He knew all of his grandchildren had everything they needed. So he decided to send them each a check for Christmas. On each card he wrote: Merry Christmas, Grandpa PS-Buy your own present! Now on Christmas Day, while Grandpa enjoyed the family festivities, he thought that his grandchildren were just a little cold and distant to him. It preyed on his mind and into the New Year. Then one day he was sorting through things in his study and under a pile of magazines, he found a little pile of checks for his grandchildren! He had completely forgotten to put them in with the Christmas cards! Snowball I made myself a snowball, As perfect as could be, I thought I d keep it as a pet, And let it sleep with me. I made it some pajamas, And a pillow for its head, Then last night it ran away, But first it wet the bed!

2 Summit County Senior Newsletter Colorado Cache Cookbook-A recipe from Annette Rockwood* (my family s favorite stuffing) Roast Pheasant with Wild Rice Stuffing 2 pheasants Season the cavities of pheasants with salt and pepper and salt and pepper coat with butter. tablespoons butter 4 slices bacon Wild Rice Stuffing: Combine the rice to cook. When done, add 2 tablespoons 1/2 cup wild rice, cooked in of butter and toss with a fork to fluff. Sauté onion, chicken stock mushrooms and celery in remaining butter. Add to rice 1/2 cup brown rice, cooked in and toss with remaining ingredients. Stuff birds and truss chicken stock lightly. Cover breast with bacon strips and bake in a heavy 4 tablespoons butter, divided Dutch oven covered at 350 degrees for about 1 1/2 to 2 hours 1 medium onion, chopped or until done. 1/2 pound mushrooms, sliced 1/4 cup chopped celery 1/2 cup chopped pecans 2 tablespoons chopped fresh parsley 1/4 teaspoon thyme 1/4 teaspoon marjoram salt and pepper to taste *I personally add some dried cranberries as well. Family Favorite! Cream Sauce for Pheasant: pan juices from pheasant 1/2 cup minced carrot Remove all but 3 tablespoons of pan juices. Heat 1/4 cup minced onion remaining juices and sauté carrot and onion for 5 minutes. 3 tablespoons flour Add flour and thyme and stir for 2 minutes. Add chicken 1/2 teaspoon thyme broth. Puree this mixture in blender and return to pan. Add 2 1/2 cups chicken broth sherry and cream, heat just to boiling point. Garnish 3 tablespoons dry sherry or pheasants with watercress or parsley and serve with sauce. white wine 1/2 cup heavy cream watercress or parsley for garnish

4 Summit County Senior Newsletter Fun Activities in Utah Temple Square Christmas Lights November 23, 2018 January 2, Mornings 6:00am-7:30am, Evenings 5:00pm-10:30pm. The brightest and most remarkable phenomenon that happens in downtown Salt Lake City is when Temple Square comes alive with festive lights and decorations for the Christmas holiday. Find joy and warmth beginning the day after Thanksgiving, when the lights are turned on for the first night. Not to be missed is the marvelous Cedar of Lebanon and the life size nativity scene staged on the lawn in front of the North Visitors Center, bringing focus to the reason for the season. Temple Square Lights Thanksgiving Point Lights Luminaria At Thanksgiving Point Monday-Saturday 5:00pm-8:30pm Closed Christmas Eve Luminaria is an enchanting mile walk through a shimmering holiday world in Ashton Gardens. At the Grand Alley, 8,000 programmable luminarias carpet a sweeping hill, where each luminaria acts as a pixel in a moving picture of blooming poinsettias, flying reindeer, and beautiful symbols of the season. This display is capped by a 120-foot light tree atop a 40-foot-tall hill. Days and times are limited in nature, so advance purchase is strongly recommended. We feel privileged to have made so many friends in the Summit County Senior program. We feel lucky to have been selected to be on this team, to serve you and to learn more about the Senior Citizen s in our area. We feel we compliment each other quite well as a team, with our varied talents and skills and are excited about the future of our Senior Centers. As you sit in front of a warm glowing fire this winter please know that we are here to serve you and make your program the best that it can be.
