Each flight consists of three different sherries giving you the opportunity to explore the nuances of each style. For newcomers we would recommend the Introduction Flight (No.1) to establish where your taste lies, whilst for the more experienced sherry drinker the remaining 7 flights allow the taster to explore the differences between three sherries of a similar style back to back. 2 FINO Fino sherry is produced from a total fermentation process of Palomino grape must. The must is fortified & aged in American oak barrels under a layer of yeast ('flor') which prevents its oxidation. The 'solera' ageing process results in a wine which maintains consistent characteristics. Fino is typically light & delicate on the palate with a fresh aftertaste reminiscent of almonds. Fino is a perfect aperitif or an ideal accompaniment to cured meats, olives, nuts & fish. 100ml 375ml 750ml Gonzalez Byass Tio Pepe Valdespino Inocente (vg) Emilio Lustau Puerto Fino MANZANILLA Like Fino, Manzanilla sherry is produced by means of the solera system, only in this case the whole process has to be carried out in Sanlucar de Barrameda on the Atlantic coast. The climatic conditions in this area result in a sherry which is subtly different to the fino produced a few miles inland in Jerez. It retains the dry lightness of fino but also possesses a salty freshness which lingers into the aftertaste. 3 AMONTILLADO Amontillado sherry is the result of two ageing processes. It begins life as a fino (or manzanilla) ageing biologically under a layer of 'flor'. After a given time the flor disappears & the wine continues to age in contact with oxygen. This combination of ageing processes results in a very complex and interesting wine combining the sharp freshness of a fino with a more rounded nutty finish. Amontillado makes a perfect aperitif or is best paired with vegetable dishes, white meat, fish or mature cheese. 100ml 750ml Delgado Zuleta Amontillado (medium) Gonzalez Byass Vina AB Amontillado Emilio Lustau Los Arcos Amontillado Antonio Barbadillo Principe Amontillado OLOROSO Oloroso sherry is the product of purely oxidative ageing. Fortified from the start to prevent any development of 'flor', the wine is in constant contact with oxygen which results in a rich mahogany colour & its characteristic complexity. Oloroso is nutty & earthy on the nose with a full bodied smoothness on the palate & a dry finish. 4 PALO CORTADO This is a very special wine combining the aroma of an amontillado with the full bodied richness associated with an oloroso. Traditionally 'Butts' are identified by tasters at an early stage as having certain specific characteristics that make this style of the sherry so distinctive. The wine is then fortified to 17% to kill off the flor so that the oxidative ageing can begin. A complex bouquet with hints of citrus, nuts & herbs combine with a smooth, deep & well balanced sensation on the palate with an aromatic aftertaste. Palo Cortado is an ideal accompaniment to cheeses, nuts & rich stews. 100ml 375ml 750ml Gonzalez Byass Leonor Williams & Humbert Dos Cortados 20 Yr Old Antonio Barbadillo Gascon Obispo OLOROSO DULCE (CREAM SHERRY) Sweet oloroso or cream sherry is produced by blending dry olorosos with sweeter wines. The sweeter wine, generally PX, makes up around 25% of the blend resulting in a sherry which still retains some of the complex characteristics of the oloroso but with an additional rich sweetness. The large scale production of some of the brands of cream sherry has left it with a poor reputation, the sherry that we all associate with granny's sideboard, these however are in a different league. 5 SWEET SHERRY Made from Pedro Ximenez (PX) or more unusually Moscatel grape varieties, these sherries are naturally sweet, the grapes having been left out in the sun to turn into raisins before being processed. The oxidative ageing process concentrates the aromatic qualities of these wines to produce sumptuous, rich, sweet wines. Again these wines are amazing on their own or with desserts & cheeses. 75ml 750ml Gonzalez Byass Nectar PX Emilio Lustau Emilin Moscatel Emilio Lustau San Emilio PX Special Old Sherry 75ml 375ML Del Duque Amontillado This sherry spends its first 4 years as Tio Pepe before spending a further 4 years in the Vina AB Solera system before being transferred to the Del Duque Solera for a final 22 years. It is a bone dry sherry showing an incredible concentration of flavours from decades of oxidation and evaporation. Apostoles Palo Cortado/PX To produce this wine palomino grapes and PX grapes are pressed & fermented separately & both then spend 12 years in separate Soleras before being blended to spend 18 years in the Apostoles Solera. Although appearing sweet on the nose, this sherry is medium dry on the palate with flavours of fig & raisin balanced with caramel, vanilla & nuts. Matusalem Oloroso/PX The Oloroso and PX spend 15 years in their own Solera before being blended together to spend a further 15 years in the Matusalem Solera. This is a beautifully sweet Oloroso with profound flavours of dried fruits & spices. Perfect with chesses or a dessert. Noe PX The Pedro Ximenez grapes are harvested & left to bake in the sun for up to 4 weeks before pressing, which yields small quantities of very concentrated, sweet brown nectar. The wine spends 30 years in the Noe Solera before bottling. At 450 grams per litre of residual sugar, it is one of the sweetest wines in the World & can be a dessert in its own right.

6 SPANISH VERMOUTHS Vermut is a Spanish institution, not just another ingredient in a range of trendy cocktails. The Spanish prefer to enjoy their Vermut neat over ice, with a twist of orange & an olive. Try it and you will appreciate why. Vermut starts its life as a white wine. It is aromatised & fortified by the addition of numerous botanicals (including wormwood, anjelica root, cinnamon & orange peel) and a little grape spirit. Following this it is usually sweetened by the addition of caramelised sugar, which also results in its rich, dark amber colour. Historically, Reus near Barcelona has been at the centre of Spanish Vermut production, but more recently other wine producing areas have started to make Vermut alongside some of their more traditional styles. We have a small selection for you to try. From Spain s up & coming region this strawberry jam wine has plenty of briar fruits & an open, smooth & juicy palate. El Burro Kick Ass Garnacha A big modern red wine made in Calatayud by Scottish master of wine Norrel Robertson aka El Escocés Volante. El Gordo Syrah Powerful red fruit on the nose that lead onto the palate with a touch of cassis & bramble. This powerful & balanced wine also has a subtle spicy undertone. Los Condes Crianza Tempranillo/ Cabernet Sauvignon Ripe soft fruit aromas with flavours of mulberries & quince, backed up with spices & elegant touches of oak. Dominio de Requeno Bobal 2016-Valencia (vg) Something a little different - Bobal is the grape of Valencia which produces a deeply coloured, velvety, medium bodied wine. Bosque Real Merlot Castilla y Leon A classic Merlot with a full smooth texture, ripe fruit and a touch of toasty oak. Finca Constancia 'Parcela 23' Tempranillo Castilla la Mancha Parcela 23 is the product of the best 3 hectare plot of Tempranillo vines on the estate resulting in a wine deep in colour with a concentration of ripe black fruit flavour following 6 months maturation in new French oak. Beronia Crianza Rioja This Rioja is 90% Tempranillo with a splash of Garnacha & Mazuelo & spends 12 months in oak. It is packed full of ripe fruit with a hint of chocolate. T-Tinto de Toro Toro (v) Black fruits on the nose lead to an intense fruit palate with a hint of spice & dark chocolate. Incredible value for a wine from such a prestigious DO. Finca Constancia Parcela 12' Graciano 2013-Castilla la Mancha Intense aromas of redcurrants, cassis, cranberries with floral notes & subtle vanilla from the barrel aging. A powerful wine which has mellowed perfectly.

11 175ml* 250ml Vinas del Vero 'La Miranda de Secastilla' Garnacha Tinto Somontano This wine is predominantly Garnacha with a splash of Syrah and spends 8 months in new French oak. It is full of black cherry & plum flavours with a long silky finish. Matarromera Melior Ribera del Duero % Tempranillo from the prestigious Valbuena de Duero area, packed with fruit flavours, heavy spice and fine silky tannins following 6 months in new French oak. Valdaiga Bierzo (o) (v) Showing the characteristic earthy robustness of the region but with some elegance, this is a must try wine for anyone wanting to adventure beyond the classic Spanish DO s. Intense garnet in colour it has a silky palate advancing to a fruit explosion of ripe damsons complemented by liquorice notes. Beronia Reserva Rioja Matured for 36 months in French & American oak barrels, this Reserva has intense flavours of black fruit, liquorice, chocolate and cloves. Finca Moncloa Syrah/Cabernet/ Tintilla de Rota Tierra de Cadiz A full bodied Cabernet Sauvignon/Syrah blend with fine, ripe tannins, superb complexity & a touch of sweetness from the Tintilla de Rota grown only in the Cadiz DO. Huerta de Albala Barbazul Tinto Tierra de Cadiz Another powerful red from Cadiz featuring Tintilla de Rota. A vibrant red with a long finish with expressions of fig leaves & aromatic fruits. Cedro do Noval Duriense, Portugal Named after the emblematic cedar tree that dominates the winery s terrace this wine is an excellent example of the quality of wine produced just over the Spanish border in the Douro valley. From the same winery that produces our excellent ports Cedro is made from classic Portuguese varieties with the addition of Syrah which rounds the fruit & gives the wine enormous charm & accessibility Formiga de Vellut 2013, Priorat Priorat is one of only two wine regions in Spain to qualify as DOCa, alongside Rioja. The region is known for its powerful reds & this is a good example with concentrated rich fruit, a hint of spice & long finish. Museum Reserva Cigales This is a real gentle giant of a wine, elegant & silky with soft, round & balanced tannins & spiced red fruits on the nose.

Bodega Gotica Badajo,Verdejo 2016-Rueda Dry & refreshing this medium bodied Rueda has a real grapefruit zing. Vinas del Vero, Gewurztraminer Somontano (v) A classic Gewurztraminer bursting with fruit complexity with a hint of sweetness but with a balance of natural acidity that gives it a beautiful clean finish. A great pairing for spiced foods. Finca Constancia 'Parcela 52' Verdejo Castilla la Mancha (v) Parcela 52 is the very best 3 hectare plot of Verdejo grapes on the estate and after 6 months of maturation the resulting wine is notable for its tropical fruit flavours with a subtle hint of spice. Txomin Etxaniz - Txakoli A light, unusual white from the Basque Country with masses of spritzy, floral, mineral laced fruits. Medievio Blanco Fermentado En Barrica - Rioja A dry & light-bodied white with an intense aroma dominated by oak & ripe fruit.

Pazos de Lusco Albarino 2016-Rias Baixas Meaning sunset in the local Galician dialect, Lusco is vibrant & bright. It has a powerful nose with aromas of fresh herbs, tropical fruits & floral tones. Fresh & complex on the palate, this wine is unctuous, soft & refined. Vina Somoza Sobre Lias Godello Valeorras Made entirely from Godello grapes & aged on the lees sobre lias for 3 months. New to the UK, but we fell in love with it when we visited the winery. It is dry & aromatic with plenty of interest created by floral & fruit notes.. Vinas del Vero Tempranillo/Cabernet - Somontano An off dry rosado that is deep in colour and with flavours of raspberry & cherry. Navajas Rosado Rioja (vg) Made from Viura & Tempranillo grapes this rose has soft aromas of red fruit & is light, fresh & fruity on the palate.
