3 Our family has been involved in wine making for four generations. For this reason wine making is the essence of our lives. Our experience has given us confidence and we are determined to continue now and in the future with the same passion and attention to detail, as we have in our past. 4 Our story began here. It is simply the story of our labour. Everything we produce is handmade. Our products reflect the beautiful and protected enviroment from which they originate and our love and care of it, which is an integral part of our culture. One should bear in mind that the whole world is truly enamoured with the beauty of this region.

5 The landscape is as stunning as it is harsh, but we must say that the sea breezes, that rise continuously, are comforting when the job gets tough. We are referring to the Cinqueterre, where we carry out heroic agriculture, due to the difficult terrain. The products that come from this region are unique because of the soil and its proximity to the sea and the sunshine.

6 The enviroment that produces our wines gives us a safe passport into any wine shop in the world, because of its valuable DNA. Our wines are boutique wines and they are unlike any other wine in the world. They marry particularly well with fish and seafood. You will enjoy these wines so much, that you might be tempted to keep the empty bottle as a souvenier!

7 Pietraserena was born in the mid 60 s from an old sharecropping estate. Today Pietraserena comprises 40 hectares of land grouped around the towers of San Gimignano, practically a stone throw away. This winery is our pride and joy. The dreams of four generations of people have materialised in the creation of what Pietraserena represents today. Its location is wonderful because of soil composition and perfect sun exposure. It was well chosen by the founder Bruno Arrigoni, our father and grandfather. Today Pietraserena is not just a winery, but a point of reference in the region because of its beautiful landscape and especially because of the high quality of its products.

8 OUR COUNTRY PHILOSOPHY : We hold the strong belief that sustainable agriculture is the basis of healthy soils and wholesome products. We do not use pesticides which are harmful to man and to his enviroment. Our intervention is seasonally programmed with much care and is completely natural.

9 OUR CELLAR PHILOSOPHY : When the grapes are ripe they are hand picked, after careful scrutiny. Every vineyard is done in turn. Each year the rate of maturation may vary, therefore the grapes can all be picked together or, alternatively, we take the task to completion with two or even three pickings, depending on maturation cycles. Often there is a difference of days between the first picking, useful for acidity levels and wine freshness, and the last picking, which adds to the new wine s sweetness and body. After all the necessary decanting, the musts from the same vineyard are combined. This combination of musts,with all their subtle flavours, will give that specific product its true distinct identity. For this reason, our Cinqueterre Tramonti contains only grapes found in the Tramonti vineyard. Similarly our Vigna del Prefetto is produced only with the grapes from our vineyard in Masignano and our Cascina dei Peri only from our vineyard in Castlelnuovo Magra. In terms of time and expenditure our wine production is costly to us. However, when our family began to produce wine, 100 years ago, the objective was always to achieve absolute quality with our products. We are proud to say that, to date, our philosophy has remained unchanged.

12 San Gimignano In San Gimignano our winery Pietraserena is situated in a northern-easterly position, on a hill facing the historic towers. In 1966 the land comprised a mere 7 hectares. Later we purchased additional neighbouring fields and today the property extends over 40 hectares, 30 of which are vineyards. The remaining part of the land comprises both olive orchards and a coppice. As we are in the heart of San Gimignano, our very first vineyard had to be the San Gimignano Vernaccia, the very first Italian wine to receive the prestigious D.O.C. recognition, the registered regional trade mark. Later we planted San Giovese, the most prevalent vine in Italy. Other varieties have been cloned from the traditional ancient San Giovese. The San Giovese Grosso is one of these and it has produced many prestigious wines. We cultivate San Giovese Grosso and produce two wines of very high quality: Caulio and Poggio al Vento. In Pietraserena we have given a name to each vineyard, like Del Sole (Of the Sun) and Piano di Fata ( The Fairy s Flat), just to name a couple. At harvest time the grapes are picked from each vineyard and pressed separately. Blending takes place only when the wine is ready. 13 Masignano di Arcola Our wine La Vigna del Prefetto comes from our vineyard in the town of Arcola. The vineyard, named Rosadimaggio, enjoys a good northwesterly position. The vines are Vermentino, the ancient variety, cloned from old plants and a newer variety, the Corso. They are then mixed with some loca Rossese, from Arcola, which gives the wine the required acidity levels and creates a product which has body and strength. The vineyard is shaped like an amphitheatre and has excellent sun exposure all day, from sunrise to sunset This is perfect for the vines as the nights are usually cool and breezy. The olive orchard that sorrounds it is a protective barrier aginst the wind. This vineyard has truly spoilt us, year after year, with a fabulous crop of grapes in September. Every bottle of Vermentino tells of our life story, of our labour of our assiduous intent and centenary tradition. 14 Castelnuovo Magra - La Cascina dei Peri The village of Castelnuovo Magra has an ancient tower under which a vineyard was planted approximately thirty years ago. The work was carried out by a couple from Milan, who moved to the area, leaving behind their industrial enterprise. Their names: Marcoli and Peri. Initially we helped them with the management of the vineyard till it was totally left in our hands, which we have been doing now for 10 years. This is an important experimental vineyard which is under the auspices of the University of Turin. It is devided into four parts, with four types of vines being cultivated and studied. The various sections comprise mainly Vermentino with the addition of Albarola or Vermentino clones and Pigato.The grapes are vinified separately, in order to distinguish the differences, compare and evaluate. Years of wine production are continuously compared and so are the resulting products. 15 Sarzana In the villlage of Nave we can find small vineyards of historical importance. The vineyards have been doing well for at least 50 years, despite the constant expansion of road and housing construction. The interesting thing is that although the vines are virtually unknown elsewhere, they are ancient in origin. The wines produced here are certainly not famous, but they are truly appreciated by local consumers. These wines have suceeded in continuing to uphold our history and tradition. 16 Cinque Terre Being able to cultivate the Cinqueterre region has been a triumph. The beauty of the landscape makes the region truly unique. The hills, which were terraced centuries ago, miraculously still hold today. The soil is fine, it was rock once and then it was eroded by the elements and transformed into fertile land. Ancient heroic people were capable of achieving all this and they created a landscape which is still agricultarally viable today. Groups of incredulous tourists still flock to the narrow paths that descend amongst the terraced vineyards. This region is truly worth visiting because a mere description doesn t do it adequate justice. Wine production in this area is hard work. One does it more for the love of it, than for the material gain. All the people involved in this labour are the ones who make it possible and, whether local or foreign, we owe them our gratitude. 17 Ricco del Golfo - Tenuta Cellino This vineyard, the furtherst west of all vineyards, belongs to the engineer Pierdomenico Ferrari, who was born in Pierdomenico still manages the vineyard which is at 250 m. above sea level. The wooded area sorrounding the vineyard is cold and rainy in Winter and therefore has its own microclimate which produces fresh, fruity wines. The fruitiness of the wine is important in blending because it enhances all the qualities of the product and helps it to achieve its best. The vineyard is beautifully and immaculately maintained by Pierdomenico. The land comprises 20 hectares and has a lovely villa on it. It is a late 1800 s building with authentic frescoes on the ceilings and antique furniture of the era. The atmosphere is one of warm, elegant hospitality. You will be able to enjoy much space and an enchanting silence here. Functions can be held at the villa with organisational help available. Not many places can offer all of this: a perfect marriage between country, woods, vineyard and the 1800 s villa. A place of great appeal indeed! 19 TENUTA "Caulio" - Chianti Colli Senesi D.o.c.g Riserva The word CAULIO derives from the ancient Latin language, meaning the branch of the vine. The grapes Sangiovese (90%), black Malvasia (5%) and Syrah (5%) are the grapes we use to obtain it. Maturation occurs in old casks of French oak, for the purpose of keeping the tannin at the right levels. The wine is then kept in bottles for 6 months before entering the market. The central region of Tuscany was cultivated with vineyards by the Etruscans in ancient times. They gave the area the name Clante and from this Etruscan word we have come to the modern word Chianti which is the name of one of the most important wine regions in Italy. The hills surrounding the city of Siena represent one of the best areas for the pristine environment and for the high average quality of the products. One of these hills is known as San Gimignano. 22 TENUTA "Fiasco di Paglia Pietraserena" - Chianti Colli Senesi D.o.c.g It is simply the story of Italian wine, which originally meant Tuscan wine, Chianti in particular. It was the flask ( the fiasco) that represented Italian wine overseas.up to a few years ago, when wine was still an integral part of our diet, good wine in that traditional straw-covered flask always brought joy to our table. After a period of absence, the flak is making a come back to represent again our history, culture and tradition of good Italian craftsmanship. Keeping our traditions alive is to everybody's benefit. 24 TENUTA "VIGNA DEL SOLE" - Vernaccia di San Gimignano D.o.c.g The first Italian wine to be classified as DOC, and since then DOCG thanks to its continually increasing quality. It has always been a favourite amongst classy gourmets, princes and popes. In The Divine Comedy, Dante immortalizes it as deserving a place in Purgatory, where punishment for gluttons constitutes the absence of eel and Vernaccia! Interestingly enough some experts believe that the Tuscan Vernaccia originated in Liguria, in the Cinque Terre area at Vernazza. Indeed at close scrunity the Vernaccia grape is not that different to the Bosco grape in shape and in yelding capacity, although a little less in shape of cluster and colour. For this wine we carefully select the best grapes from our small selection of land, Vigna del Sole (our vineyard of the sun) The result is a more structured Vernaccia, with intense aromas, a hint of almond flavour and an excellently well balanced body. 26 TENUTA "SER GERVASIO MERLOT" - Toscana I.g.t. Merlot This wine is dedicated to the founder of the business: Grandfather Gervasio Pagni who started it in It is obtained with Merlot grapes (100%). Grandfather Gervasio was a frank and jovial person who truly loved music, art and especially good wine. We have lovingly honoured and cherished the memory of the head of our family with this wine, by choosing a sun-drenched portion of our land in our Pietraserena to produce the grapes. Its colour is an intense red with purple hues. It is distinctly aromatic. CLASSIFICATION: Toscana IGT Merlot GRAPES: Merlot COLOUR & BOUQUET: Purple-red, intense scent, fragrant, fruity, structurally well balanced, rich in faboulos tannins. 27 TENUTA "Rosato Pietraserena" - Toscana I.g.t. Rosato Years ago Canaiolo grapes were used to make Chianti. The Chianti thus obtained was aromatic, light and very agreeable when young. Later we decided to giveit more body so we stopped adding Canaiolo and white grapes. However, since Canaiolo grapes had been cultivated in the area for a long time, it seemed historically appropriate to gain a rose from those grapes. We started to produce this Rose' which is 70% Canaiolo and 30% an early draining off of Sangiovese. It has been successful above our expectations. CLASSIFICATION: Toscana IGT Rosato GRAPES: Canaiolo 70%, Sangiovese 30% COLOUR & BOUQUET: Rose' coloured. Has good body and is full of youthful charm. 28 TENUTA "Vermentino Nero" - Toscana I.g.t. Vermentino Nero If you wonder through our vineyards, you will often find red grapes that are unusual compared to all others. This particular one is a curious variety: velvety black in colour, a medium size grape in a sparse bunch. It is known as black Vermentino. We have isolated it and cultivated it sufficiently to make a single variety wine. CLASSIFICATION: Toscana IGT Vermentino Nero GRAPES: Vermentino Nero COLOUR & BOUQUET: Intense ruby-red with garnet hues. Vinouos aroma. Dry flavour, harmoniously blended. 30 TENUTA "Igt Bianco Pietraserena" - Toscana I.g.t. Bianco In the Etrurian times, Tuscany was the cradle of the grapevine and of wine in Italy, because its land and micro-climate have always been especially suitable for that kind of cultivation. Being a Tuscan IGT, means to represent this land in its essence. The main vines which compose this wine are Trebbiano, Malvasia and Vernaccia. It is a wine with a moderate alcoholic strength, good balance, harmonious and with a pleasant colour. A typical wine, suitable for every-day meal. CLASSIFICATION: Toscana IGT Bianco GRAPES: Trebbiano, Malvasia, Vernaccia. COLOUR & BOUQUET: Light-straw-yellow, with greenish reflexes, delicate fragrance, very typical. 31 TENUTA "Igt Rosso Pietraserena" - Toscana I.g.t. Rosso In the Etrurian times, Tuscany was the cradle of the grapevine and of wine in Italy, because its land and micro-climate have always been especially suitable for that kind of cultivation. 32 TENUTA "Germont" - Vino Spumante Brut This sparkling wine is made from Vernaccia. The very best grapes are picked early which gives us a slightly less alcoholic wine. The wine has a beautiful scent. We use a soft pressing method and ferment it slowly at controlled temperatures. Only later we add the sparkling touches to it. After a long fermentation in autoclave (Charmat method) we bottle the wine and keep it thus before putting it on the market.this wine is excellent as a pre-dinner drink or with antipasto. 34 TENUTA "Vin Santo Pietraserena" - Vin Santo del Chianti D.o.c. Before the harvest, the very best of our Trebbiano and Malvasia grapes are selected in the vineyard and chosen for withering. The grapes must be virtually perfect in every respect to withstand this process, which takes place under the roof from September to December. The pressing then takes place approximately one week before Christmas. When the grapes have sufficiently withered, their sugar concentration is incredibly high and the must obtained is excellent: dense, syrupy and almost honey like. Fermentation takes place in very small oak and chestnut casks, which are kept under the roof. The casks have been sealed with wax or cement. Maturation takes place over a period of 3-4 years. From the freezing winter nights to the heat of summer and forever present breezes, the seasons rotate to create this nectar which well deserves to be called "Santo", that is Holy. 38 TENUTA "Sciacchetrà Riserva" - CinqueTerre D.o.c The Cinque Terre Sciacchetrà is amongst the rarest Italian wine and it is one of the best known. The ancient Romans produced it, Boccaccio speaks of it in his writings and Pope Paul III defined it as a smoky wine of great aroma, with the colour of gold, agreeable but not sweet, not to be consumed during the course of a full meal; a nutritious wine especially for the elderly. It is obtained by allowing the best grapes of the Cinque Terre area to wither over a long period of time. After fermentation it is matured and refined in high quality small wooden casks for at least one year. We mature and refine our Sciacchetrà for at least two or three years, depending on the singular characteristics of each harvest. In the local dialeet, the word schiacchetrà means press it and forget about it for a long while. This is the wine for grand occasions, very important festivities and anniversaries. 40 TENUTA "Tramonti" - CinqueTerre D.o.c The very first DOC wine of La Spezia and a witness to the history of viticolture in the region, from its very beginning. The landscape of this area is breathtakingly beautiful. The terrain is terraced and gradually sloping to the sea. In the vineyard the work is hard and strenuous and must be done exclusively by hand. Climatic conditions can be a problem, particularly sea breezes and gusts of wind. The vine is not allowed to grow much in height and more often than not maintenance is done while kneeling. This wine is obteined from a selection of grapes from the vineyards in front of the sea. 42 TENUTA "Vigna del Prefetto" - Vermentino Colli di Luni D.o.c Superiore Wine obtained with 100% Vermentino grapes from Masignano (Arcola), one of the most famous areas for viticolture in our region, after pressing its golden and perfectly wealthy grapes. Fermentation takes place over a period of approximately six months, after which the cuvèe so obtained is ready for bottling and put on the market, in late Summer. As far as we are concerned, this wine represents the best marriage between tradition and innovation, with absolutely nothing spared to quality. Light straw-yellow. 43 TENUTA "La Cascina dei Peri" - Vermentino Colli di Luni D.o.c Superiore On the soft green hills surrounding Castelnuovo Magra there is a beautiful property of the Peri Family called La Cascina dei Peri - vineyards and olive trees. Riccardo Arrigoni grows the Vermentino grapes there and turns into wine in his modern cellar in the city of La Spezia with an ancient passion of the family since 100 years, and continues to be respectful of wholesome wine-making. The fermentation is carried out slowly, at low temperature, in stainless steel vats. The wine is bottled in Spring and fits perfectly well the Mediterranean cuisine. 44 TENUTA "Sur Lie" - Aromatic Wine In San Gimignano, towards the end of the 80's and after an unusual harvest, we produced a wine that had a small amount of residual sugar. We kept it in cement tanks, without refrigeration and merely decanted it. We then bottled it just as it was, without filtration. This wine impressed our customers so favourably that they they still remember it. In 2011 we used the same process with another product, in La Spezia: a beautiful Vermentino with a notable amount of residual sugar. After decanting it a few times, we bottled it without filtration, as was done in the past. In so doing we have produced a magnificent product, no point in false modesty! 45 TENUTA "Sur Lie" - LATE HARVEST Late Harvest blend of two grape varieties: Vermentino and Aromatic Grapes. Pressed in advanced autumn, when the cold weather starts. It has a very slow fermentation that does not go to completion, leaving a higher sugar content in the wine. Straw yellow in colour, nicely bodied wine, delicate, with a scent of sweet ripe grapes. Good with home-made style biscuits, with cheese and a great end of meal companion. 48 TENUTA "Pigato" - Riviera Ligure di Ponente D.o.c Pigato is the whitest representative of the Ligurian Riviera di Ponente. It belongs to the large family of Vermentino from which differs optically for the many " dots " that appear on the skin of his golden grapes, and organoleptically for acidity a little more sustained and perfumes marked. The vinification follows the rules of modern oenology, with a short maceration and fermentation at low temperature to exalt the characteristics of the grape. Provincia di Pavia Name Moscato includes over 200 grape varieties belonging to the Vitis vinifera species that have been used in wine production and as raisin and table grapes around the globe for many centuries. Their colors ranges from white (such as Muscat Ottonel), to yellow (Moscato Giallo), to pink (Moscato rosa del Trentino) to near black (Muscat Hamburg). Muscat grapes and wines almost always have a pronounced sweet floral aroma. The breadth and number of varieties of Muscat suggest that it is perhaps the oldest domesticated grape variety. "AIDA" - Sauvignon Vino Bianco d Italia Is a green-skinned grape variety that originates from the Bordeaux region of France. The grape most likely gets its name from the French words sauvage ("wild") and blanc ("white") due to its early origins as an indigenous grape in South West France.It is possibly a descendant of Savagnin. 58 FLAUTO MAGICO - Vino rosato d Italia Years ago Canaiolo grapes was used to make Chianti. The Chianti thus obtained was aromatic, light and very agreeable when young. Later we decided to giveit more body so we stopped adding Canaiolo and white grapes. However, since Canaiolo grapes had been cultivated in the area for a long time, it seemed historically appropriate to gain a rose from those grapes. We started to produce this Rose' which is 70% Canaiolo and 30% an early draining off of Sangiovese. It has been successful above our expectations. "Simon B" - Nero d Avola I.g.t. Terre di Sicilia Is "the most important red wine grape in Sicily" and is one of Italy's most important indigenous varieties. It is named after Avola in the far south of Sicily and its wines are compared to New World Shirazes, with sweet tannins and plum or peppery flavours. It also contributes to Marsala blends. 59 "L INNOCENTE" - Pinot Nero I.g.t. Provincia di Pavia This wine is the wine that nobility found in Oltrepo excellent features that can enhance it. It has a delicate ruby red color, good intensity, with cadences of cherry and black currant fruit, great balance, good structure and excellent persistenza. Goes well with meat in general, it is remarkable with game. "RIGOLETTO" - Montepulciano d Abruzzo D.o.c. It 's a special grape that is typical of south-central of Italy, the Adriatic shore, where he found an ideal habitat. 60 "Nabucco" - Chianti D.o.c.g Sangiovese is the main grape component of Chianti, one of Italy's best known wines. Our Sangiovese grapes originate in the hills between the Provinces of Siena and Florence within the renowned Chianti area of Tuscany. This area is known for a warm, sunny growing season with substantial temperature differential between day and night. Such conditions produce flavorful, rich grapes. The vines that produce our Sangiovese grapes are grown in the "traditional Tuscany upturned" system, a variation on the "Guyot" system. The wines are positioned to point south, which contributes to the complete maturation of the fruit. The cultivation of Sangiovese in Tuscany can be traced back through the centuries to ancient Greece and Rome. In fact, the word Sangiovese is derived from the Latin "Sanguis Jovis," or the blood of Jupiter. DON GIOVANNI - Syrah I.g.t. Toscana Syrah also known as Shiraz is a dark-skinned grape variety grown throughout the world and used primarily to produce red wine. DNA profiling in 1999 found Syrah to be the offspring of two obscure grapes from southeastern France: Dureza and Mondeuse blanche. Syrah should not be confused with Petite Sirah, a synonym for Durif, a cross of Syrah with Peloursin dating from The style and flavor profile of wines made from Syrah is influenced by the climate where the grapes are grown with moderate climates (such as the northern Rhone Valley and parts of the Walla Walla AVA in Washington State) tending to produce medium to full-bodied wines with medium-plus to high levels of tannins and flavors of blackberry, mint and black pepper notes. It was once mainly used for blending by more commercially successful wineries in Northern Italy. They relied on it to give their wines depth. Because of a general lack of commercialization in Apulia, Primitivo is still largely unknown outside of Italy. Small-scale producers have a hard time reaching the international market to compete on the same level as more famous Italian wine varieties. "LA BISBETICA" - Barbera I.g.t. Toscana In the Etrurian times, Tuscany was the cradle of the grapevine and of wine in Italy, because its land and micro-climate have always been especially suitable for that kind of cultivation. Being a Tuscan IGT, means to represent this land in its essence. The main vine which compose this wine is Sangiovese. It is a wine with a moderate alcoholic strength, good balance, harmonious and with a pleasant colour, suitable for every-day meal. "Otello" - Prosecco D.o.c. Treviso Prosecco DOC can be Spumante sparkling wine, Frizzante (semi-sparkling) and Tranquillo (still) depending on the perlage. It is made from Glera grapes, formerly known also as Prosecco, but other grape varieties may be included. Fermentation takes place at a temperature between 25 and 28 C. Maceration (skin contact) of about 25 days. The malolactic fermentation is completed in inox tanks, then the wine stays for 18 months in French oak barrels, half new and half one or two-year old. The bottle ageing is of about six months. This wine is released after about 30 months of ageing; anyway, more years of cellaring will contribute to develop bothstructure and complexity. Wine made from Prosecco grapes with Charmat method, pale straw yellow color, lively and brilliant. The scent is subtle and distinctive, with hints of green apple and acacia flowers withered. The taste is dry with a slight bitter hint. Perlage is fine and persistent. It s excellent as an aperitif and ideal for any occasion. 66 TENUTA "Il Ciuco" - Olio Extravergine di Oliva Pino, a dear friend of ours from Pisa, once made an amusing remark about the terrain which produces this olive oil. The land is terraced, steep and difficult to work in, often hard to reach. It normally takes us a minimum of 12 minutes of climbing up terraces, stairs and small retaining walls, with our baskets full of olives, before we can reach the truck. One day Pino was helping us during the harvest and after a couple of trips up and down, he exclaimed: A donkey would be handy for this job! The sun and the sea-breezes of the Cinque Terre create an ideal environment for these fruit trees. When picked, the lemons put out anincredibly intense scent. The lemon and orange rind is completely cleaned of the fruit pulp and is liquefied over a period of twenty to thirty days. The final result is a fine nectar, which should be served chilled in summer and at room temperature in winter. It has digestive qualities, is sweet and truly exquisite.
