1 NEWS FROM SUNSHINE CARE ~A MEMORY CARE COMMUNITY Issue 256 July 2017 A Memory Care Community Monte Vista Road Poway, CA Resident of the Month Joan Krecic Joan was born in Kansas City, Missouri and moved to San Diego as a young girl where she attended Grossmont High School. She enjoyed two wonderful years at Colorado Women s College (CWC) creating countless memories- highlights include panty raids by the nearby Airforce Academy and lifelong friends still in contact! After college she went to stewardess school and flew for United in their glamorous heyday. She wore high heeled spectators and was weighed weekly with all the girls to confirm they fit the super model profile! She met her husband Max Krecic in Chicago while he was living in the same neighborhood working in aviation sales and was swept away by his charm, sharp dressing and all the rides he gave her to the airport in his fancy convertible. They married in 1962 and soon after had their first child Tamalyn in Harvey, Illinois. Max s business took them to Houston, Texas where he continued his aviation career. After living through many hot and humid summers in Houston he took her back to her beloved San Diego, where he started his new career in the Insurance business, ultimately owning their own business, Krecic Insurance Services. In 1967 their second daughter Tiffany was born. Max and Joan enjoyed entertaining and all their travels around the globe including multiple cruises to Alaska, Panama Canal, the Caribbean, and Russia. Joan and Max are blessed with 4 grandchildren, Sarah, Meagan, Max and Grant, who affectionately call her Glammie or the Silver Fox. She is always patient and loving to her family and anyone that meets her would say the same. Joan has always been a fabulous dresser and decorator. She hosted many holidays at her home which was always beautifully decorated. Joan always wanted a white Christmas but living in sunny San Diego made it a bit tough so she would just turn up the A/C so it was freezing inside and promptly light a fire in the fireplace. After Max passed away in 2005 she continued to enjoy family, travels, and living her happy sunny-side up lifestyle. Over the last few years, living alone took its toll. Joan wanted to be with more people her age and her family couldn t be happier that she found a home at Sunshine Care. We are also glad Joan has joined our Sunshine family! 2 Sunbeams July 2017 Page 2 Employee of the Month Maribel Tanguilig Maribel was born on March 19, 1958 in Pangasinan, Philippines to Francisco and Aurelia Batang. Maribel studied pre-nursing for about two years prior to meeting her husband Felipe. Maribel said that it was love at first sight and just four months of being together, they married at the sweet age of 22. Maribel and her husband have been happily married for 37 years and have three beautiful children and two lovely grandchildren. All three of their children are college graduates and are successfully pursuing their chosen careers. Maribel and her husband migrated to California in March of 2013 and she started working at Sunshine Care in May Maribel says that she really enjoys her job at Sunshine Care; serving and preparing meals for the residents and she always has a big smile on her face. She gets along well with her fellow staff and loves sharing food and funny jokes with them. During her days off, Maribel likes to go shopping and spend quality time with her husband. She also enjoys doing house chores and laundry. Maribel has such a positive attitude and a happy disposition, which she always brings to work. Congratulations Maribel and keep up the great work! 3 Sunbeams July 2017 Page 3 GARDEN GATE Hey There Fellow Gardening Enthusiasts! Summer is in full swing here in the gardens. Thousands of pounds of tomatoes, bell peppers, cucumbers, zucchini, eggplant, tree fruit and lettuce are finding their way to the daily menus for our residents. We will keep up this pace through the end of August. Residents and children in our Seed to Table program have enjoyed the cherry tomatoes and corn in the Children s Garden. Don t let our summer heat slow you down from continuing to plant your favorite summer vegetables. Make sure your flower beds and color gardens are well mulched to cool down the soil temperatures, retain moisture and fend off weeds. Check your irrigation system for clogging to maximize your watering patterns. Perform light pruning on your citrus and deciduous fruit trees to keep them manageable for ease of harvest. There has been a switch in our topic for this month s Garden Lecture on July 15th at 10:30 am. David Ross from Walter Andersen s Nursery has agreed to fill in as our speaker to give us tips on how to Help Your Garden Survive Summer. Our originally slated speaker, Wendy Proud from Mountain States Nursery, will visit us in September, after her rehabilitation from shoulder surgery, to enlighten us on Wonderful Plants from the Desert Southwest. So stay cool and don t let our Poway heat keep you from the enjoyment of working in the garden! Farmer Roy Summer Corn Salad Ingredients: 6 ears corn, husked & cleaned 3 large tomatoes, diced 1 large onion, diced 1/4 cup chopped fresh basil 1/4 cup olive oil Directions: 1. Bring a large pot of lightly salted water to a boil 2. Cook corn in boiling water for 7 to 10 minutes, or until desired tenderness. 3. Drain, cool, and cut kernels off the cob with a sharp knife. 4. In a large bowl, toss together the corn, tomatoes, onion, basil, oil, vinegar, salt and pepper. 5. Chill until serving. 2 tablespoons white vinegar Salt & Pepper to taste Avocado Feta Salsa 2 plum tomatoes 1 T red or white wine vinegar 4 oz. crumbled feta cheese 1 ripe avocado peeled, pitted & chopped 1/4 cup finely chopped red onion 1 clove garlic minced 1 T snipped fresh parsley 1 T chopped fresh oregano 1 T olive oil Directions: 1. In a bowl, gently stir together tomatoes, avocado, onion & garlic. 2. Mix in parsley & oregano. 3. Gently stir in olive oil & vinegar. 4. Stir in feta. Cover & chill for 2 to 6 hours.
