6 SPARKLING CAVA D.O. (CATALONIA) Sparkling wine made by the traditional champenoise method, mainly in the region of Penedès, especially in Sant Sadurní d Anoia. It is also made with DO in other points of Catalonia & Spain. The first producers go back to 1868, being confused with champagne until 1972, when it happens to be denominated officially cava. The traditional varieties for its elaboration are macabeo (sweetness & perfume), parellada (fineness, fresh & bouquet) & xarel lo (body & structure). Its classification is given by the amount of sugar in the expedition liquor: brut nature (0 to 3g), extra brut (up to 6g) -these first two without expedition liqueur-, brut (up to g), extra dry (between & 17g), dry (between 17 & 32g), semi-dry & 50g) & sweet (more than 50g). Another differentiation is marked by the time of aging: crianza (cask from 9 to months), reserva (cask from 15 to 30 months) & great reserva (cask more than 30 months). In the case of the pink cava (which usually has more body) varnished varieties of garnacha, monastrell, drilled or pinot noir are used. The cavas & champagnes pairing with bitter, sweet, salty & acid, reason why they are ideal for all the food, from the appetizer until the dessert. Its ideal service temperature should range between 5 & 7 degrees. 8 CHAMPAGNE A.O.C. (FRANCE) Champagne is a type of sparkling wine elaborated according to the method champenoise in the region of Champagne, France. It is usually a white wine, although there is also the pink champagne, which is made from several types of grapes, most black. The Romans called it vinum titillum. But it was popularized from the 15th century in Paris & from the 17th century in the english & french courts. Its first bottleneck dates back to Monk Dom Pérignon was the first to select the grapes, using a single cork & thicker glass bottles. Its international renown comes in the 18th century from the h& of Franz Möet & Florenz-Louis Heidsieck. The first brand was created in 1729 and it is the house of Ruinart. The champagne is elaborated mainly of three types of grape: chardonnay, pinot noir & pinor meunier. Most of the champagnes are made with a blend of chardonnay & pinot noir. White champagnes carry 100% chardonnay. The white champagne of noir (white of black) is made to 100% with pinot noir or black grapes. They are fermented in a temperature range of 5 to 38. They are usually of lower alcoholic strength. Having a less intense flavor than blacks, it is advisable to use them for dishes with more soupy flavors like salads, creams, fish & seafood. white wines are made without going through the stage of maceration & are accustomed to drink colder, between 7 & 10º. 12 ROSÉ WINES They are obtained from black grapes to which the skins have been partially separated. They can also come from the mixture of white & black grapes. The temperature recommended for your service ranges from 8 to º. It is lighter than a black & corpóreo & with more tannins than a white. The rosé wines are full of subtleties in color, bouquet & flavor. Color can range from pink, bright cherry, salmon & full pink. 13 RED WINES They are obtained from grapes of red color, by means of the pressing, which allows the extraction of the skins. They are fermented at temperatures in the range of 25 to 30 degrees. Therefore, they have a higher alcohol content & are shown with higher density (high glycerol content). They have more phenolic components such as tannins (natural precipitation). Red wines are advised with red, fowl or game meats, but can also be combined with strong fish or with determined sauces. It all depends on the taste of the customer. The wine can be young or have aging, which gives a balance of flavors with the oak barrels where it ages. In addition, wine evolves in bottle & varies in flavor as time passes. The red wines can be young (without aging), medium crianza (aging 4 months in barrel & in bottle), crianza (aging from 6 to months in barrel & from to 16 in bottle), reserva (in which at least have been in barrel) & great reserva (aging from 36 to 60 months, of which at least 18 have been in barrels). The optimal service temperatures are, for young wines, to 14 degrees; Average breeding & aging, 14 to 16 degrees; reserva, from 16 to 18 degrees, & great reserva, from 18 to 20 degrees.
