2 Our next planning meeting is scheduled for Thursday August 21st at 7 PM prior to the General Meeting. We will have advertising materials available so please come to the meeting and help us spread the word about our 33rd annual. We will also be distributing the volunteer wristbands. All level players welcome. Dancers, card players, listeners too... fun for the whole family, all ages! We will have the usual great spread of refreshments, tea, coffee... BYOB or whatever you like! No admission charge! Linda will be available to teach ahead, if anyone is interested in a flute or whistle class or a private lesson, let me know. And good luck to our 16 session kids who are going off to Ireland this weekend to go and compete in the All Ireland Fleadh. The session will be a "Welcome Back" party! Formed in 1989 by a group of five musicians, Dervish is one of Ireland's most exciting tradition-rooted bands. With its combination of virtuosic instrumentation, high-energy arrangements and the ultra-sweet vocals of Cathy Jordan, Dervish continues to weave its own path in Ireland's great musical heritage. They came together to record an album of local music which was released as The Boys of Sligo. They decided to develop this informal gathering (which gathered weekly to play sessions in local pubs) into a working band under the name Dervish which was chosen as it related to any group of spiritual people who become enraptured by music. The readers of Irish Music Magazine awarded Dervish Best Overall Trad/Folk Band of the Year. "The Thrush in The Storm" was born and released to the world in April I have not seen this band perform yet in concert, but it is on my bucket list. 4 BALLYKNOCKEN LAMB STEAKS SLOW-COOKED IN WHITE WINE By Leslie McGlynn Ingredients 3 TBSP BUTTER 1 TBSP EXTRA-VIRGIN OLIVE OIL 2 WHOLE HEADS GARLIC, UNPEELED HALVED HORIZONTALLY, 8 CLOVES, UNPEELED SLICED HORIZONTALLY 1 BUNCH ROSEMARY EIGHT 6 TO 8 OZ LAMB STEAKS SALT AND PEPPER 2 ½ CUPS WHITE WINE 1 TBSP WHITE FLOUR BALLYKNOCKEN GREEN MASHED POTATOES (OPTIONAL) MINT, ONION, AND APPLE CHUTNEY (OPTIONAL) Directions Preheat oven to 325. Melt 2 Tbsp of butter with oil in large skillet over low heat. Add the sliced garlic cloves and rosemary and stir, crushing the garlic slightly into the butter and oil. Cook for about 5 minutes, then remove the garlic and rosemary from the skillet with a slotted spoon and set aside. Season the lamb generously with salt and pepper. Increase heat to medium-high and fry lamb steaks for 3-to 4 minutes per side, or until well browned. Transfer lamb to a baking dish large enough to hold them in a single layer with plenty of room at the sides. Put Garlic Cloves and Rosemary into the dish, then add the halved garlic heads, cut side up. Bring the wine almost to a boil in a small pan over high heat, then pour over the lamb. Cover the lamb lightly with foil and roast for 45 minutes to an hour, or until the meat is very tender. Remove the lamb from the dish and set aside on a plate, covering it loosely with foil. Remove the halved garlic heads from the dish and cut each one in half again. Set aside. Strain the pan juices into a small bowl, pushing down on the sliced garlic cloves and rosemary with the back of a wooden spoon. Melt the remaining 1 Tbsp of butter in a small saucepan over medium heat, then sprinkle in the flour, whisking constantly and cooking for about 1 ½ minutes to make a roux. Stir in the pan juices and adjust the seasoning if necessary. Serve with pieces of garlic head, Ballyknocken Green Mashed Potatoes and Mint, Onion, and Apple Chutney if you like.
