T he Vinoteque stemglasses are scientifi c tasting instruments. These perfect instruments are the result of research carried out on senses and perception. To design and create them, we did not make use only of the existing knowledge on wine tasting: all the stemglasses underwent strict sensory analysis tests carried out at the Centro Studi Assaggiatori, in order to compare their performances with the technical stemware that is used internationally for wine tasting (i.e. the ISO stemglass). According to the statistics provided by this huge database it is evident that in Vinoteque stemglasses, each wine expresses itself in a signifi cantly different way compared to common glasses. Differences are perceived distinctively during all the phases of the tasting process: visual, olfactory, gustatory-tactile and retro-olfactory phases. ACCADEMIA 5

During the visual examination, the infl uence of the material on the wine colour is almost inexistent: the shade is true to life and with no purple shadows. The colour is extremely important; the most recent sensory studies prove that consumers assess a product using mainly their sight and the colour is able to infl uence their olfactory and gustatory perception. Furthermore, this phase anticipates a wealth of information on the health of the wine, its degree of evolution, its structure and typology. The following olfactory examination is crucial as the true character of a wine; its richness and its elegance are specifi cally expressed in this phase. As soon as the stemglass is brought to the nose the fi rst pronounced impression of the wine is formed - the olfactory sensations have an immediate impact on the Taster s emotions, even at a subliminal level. It is at this time that the brain decides whether to drink or reject the wine, the quantity of wine to drink or whether to choose it again in the future. At this stage, the role of the stemglass is not only to enhance the smell appropriately; thanks to its shape and its dimensions, each Vinoteque stemglass is conceived to enhance some aromas and to keep others subdued, according to the type of wine. The aim is to maximise the pleasure and facilitate the analysis, by immediately identifying possible defects. Finally, when a sip of wine is taken, taste, tact and smell come into play. The gustatory sensations of wine (acid, bitter, sweet) are combined with tactile sensations (body, alcoholic heat, astringency) and the aromas, reaching the nasal sensors through the air that passes through the back of the mouth. The pleasantness of a wine strictly depends on the balance of all these sensations - the stemglass plays a crucial role in measuring out the fl ow into the mouth in a specifi c way for each wine and distillate, enhancing structure and smoothness where necessary, and by limiting the perception of acid or alcoholic heat where prominent. 6

In order to taste these sensations the choice of the stemglass according to the specifi c wine is of utmost importance stemglass. Often, even wines of the same varietal present different sensory characteristics which can be enhanced only with a specifi c stemglass. This is why winemakers or restaurant owners have to demonstrate their competence not only by taking care of the products offered, but also by providing the customers with the right quality-assessing instrument for their product so that it can be enjoy it at its best. Like a work of art. Each Vinoteque stemglass was studied for a category of wine with specifi c sensory characteristics. These results have been achieved thanks to in-depth studies on all the characteristics of the stemglasses (materials, size, and geometrical features)in accordance with the sensory outcome: the perception of aromas and the fl avours of wines, the physical conditions that favour this perception, without ignoring the sensory and emotional impact that the stemglass shape has on Tasters. The two methods employed for the sensory tests on the Vinoteque stemglasses and which are certifi ed by several Italian universities are : 1. The Advanced Big Sensory Test, a detailed sensory analysis test based on the Aroma Chart ( Albero degli Aromi ) of the corresponding category of wine or distillate, which measures up to fi fty different visual, gustatory-tactile, and olfactory parameters. 2. The Analogical-Affective Big Sensory Test assesses the esthetic, emotional, and functional impact as well as the physical interaction between the Tasters and the tasting instrument by measuring fi fty parameters. Each test is carried out blindly, by a group of tasters who analysed all the samples individually describing their perceptions in writing. The gathered data is processed statistically in order to obtain synthesis parameters and check parameters, thus guaranteeing reliability, credibility and comprehensiveness of the obtained results(as reported in each of the Vinoteque stemglass specifi cations). ACCADEMIA 7

PERFORMANCES OF VINOTEQUE STEMGLASSES All the specifi cations of the Vinoteque stemglasses refl ect the sensory characteristics of the wines that they will contain, enhance and emphasise. The stemglasses are made with long, thin stems in order to avoid contact between the hand and the bowl. This allows for a more accurate assessment of colour and clarity of the liquid, avoiding the shadow effect caused by fi ngers. It also prevents the potential alteration of the service temperature and avoids any olfactory interferences of the hand, which might convey smells that are not compatible with the wine aroma. Finally, with a long stem, it is easier to swirl the wine and increase its olfactory intensity, facilitating in particular, the evaporation of heavier molecules which form part of the wine bouquet. The Vinoteque stemglasses were designed with specifi c attention given to the relationship between the length of the stem and the height of the bowl to achieve a correct stability and to facilitate the swirling of the wine which encourages the evolution and release of the aromas. The ratio between the fi lling diameter and the mouth diameter, together with the head space volume and the service temperature, determines the right combination of the aromatic molecules. Furthermore, this allows for a rapid regeneration of molecules mix in the head space after each sip of wine. Finally the inclination of the bowl walls was designed to achieve a correct focus point (F) to convey the right concentration of odorous molecules to the nose. F in fact represents the point where, according to the convective phenomena induced by the inclination of the walls, the maximum concentration of the odorous molecules takes place (Figure 1) 8

Focus point F (maximal aromatic concentration) Mouth Aromatic fl ow Head Space Body Filling line Wine Stem Foot FIGURE 1 ACCADEMIA 9

The holding of the stemglass during the wine tasting is facilitated by its physical balance. The size of the head space was designed to deliver the best combination of the aromatic molecules that the wine can express at service temperature. The different shapes of the body: facilitate the swirling of the wine in the stemglass; improve the balance of the different aromas in the head space; convey the aromatic molecules to the nose (with the right concentration and balance); guide the wine towards specifi c areas of the tongue ensuring the appropriate amount of \wine at every sip; guarantee the perfect contact between the lower lip and the rim of the bowl, avoiding annoying drops on the mouth edge. Vinoteque stemglasses were designed to develop aromas that represent the wine personality with intensity and persistence thus suggesting high quality and pleasantness. Obviously, in order to achieve this, all the temperatures recommended for each wine as well as the right service quantity should be respected (white wines: 7-10 cl; red wines cl). The sizes and shapes of each bowl were designed according to the typical aromas of different wines, considering that the lighter molecules tend to have a higher concentration in the upper part, medium weight molecules in the mid-part and the heavier ones in the head space closer to the liquid surface. The aromas distribution in the head space depends on the shape and the size of the volume contained between the liquid surface, the stemglass walls and mouth. This is why the same wine presents a different olfactory profi le when poured into different stemglasses. The correct volume and shape of the head space of the Vinoteque stemglasses tunes the distribution of the different aromatic molecules allowing the Taster to fully explore and enjoy the different aromatic notes during any olfactory assessment. 14 HIGH-TECH MATERIAL (Lead-free High-Tech Bown Crystal Glass) with the following specifi cations: Colourless, totally transparent. Wine colour effi ciency 100 % High refl ection of light Lead-free High-Tech Blown Crystal Glass Transparent and sparkling, no alteration year after year Ideal for a correct visual examination of wine and for the most refi ned wines the distinct perception of the sound effect generated when pouring them A wine with high levels of sugar and alcohol will be thicker, it will fl ow more slowly and it will produce a dull and softer sound. A dry and light wine will be less dense and it will pour into the stemglass with a steady fl ow, quickly and with a resonant sound. The designed shapes together with of the Gods: wine! glass are likely to enhance the sounds of the nectar During the visual examination, besides appreciating the real wine colour and all its nuances (level of maturity of red wine indicator); it is also possible to perceive the wine legs and tears very easily. They indicate the alcohol content and develop on the stemglass wall due to a physical phenomena called the Marangoni effect. The development of legs and tears is strictly linked to the surface conditions of the bowl of the stemglass, namely to its wettability. Lastly, one is able to appreciate the perlage (chain of fi ne bubbles): when this is fi ne and persistent it denotes a high quality level in sparkling wines. 12

Tears (droplets) of the wine, found on the walls, are due to a surfactant phenomena: the higher the alcohol concentration, the more numerous the tears. ACCADEMIA 13

TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Riserva stemglass according to a panel of tasters: emotional profile The shape of this stemglass is immediately distinct due to its size and it marks it out as a special technical tasting instrument. It is more elegant, ample and comfortable when compared to the ISO stemglass, although it maintains its prominence and sobriety. One of its strengths is the thinnes of the stem that confers uniqueness and good taste. It is most suitable for aged red wines and prominent wines and is highly regarded for special occasions in both wine bars and restaurants. The Riserva stemglass according to the sensory analysis The Riserva stemglass offers the taster a different experience in comparison with the ISO stemglass, including its visual appearance: the greater transparency of this special stemglass reveals a livelier colour of orange shades in the wine. In the olfactory phase, the differences identifi ed derive from on the specifi c aspects of the different wines. In the Valcalepio Riserva the typical notes of the red and black fruit are identifi able and Morello cherry especially is even more evident ranging from jam to the sour black cherry in alcohol. Even the spiced aromas are emphasised. For the Chilean Cabernet Sauvignon the Riserva stemglass tends to amplify the fl oral notes, without increasing the perception of the typical vegetal scents of this wine. For the Bordeaux, the Riserva stemglass clearly underlines the various fl ower and honey aromas, which are easily identifi able against a fruit background. 29 TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Robusto stemglass according to a panel of tasters: emotional profile A very particular stemglass, according to the testers who used it. As with the other stemglasses in the line, it is surprisingly light in appearance, despite its considerable size. Its particular reinterpretation of the classic shapes makes it extremely elegant despite its familiar appearance. In the hand, it is pleasurable to hold and also to examine; its body and shape are its strengths. It is considered suitable for all Tasters, especially for those who are looking for a sophisticated and particular tasting instrument, ideal for prominent red wines. This stemglass is best suited for use in restaurants, although it is also appropriate for wine bars and special occasions. The Robusto stemglass according to the sensory analysis The Robusto stemglass performs similarly to the ISO stemglass with prominent wines, though with some signifi cant distinctions. With the Côtes-du-Rhône, the colour, when seen through the superior high-tech blown crystal glass of the Robusto stemglass, is much livelier. The peculiar shape enhances the spicy notes, in particular those associated with the vanilla in pastries. In the Nebbiolo, the same visual differences highlight the lightness in the wine, together with a clearer perception of fl oral notes such as rose, violet and various fl owers that are typical of this wine. With the Barolo, nut aromas are highlighted as well as spicy ones caused by the barrique, while vegetal scents are softened. Robusto stemglass with Amarone della Valpolicella. 31 TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Ricco stemglass according to a panel of tasters: emotional profile Pleasant and modern in its appearance, according to the wine tasters, this stemglass is classic and essential, closer to a technical tasting instrument than to a work of art. In the hand, it conveys a sensation of strength and prestige, thanks to its body and stem design. It is considered a stemglass for experts, by those connoisseurs that love to fully appreciate what they drink and also strictly test and identify the potential defects of the wine. It is an ideal instrument for the wine shop and wine bar that wants to stand out from the crowd and according to Tasters, it has the advantage of being suitable both for red wines and white wines, provided that they are prominent wines. The Ricco stemglass according to the sensory analysis The Ricco stemglass enhances the background notes of prominent wines, especially the spicy ones. This induces the taster to sense more structure and roundness, in combination with an amplifi ed alcohol or sour characteristic according to the wine selected. For the Chianti wine, the Ricco stemglass emphasises the aromas of jam and fruit in syrup, as well as dried vegetal and pastry notes, which increase the range of spicy notes. For the Teroldego and for the Brunello di Montalcino, the Ricco stemglass proves its tendency to enhance a purer colour, and at the same time to enhance the barrique notes, if present. For this reason, it is a useful instrument for comparing aged wines, when the oenologist s expertise is instrumental in assessing the wine complexity and avoiding clear oak hints. 33 TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Armonico stemglass according to a panel of tasters: emotional profile A traditional stemglass reinterpreted with an original style: this balloon-shaped stemglass is characterised by its light appearance, which makes it vaguely feminine and very cheerful. It is very pleasant and comfortable, thanks to the shape of the stem. It is considered suitable for a Taster with a certain style, for red wines as well as more prominent and aged wines. It is ideal for wine bars and restaurants. It is appropriate for special occasions and at the same time is very practical to wash and dry. The Armonico stemglass according to the sensory analysis At a sensory level the Armonico stemglass performs in a similar way to the ISO stemglass but it proves more suitable for evaluating prominent wines with an ability to highlight certain particular and deep notes found in these wines. For instance, dried fruit in the Barbera d Alba, spices in the Nebbiolo and both notes in certain Sicilian red wines. In certain cases, the Armonico stemglass can highlight some light hay notes as for example, in the Nebbiolo or oak in the Barbera d Alba Superiore. It acts as a sort of notes magnifi er. 35 TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Fresco stemglass according to a panel of tasters: emotional profile This stemglass is familiar to Tasters, characterized by its light and delicate appearance. It is modern and pleasant, prominent without being too severe. It is pleasant to hold and is easy to handle: the body, the rim and the stem are interesting, and according to the experts, despite the height, it does not lose its robustness when compared to the ISO stemglass. It is considered suitable for a young and inventive Taster, who has a very good knowledge of wine and good taste. It is considered suitable for young wines; ideal for restaurants and wine bars. Fresco according to the sensory analysis The Fresco stemglass is unique in its ability to enhance specifi c notes of white wines, as well as their qualities, and defects, if present. With the Chardonnay, the Fresco stemglass, when compared to the ISO stemglass, emphasises some of the most attractive notes, from the fl oral aromas, specifi c notes such as jasmine, wisteria and acacia blossom as well as various other fl owers. Even citrus scents are perceived with more intensity, by emphasising the exotic fruit notes which make the white wine more pleasant. The vegetal scents are slightly more evident. With Pinot Grigio, the Fresco stemglass, unlike the ISO stemglass, tends to amplify all types of scents including possible defects, infact a hint of butter and fermented milk, not detected using the ISO stemglass, was identifi ed with the Fresco stemglass. The same also applies to the Sicilian white wines. The Fresco stemglass highlights a slightly more evident fruity note as well as a buttery scent that was not detected by the ISO stemglass. 36 GRADEVOLE STEMGLASS 34 cl 11 ½ oz h 22.3 cm 8 ¾ ø 7.7 cm /06 BAF 6/24 Suitable for rosé and white wines Serving temperature = 9 10 C F The shape of the bowl slightly fl ared (angle = 9 ) allows the wine to be directed mainly towards the tip of the tongue followed by the sides in order to obtain the perfect balance of the fl avours. The shape and the size of the stemglass allow for the concentration of fl avours near the nose thus facilitating the perception of the delicate and fruity aromas of young wines. 37 TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Gradevole stemglass according to a panel of tasters: emotional profile It is an elegant and feminine stemglass, unusual when compared to the stemglasses that tasters normally use. It is pleasant and interesting to the touch and beautiful and well-balanced. It is comfortable and easy to handle, ideal for the experienced taster who understands wine and requires a special tasting tool. It is defi nitely suitable for both still and sparkling white and rosé wines. It is perfect for wine bars but also in restaurants and on special occasions. The slightly fl ared mouth helps it to dry quickly after washing. The Gradevole according to the sensory analysis The Gradevole stemglass is ideal to enhance the fl oral notes of the rosé wines, namely the distinctive aromatic range in which the fruity scents make a wine pleasant and quaffable, while the fl owery scents make it refi ned and elegant. With Chiaretto del Garda, the Gardevole stemglass, unlike the ISO stemglass, enhances the various fl oral scents, which together with the honey, amplify the fl oral aroma of this wine. These notes prevail over the vegetal ones, and by synaesthesia, they give the wine a sourer taste as opposed to the ISO stemglass. With the Cerasuolo, the Gradevole stemglass considerably emphasises not only the various fl oral scents, but also the grape and fresh fruit notes such as apple, pear and banana. If we consider wines from the South of Italy or wines with a higher aromatic strength, the ability of the Gradevole stemglass to amplify scents becomes more evident. It emphasises the specifi c characteristics of a Sicilian Rosé wine, by emphasising the fl oral notes to the extent that it distinguishes specifi c perfumes such as the rose or the violet. The fruity notes are also well amplifi ed, both in the perception of the red and black fruit, and in more noble scents such as dried fruit and nuts. 38 SMART TESTER (Smart Tasting stemglass ) 40 cl 13 ½ oz h 22 cm 8 ¾ ø 8 cm 3 ¼ 09647/06 BAF 6/24 This stemglass has a long egg shape with a total height of 22 cm. It can be used for universal tasting; hence it has physical characteristics in terms of aroma perception and gustatory perception that are average of all Vinoteque range. It is suitable for red, white and sparkling wines. Its smart characteristics are that: a) it ensures the average perception of all wines; b) the treated indentation at the bottom of the bowl (epicure) enables: i. release of perlage (bubbles) in sparkling wines, ii. release of fi ne bubbles in still wines that develop carbon dioxide due to failure of secondary fermentation, (defect sensor), iii. wine colour examination through this indentation (colour sensor), iv. the immediate assessment of wine deposits on the bottom of the indentation (decanting sensor) Wine fl ow outline inside the stemglass during winetasting. 39 TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Smart Tester stemglass according to a panel of tasters: emotional profile Despite its overall similarity in appearance with the ISO stemglass, it is visually much lighter, feminine and elegant. More modern and cheerful, it is much more pleasant to hold. The differences, as far as the sensations are concerned, are remarkable; much more appealing and comfortable, its strength is the particular geometrical shape of the body. It has a stem that is much more attractive than the normal ISO stemglass. This wine glass is chosen by competent Tasters who are also sophisticated and have good taste. It is suitable for all types of wine, preferably still wines. Its functionality makes it a popular choice in restaurants as well as in wine bars and at home, including for every-day use. It presents the same washing and drying characteristics as an ISO stemglass. The Smart Tester stemglass according to the sensory analysis The Smart Tester stemglass, despite its geometrical shape being not dissimilar to that of an ISO stemglass, shows a comparatively interesting and particular performance. First of all, the geometrical shape of the bottom of the bowl enables the colour of wines to be more effectively assessed visually. Thanks to the stemglass transparency, it does not add any purplish shades, unlike the ISO stemglass. From an aromatic point of view, it has a remarkable ability to highlight certain specifi c features of the wines. The Smart Tester stemglass does not enhance all the olfactory notes of a Barolo - as far as fruity notes are concerned, for example, it emphasises dried fruits (e.g. prunes, dates) and stewed fruit (e.g. jam, fruit in syrup). Vanilla and spicy notes are also clearly enhanced. Specifi c fl oral notes are also emphasised in Bordeaux wines as well as fruit aromas, especially grape, apple and pear scents. The herbaceous aroma is slightly emphasised, both fresh (e.g. grass, pepper) and dried (e.g. hay, tobacco). With the Brunello di Montalcino, the Smart Tester stemglass clearly emphasises cherry, raspberry and plum notes as well as oak, common spices, fresh wood and toasted notes. Such aromatic differences have repercussions on the gustatory-tactile perceptions with synesthetic mechanisms, particularly on the alcohol, acidity, structure and roundness sensations. ACCADEMIA 37

MATURO STEMGLASS 49 cl 16 ½ oz h 24.2 cm 9 ½ ø 8.8 cm 3 ½ 09643/06 BAF 6/24 Suitable for full-bodied and mature white wines Serving temperature = C F These wines require more time to achieve oxygenation; this is why the stemglass has a high capacity (49 cl) and appropriate oxygenation surface (60 cm 2 ). These wines should be served at degrees. The contact surface was (wine-glass bowl) designed to maintain the service temperature. Thanks to its shape, the fl avours are well defi ned and expressive. The inclination of the mouth glass (16 ) and its diameter allows the taster to direct the wine towards the lateral and back areas of the tongue and fi nally towards the tip thus evaluating its general smoothness. 41 TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Maturo stemglass according to a panel of tasters: emotional profile Despite its size, this visually striking stemglass is different from other stemglasses due to its airy design, which makes it more delicate, feminine and at the same time extremely elegant and modern. It is very light to hold but at the same time each part is signifi cant and pleasant. It is appropriate for a younger, inventive Taster with good taste. It is also suitable for young yet prominent still white wines. It is ideal in wine bars, but also suitable for restaurants and modern bars. The Maturo stemglass according to the sensory analysis The Maturo stemglass, when compared with the ISO stemglass, showed a greater capacity to emphasise the distinct notes of aromatic-berry wines over the whole range. For the Riesling wine all the fl ower notes are much more emphasised, from fi eld fl owers to more specifi c notes, such as the acacia blossom and the camomile ones, and to scents that are typical of With the Müller Thurgau, in addition to the fl ower and exotic fruit notes, the citrus notes were identifi ed which characterise this vine and the typical vegetal scents of cut grass and aromatic herbs which emphasise freshness by synaesthesia. In the Sauvignon, exotic and vegetal notes are always emphasised as well as a light red and black fruit scent, which were not detected with the ISO stemglass. Maturo stemglass with Chardonnay (USA). This stemglass is suitable for a complex and rich wine, with a high percentage of alcohol and low acidity. The alcohol conveys the wine aromas very rapidly, but the high volume in the head space (280 cc) slows down the evaporation. Wine fl ow outline inside the stemglass during winetasting. Its shape is such to direct the wine to the appropriate tongue area. & 40

TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Fragrante stemglass according to a panel of tasters: emotional profile The shape and size of this tasting instrument distinguish it from normal stemglasses, by making it more classic and balanced, light and vaguely feminine. It is balanced to the touch, comfortable and each part is pleasant to hold. It is appreciated by a user with good taste and suitable for still wines. It makes a strong impact in wine bars and restaurants and it can also be used at home for special occasions. It is easy to wash thanks to its size and geometrical shape. The Fragante stemglass according to the sensory analysis At sensory level the Fragrante stemglass performs similarly to the ISO stemglass but in certain situations it highlights some precious notes in specifi c prestigious wines. This happens with the Brunello di Montalcino as the dried fruit scents such as dates and prunes can be easily perceived only with the Fragrante stemglass. The same also applies to the Chianti, for which the Fragrante stemglass mainly highlights the red and black fruits and the aromas of jam and fruit in syrup. Fragrante stemglass with Chianti Classico. 44 PERLAGE STEMGLASS 17.5 cl 6 oz h 25 cm 9 ¾ ø 5.5 cm 2 ¼ 09648/04 GP 4/ /06 BAF 6/24 Suitable for the tasting of sparkling wines. Serving temperature = 8 10 C F Sparkling wines are not just bubbles ; their appeal depends on their delicate and refi ned aromas and on their refreshing and appealing taste. The agent responsible for the fi zziness and the bubbles is the carbon dioxide (CO 2 ) that forms during the production; their development, on the other hand, is regulated by physical factors that occur in the glass, especially: the shape of the glass; state of the internal surface of the glass; temperature; cleanliness of the glass. Wine fl ow outline inside the stemglass during winetasting. Its shape is such to direct the wine to the appropriate tongue area. & 42

The wider the contact surface, the quicker the effervescence and its dispersion. This is why this stemglass is long and thin (fl ute): to avoid the rapid dispersion of perlage (bubbles). By lowering the temperature, the perlage will become slower; on the other hand, by increasing the temperature, the carbon dioxide will disperse more quickly. Failure to wash a stemglass properly or adding too much detergent will reduce the effervescence effect. The Perlage stemglass was designed with some specifi c techniques to regulate the nucleation of effervescence in order to generate the development of bubbles in the following ways: numerous and constant; fi ne and persistent; a thin crown on the free surface. The explosion of these bubbles on the surface releases the wine s aromatic notes+. The carbon dioxide plays an important role on the taste of the sparkling wine. The CO 2 fl avour is slightly sour and has a tactile tingling sensation. The CO 2 acidity, together with one of the wine s other acids generates freshness and softens the perception of sweet fl avours. TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Perlage stemglass according to a panel of tasters: emotional profile This stemglass is surprisingly pleasing to the eye due to its original light appearance. It is modern and cheerful, very feminine and delicate, akin to a work of art. It is light to the touch attesting to its fi nesse, but at the same time it is considered more comfortable than the ISO stemglass thanks to the particular shape of the stem. It is appropriate for young female tasters, exclusively for light and sparkling white wines. It is ideal for special occasions, especially in elegant and special settings such as restaurants and wine bars. The Perlage stemglass according to the sensory analysis The particular geometrical shape of this stemglass, in terms of appearance, offers a distinctly different performance in comparison with the ISO stemglass: the subtlety of the perlage is especially emphasised in Champagne. The direct manner in which it conveys the liquid to the mouth enhances freshness and structure according to the initial characteristics. This effect must be seen in relation to the notion of synaesthesia and to the ability to emphasise certain background aromas which are not detected with the ISO stemglass. As a matter of fact, in the Prosecco, as well as in the Trento Doc and Champagne, the Perlage stemglass highlights certain vegetal notes such as cut grass and aromatic herbs that psychologically increase the perception of freshness. The Perlage stemglass also has a magnifying effect on certain hidden notes which is interesting to note when assessing wine. For example, in the Prosecco, in particular, some toasty and spicy notes that are not perceived with the ISO stemglass were detected whereas in the Champagne it revealed a microbiological and sulphurous hint. 46 SPIRITS SNIFTER (Universal) 17 cl - 5¾ oz h 16.5 cm 6 ½ ø 6.6 cm 2 ½ 09649/06 BAF 6/24 This stemglass was designed in order to control the release of esters through the evaporation surface of the alcoholic liquid. During the olfactory examination, the aromatic molecules which fi ll the head space release their original substances as soon as they come into contact with the air outside the stemglass. The shape of the stemglass prevents the dispersion of the distillates aromatic components. Spirits Snifter enables the Taster to perceive the primary, secondary and tertiary aromas of the alcoholic liquid. This stemglass is suitable for a wide range of both dark and white alcoholic beverages. Its volume to the fi lling line (maximum diameter) is approximately 6 cl 2 oz. Liquid fl ow outline inside the stemglass during winetasting. Its shape is such to direct the wine to the appropriate tongue area. & 44

TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI The Spirits Snifter stemglass according to a panel of tasters: emotional profile This stemglass presents some particular characteristics such as its extreme lightness which makes it unique when compared with other stemglasses used for distillates. It is rather classic and sober in appearance, although it is reinterpreted in a modern, feminine and extremely elegant way. Its tactility is due to its lightness and ease of use which differentiates it from the ISO stemglass. As far as the geometrical shape of the body is concerned, both the stem and the rim are very pleasant and refl ect the Taster s search for newness and good taste, as well as knowledge due to the stemglass refi ned though technical shape. This stemglass is also suitable for cognac and grappa, both young and aged and with aromatic notes. This stemglass is an ideal instrument both in restaurants and in wine bars, including everyday use. The Spirits Snifter stemglass according to the sensory analysis This Vinoteque stemglass performs comparably to the ISO stemglass with several signifi cant distillates, from cognac to grappa. The specifi c geometrical shape enhances the perception of hidden aromatic notes. In young grappas which are, in particular, rich and clean, such as those from the Trento area, the Vinoteque stemglass enhances some particularly prized notes such as fl owers, honey and stewed or dried fruit, by increasing the perception of the sweetness. In grappas that are refi ned in oak, this Vinoteque stemglass can highlight the possible presence of certain background aromas, such as wood and resin. It also shows certain defects that are mentioned by Tasters among the biological and chemical notes. The Vinoteque stemglass brings out the scents of dried fruit and nuts, spices and toast which are characteristic of a well-aged and refi ned distillates. Recommended for white and dark alcoholic beverages: Armagnac Calvados Cognac Cask Aged grappa Young grappa ACCADEMIA 45

GRAPPA STEMGLASS (young) 10.5 cl - 3½ oz h 20.2 cm 8 ø 4.6 cm 1 ¾ 09651/06 BAF 6/24 Suitable for young and aromatic grappas and fruit brandies Serving temperature = 9 13 C F Grappa is strictly Italian, both traditionally and culturally, but also by law because in fact this denomination is reserved exclusively for products obtained from Italian raw materials. The grappa is the brandy obtained from the marcs, namely the skins of the grapes remaining after the squeezing of the must which is used to make the wine. These skins contain the noblest part of the grape s aromas which should be distilled with lengthy and complex techniques and with very sophisticated alembics. Liquid fl ow outline inside the stemglass during winetasting. Its shape is such to direct the wine to the appropriate tongue area. & 46

The stemglass that we created was designed to enhance the pleasure of the grappa. This stemglass substantially softens the aggravating perceptions, emphasising fl oral and fruity notes. This was obtained by reducing the evaporation and oxygenation surface. The mouth diameter and its inclination direct the grappa towards the oral cavity with a restricted fl ow. This allows the aroma of the distillate to be fully appreciated without enphasizing the pungency or enhancing the perception of the alcoholic heat. TEST CARRIED OUT BY CENTRO STUDI ASSAGGIATORI Grappa stemglass according to a panel of taster: emotional profile Finding a grappa stemglass that will impress is not an easy task, considering the variety of shapes available. The Vinoteque Grappa stemglass, however, has a very strong visual impact on Tasters who recognise its particular elegance together with the technical features. This stemglass which is particularly refi ned, high and thin, stands out thanks to its contemporary design and its pleasant tactile properties. It is very practical, like an ISO stemglass. It is considered suitable for those experienced Tasters who always enjoy newness and is also appreciated by women. Perfect for young and aromatic grappas, and also ideal for fruit brandies, it is used specifi cally in wine bars and on special occasions. Grappa stemglass according to the sensory analysis The Vinoteque Grappa stemglass compares favourably with the ISO stemglass especially when drinking aromatic distillates, it enhances all the specifi c characteristics of the most volatile notes. Excellent effi ciency for mountain grappas made with aromatic berries such as the Traminer: fl ower, honey and beeswax notes are clearly identifi able while the fruit notes are deeper, especially citrus, apricot, apple and pear in syrup. In younger and neutral grappas, it emphasises certain notes by increasing the perception of minor notes such as stewed fruit, spices and aniseed. In fruit distillates, the Vinoteque stemglass identifi es the dominant note, namely fresh pear, emphasising its clarity and cleanliness. Recommended for: Aromatic distillates Young grappa ACCADEMIA 47
