destemmed and gently crushed. After fermentaion, the pressed wine was racked twice. Barrel aging in toasted American and French oak for 15 months added rich fruit flavors and a silky mouth-feel. The 2010 growing season was long and Mendocino County cool, allowing for great acid in the fruit and the extra Varietal: 100% Chardonnay time on the vines made for flavor development without Alcohol: 13.9% high sugar levels.
