This Luxury sake made only in the mid-late winter months from the highest grade Yamada Nishiki rice. A full-bodied sake with elegant and aromatic aromas. Junmai Dai Ginjo Well pronounced nose with melon, Fragrance peach, green grass and sage. Very subtle umami on a long lasting Tasting Note finish. Akashi-Tai DAIGINJO GENSHU Akashi-Tai DAIGINJO GENSHU is an aromatic medium- bodied luxury sake made only in the midlate winter months from the highest grade Yamada Nishiki rice. This sake is perfect for both connoisseurs and those who are just starting to drink sake. Daiginjo Alc. 17 % Sweet banana, honey and floral Fragrance undertones on the nose. Finishes nicely with a lemony Tasting Note acidity. Akashi-Tai TOKUBETSU HONJOZO GENSHU Akashi-Tai TOKUBETSU HONJOZO GENSHU has a good creamy texture and a very good balance of body, strength and depth. Just like Honjozo it goes particularly well with foods of a salty or savoury nature. Satisfyingly full-bodied sake with a silky texture. The ultimate sake for sake aficionados. Honjozo Alc. 19 % Pink grapefruit, beeswax and white Fragrance floral undertones on the nose. A creamy, rich plate with tropical fruit flavours balanced by a subtle Tasting Note umami note. A clean and long finish. Akashi-Tai JUNMAI GINJO SPARKLING Akashi-Tai Sparkling Sake is bottle fermented to create a naturally carbonated sparkling sake. Perfect for celebrations, as an aperitif or with desert. With second fermentation this sake has preserved the zesty, fruity characteristics of freshly brewed junmai ginjo sake. Junmai Ginjo 300 ml Alc. 7 % Peach and banana on the nose. Fragrance Fresh & clean. Well balanced, light fruit notes with Tasting Note hints of citrus and melon. Akashi-TaI SHIRAUME GINJO UMESHU Umeshu is a sweet plum infused alcoholic drink. Typically multiple distilled plain spirit is used to marinade the fruit but Akashi-Tai Shiraume Umeshu uses ginjo grade sake instead to gently extract the fruit essence. After being marinated for 6 months the fruits are removed from the tank then GINJO UMESHU is left to age for further 2 years. 4 Tel.: Fax: Chiyonokame Shuzo Co., Ltd Hiraoka, Uchiko-cho, Kita-gun, Ehime, JAPAN CHIYONOKAME SORYU Using special yeasts developed in Ehime prefecture and rice cultivated in our town. The name and its labels show clear river water from the top of the mountain near here. Fragrance Mellow mango. This Sake has rich aroma like nectarine or mango derived from the yeast with very smooth sweet taste. Tasting Note Serving it in 10 C TENJINMURA After straining, this sake preserved almost ten years in refrigerator. Its taste becomes very matured and smooth. A lot of layers in each taste with thick vanilla and roasted nuts taste. Fragrance Honey and nutty. Very matured tasted with thick sweetness and umami. It goes very well with English blue cheese. This sake is suitable for after meals. Tasting Note Serving in less than 10 C or 45 C. NAME WANTED The ratio of rice and rice koji is different from usual sake. We use much koji for make it sweet and thick taste. Its texture is very creamy. Junmai Alc. 14 % Fragrance Tart and slightly smoky. Sweet and sour followed by nutty or smoky taste. Tasting Note Serving in 5-10 C. AEND AND MIKAN Green mandarin juice with junmai-shu. Our prefecture is famous for many diversity of citrus. Fresh sweetness and sourness are suitable for aperitifs. 5 Tel.: Fax: Daishichi Sake Brewery Co., Ltd Takeda, Nihonmatsu, Fukushima, JAPAN MINOWAMON A very pure-tasting sake to which Daishichi s superflat rice polishing technique has been applied, totally removing all elements that might lead to off-flavors. Named after the castle gate of Nihonmatsu. (Kimoto method) Fragrance Fragrant, elegant aroma. A finely wrought and superb sake, Tasting Note with a long, satisfying aftertaste. MASAKURA Called True Cherry Blossom, this traditional kimoto-brewed junmai ginjo sake is perfectly blended to give a well-rounded creamy flavor. Junmai Ginjo (Kimoto method) Fragrance Flowery aroma. However, we wanted everyone to enjoy ginjo so we decided to sell ginjo for an affordable price for the public. It was well received, triggering the so-called Ginjo boom.
