1 NEWS FROM SUNSHINE CARE ~A MEMORY CARE COMMUNITY Issue 266 May 2018 A Memory Care Community Monte Vista Road Poway, CA Resident of the Month Gilbert Reeves Gil was born in Loma Linda, California on December 5, His parents owned a grocery store in San Bernardino where he resided until His family then moved to Edwards Air Force Base where his father was employed. He graduated Antelope Valley High School in Lancaster in He was instated into the United States Army, serving most of his time in Virginia. In 1958, after his service time he moved to San Diego where he was employed by General Dynamics Convair. Inside this Issue: In 1962 he was sent to Plattsburg, New York where he worked on the USAF Atlas ICBM for a year. He then returned to San Diego and continued working for Convair until 1985 when he retired. His hobbies were restoring old cars, fishing, fishing, and more fishing. He also enjoys boating and riding motorcycles. He and his wife traveled in a motor home and camped in a large part of the United States, Mexico and Canada for 14 years. He moved to Sunshine Care in March, Gil, we are so happy to have you as part of our Sunshine Care family! 2 Sunbeams May 2018 Page 2 Employee of the Month Rosalyn Manansala Rosalyn Manansala, better known at Sunshine Care as Rose, was born on April 23, 1969, in Taytay, Rizal Philippines. Her parents are Alfredo and Rosita Mauricio. Rose comes from a large family with 5 sisters and 2 brothers. Rose attended La Consolacion College located in Mendiola Manila. Rose owned and operated a successful clothing business in the Philippines. When she came to the United States in 2004, Rose handed over the business to her siblings who continue to manage it today. Prior to working at Sunshine Care, Rose held multiple jobs around San Diego County. In 2005, Rose worked as part of the service crew at a Filipino restaurant in Mira Mesa. She then worked at a Post office as a mail handler from The last job she held before she joined the Sunshine Care team was at the Biosite Company in Sorrento Valley. Rose started working at Sunshine Care at the Willows/Elms building in Rose really enjoys taking care of the residents and believes strongly in treating them like they are her own family. Rose has been awarded employee of the month in the past, and in 2013, Rose was nominated and won Employee of the Year! During her days off, Rose enjoys going shopping and trying out different restaurants with her friends. She also likes to pamper herself by getting a foot massage every now and then. Congratulations Rose and keep up the good work! 3 Sunbeams May 2018 Page 3 GARDEN GATE Greetings from the gardens! Spring has been very fruitful for us so far this spring. Lots of squash and cucumbers have found their way to the kitchen and we still have beaucoup lettuce, broccoli and cauliflower. Tomatoes should be ready in a week or so with bell peppers following right behind. All of our cut flower areas are bursting with blooms. You will see plenty of pincushions, roses, Alstroemeria and sunflowers in beautiful floral arrangements created by our residents in all the homes. It s time to replace cool season annual flowers in your gardens with your spring favorites. We have been switching out our flower beds of pansies and petunias with vincas, lantana and zinnias. Hopefully you have been able to stay on top of the weeds erupting everywhere in your gardens due to the rains earlier this year. It s time to kick up your irrigation schedules since plants are getting bigger, fruit load starting to build up and the days getting warmer. Our free monthly garden lectures have been a big hit with the public so far this year. On Saturday, May 19 th at 10:30 am, our speaker Gisele Schoniger, Organic Gardening Educator for Kellogg Garden Products will be here to talk on how to Restore, Recharge and Regenerate Your Garden Oasis with BioChar. Kellogg has been a huge donator to our local school gardens and food-bank gardens. Gisele is extremely passionate and knowledgeable when it comes to improving the life in your soil. Hope you find happiness in your gardens! Farmer Roy Squash & Kale Casserole Ingredients 2 tablespoons olive oil 1/4 of a medium yellow onion, chopped 6 cups finely chopped kale (about 5 ounces) 1 small garlic clove, minced Kosher salt and freshly ground black pepper 1/2 cup low-sodium chicken broth 2 cups of 1/2-inch diced yellow squash 2 cups of 1/2-inch diced zucchini 2 tablespoons mayonnaise 3 cups frozen brown rice, thawed 1 cup grated Swiss 1/3 cup grated Parmesan 1 cup panko bread crumbs 1 large egg, beaten Directions Preheat the oven to 400 degrees F. Heat the olive oil in a large nonstick skillet over medium heat, add the onions and cook, stirring occasionally, until just browned and soft, about 5 minutes. Add the kale, garlic and 1/2 teaspoon each salt and pepper and cook until the kale is bright green, about 2 minutes. Add the broth and continue to cook until the kale is wilted and most of the broth is absorbed, about 5 minutes more. Add the squash, zucchini and 1/2 teaspoon salt and toss to combine with the kale. Continue cooking until the squash begins to soften, about 8 minutes. Remove from the heat and stir in the mayonnaise. Toss the cooked vegetables, brown rice, cheeses, 1/2 cup of the bread crumbs and the egg in a large bowl until mixed. Spray a 9-inch square or 2-quart casserole dish with cooking spray. Spread the mixture in the bottom of the casserole and top with the remaining 1/2 cup bread crumbs, 1/4 teaspoon salt and a few grinds of pepper. Bake until the squash and zucchini are tender and the top is browned and crisp, about 35 minutes. Serve hot.
