7 AUSTRIAN WINES In Austria there are 35 grape varieties - 22 white and 13 red - officially approved for the production of quality wines and quality wines of a special ripeness and type of harvest (Prädikatswein sweet wine) and Landwein. The proportion of red wines has doubled over the last two decades and now represents one third of Austria s vineyards, which total 46,000 hectares. DAC What does it mean? DAC stands for Districtus Austria Controllatus and is the legal abbreviation for special region-typical quality wines. Thus, if a label states the wine-growing region followed by the letter combination DAC (e.g. Kamptal DAC) we are talking about a region-typical quality wine Sparkling Wines Austria produces top quality sparkling wines Sekt - a tradition that dates back to the middle of the 19th century. These wines are delightful on their own, and match well with a wide variety of foods. They also stand side by side with Cham- pagne, Cava and wines of similar ilk. Rosé Wines For a long time, rosé wines only played a silent, supporting role in the Austri- a wine scene. Those who order a glass today, however, show themselves off as one who appreciates wine and wants to enjoy the elegance and the synergy of its delicate, feminine hue and vibrant style. Serve well chilled to pair with starters and light fish dishes. 7

12 GERMAN WINES German wine is primarily produced in the west of Germany, along the river Rhine and its tributaries, with the oldest plantations going back to the Roman era. Approximately 60 percent of the German wine production is situated in the federal state of Rhineland-Palatinate, where 6 of the 13 regions (Anbaugebiete) for quality wine are situated. Germany has about 102,000 hectares (252,000 acres or 1,020 square kilometers) of vineyard, which is around one tenth of the vineyard surface in Spain, France or Italy. The total wine production is usually around 9 million hectoliters annually, corresponding to 1.2 billion bottles, which places Germany as the eighth largest wine-producing country in the world. 14 ITALIAN WINES ITALY is home to some of the oldest wine-producing regions in the world, and Italian wines are known worldwide for their broad variety. Italy, closely followed by France, is the world s largest wine producer by volume. Its contribution is about million hl per year, and represents about ⅓ of global production. Italian wine is exported around the world and is also extremely popular in Italy: Italians rank fifth on the world wine consumption list by volume with 42 litres per capita consumption. 30 VERMOUTH PERUCCHI By mid-nineteenth century, Augustus Perucchi created the first Spanish Vermouth in Bar- celona. It was made from a traditional handcrafted, complex recipe, based on wines and wine liquors mixed with plants, herbs and roots of both Mediterranean and Oriental origin. Every single ingredient used in making our Vermouth is harvested at the right point in maturity. Then these ingredients go through a number of pressings, filtering, etc., and a Grand Cru is obtained, which is then mixed with other aged Crus in a century old process. The Grand Cru is mixed with ripe, soft and balanced wines, which is then aged in oak casks to give Perucchi Vermouth its signature bouquet and character.
