They are to whiskey what French Bordeaux is to wine. And like all great Bordeaux producers, each scotch distillery gives its own unique character to its single malt. Malt whiskies are so distinctive that experienced tasters can identify them in blind tastings. A number of variables can effect the style and taste of a single malt scotch. A brief course in how they re made might shed some light on the differing styles. The process begins with barley that is sprouted in cool, humid malting barns. As it sprouts, starch in the kernels turn into maltose sugar, hence the name malt. The sprouted barley is then smoked over peat and charcoal fires. To complete the conversion of starch into fermentable sugars, the malt is mixed with warm water and fermented. The fermented wash is then distilled in small pot stills. Finally the malt is matured in oak barrels for a legal minimum of three years, eight to twelve years is average, but some are aged 25 years or more. Variations of the scotch making process results in noticeable differences in their taste. Next, let s look at other factors that come into play when making a single malt. The pot still, used in the distilling process is handmade by a coppersmith and in no two distilleries is it identical. The shape of the still effects the character of the product. Another important factor is the influences of the distillery s location. The location will determine the quality of the water available and the character of the peat used for kilning. Other factors that are linked to a distiller s location is the micro-climate of the building, including the temperature and air circulation. Wooden casks were originally used simply as containers and the ability of spirits to develop with age was discovered only by accident. Scotch whisky was not systematically aged until the 1800 s. The choice of wood for the cask also has a big effect on the flavor of the whiskey. The most popular wood selected is oak. Many distilleries prefer used casks from sherry and port producers because of the distinctive flavors. As you can see, a number of factors contribute to the flavor and taste of a single malt scotch. Distillery representatives will be in attendance at both tastings to answer any questions you might have.

2 LILLET VESPER ½ oz Lillet Blanc 3 oz Beefeater Gin 1 oz Absolut Vodka Add ingredients to cocktail shaker filled with ice. Shake and strain into martini glass. Garnish with lemon twist LILLET ROSÉ TONIC 1½ oz Lillet Rosé 3 oz Tonic Water Pour Lillet Rosé into glass filled with ice. Add tonic water and a slice of lime. LILLET SANGRIA ROUGE 2 oz Lillet Rouge 1 oz Lemon-Lime Juice 1 oz Club Soda Add Lillet Rouge and lemon-lime juice to tall glass. Top with soda and garnish with fresh fruit. INDIA PALE IPA Explodes with tropical, citrusy, piney hop flavors and aromas, all perfectly balanced by a subtle malt character. RIPPER PALE ALE Flavors of orange, tropical fruit and fresh hops. A nice malt backbone leading to a crisp, clean finish. ARROGANT BASTARD ALE An aggressive ale with force bitterness and huge malt and hops flavors. 2
