Your menu was planned weeks ago and now your friends are here, enjoying each other s company and waiting for your beautiful dinner party to commence. Not sure what your friends would prefer, you decided to get a few bottles of your favourite red and white wine to enjoy with the meal Out comes the food and you get a buzz of excitement watching them tuck in. The food is outstanding but you could have done a bit better with the wine choices. But pairing wine with food is tricky right? Follow this step by step guide and you will always be able to choose the right wine to go with your menu every time to make your beautiful meal complete.

A crisp dry style wine like a Viognier or Riesling will compliment a white fish dish with a lemony citrus sauce. A punchy lightly oaked Chardonnay is best paired with a chicken dish with a cream sauce. Shiraz is great with lamb, however if you are serving it with a sweet jus the spiciness of the Shiraz could become overpowering so a Merlot would work better.

Prosecco styles are light and more fruit driven than traditional French Champagne. Bubbles are a great way to get in the mood. Along with the Prosecco styles, serve a fruit driven white such as a Verdelho or Viognier with nibbles and cheeses. Compliment your meal with your white or red selections before finishing the night off with a sticky white such as Ocean View Estates Luscious Harvest or a 10 year aged grand tawny.

5 Dishes with an acidic note such as cured salmon with finger lime will balance an acidic wine like a Reisling, Pinot Grigio, or Viognier. It would not be a good idea to pair these same wines with sweeter dishes that may have roasted carrots with honey. The acidic tones will mask the fruitiness and accent the acidity putting it totally out of balance in turn working against both the food and the wine. A sweeter dish would be better complimented with a soft fruity Merlot or a Verdelho. Balance is key STEP 4

6 STEP 5 The richer the meal the heavier the wine A slow cooked beef ragu will need a full bodied Cabernet to compliment flavours and not get lost in the dish. Whereas the creaminess of crispy pork belly pairs perfectly with a wild fermented Chardonnay. The same rule applies with vegetarian dishes. A Verdelho is best served for sweet roasted vegetables and goats cheese but a Cabernet is best with a rich risotto with mushrooms and parmesan.

7 STEP 6 Go with what you know If all else fails drink what you enjoy with the food you love. A beautiful example of wine and food working in harmony is with our new winter menu Market fish dish. The ponzu dressing and mayo both have Yuzu which is a Japanese citrus with a real tang. This dish is perfectly matched with our 2017 Viognier. The Yuzu balances the acidity in the Viognier and allows the fruit characters of apricot and peach to shine.
