1 NEWS FROM SUNSHINE CARE ~A MEMORY CARE COMMUNITY Issue 270 October 2018 A Memory Care Community Monte Vista Road Poway, CA Resident of the Month Salvatore Faillace Salvatore Faillace was born on June 6, 1931 in Mamaroneck, New York. His father was Italian and his mother was German, but he grew up with the Italian side as all of his mother's relatives were still in Germany. He has one younger sister. He was educated in the Mamaroneck public schools, after high school Sal went to Socorro, New Mexico to attend the New Mexico Institute of Mining and Technology. During his sophomore year, and without telling his parents, he dropped out of college and joined the Marines. Sal served three years in the Marine Corps and in 1953, while stationed in Quantico, Virginia he met Patsy Lou. They were married in 1954 and had two sons. After completing his military service, Sal and Patsy went back to New Mexico. In 1957 he received a Bachelor of Science in Metallurgical Engineering. Most of his career was in quality control. Sal worked for several large companies including General Electric in Pittsville Massachusetts, Cincinnati, Ohio, as well as Solar Turbines in San Diego, California. Sal retired from Teledyne Cast Products in Pomona, California in After retiring, he moved to Descanso, California, where he had ten acres of land and he planted fruit trees and worked in his garden. At one time he was selling fruit to Sprouts Market in El Cajon. After several years of declining health, he had to sell the property in Descanso and moved to a townhome in Santee. In 2014, Sal very reluctantly, went into assisted living. He was content for a couple years and could even still use his ipad to check the stock market every day and play solitaire. He also enjoys reading and watching TV. Sal came to Sunshine Care in February He has four grandchildren and looks forward to their visits. Everyone at Sunshine Care has been extremely helpful and Sal s family is grateful to everyone! Lourdes Lulu Salazar started working at Sunshine Care in This year marks her 16th Anniversary! For the majority of her time with us, Lulu has been a steadfast nightshift Caregiver. Lulu says she enjoys working with the Sunshine Care Residents and treats them as if they were her family. She finds it rewarding to help the residents enjoy their twilight years. In her free time, Lulu says she sleeps nightshift makes for a unique world. Spending time with her family and shopping are two of her favorite hobbies. Congratulations Lulu! Thank you for your 16 years of service. Keep up the great work!! 3 Sunbeams October 2018 Page 3 GARDEN GATE Fall is finally here and our gardens are changing. Tomatoes, squash, cucumbers and peppers are winding down and during October, we start with our cool season veggies for the dining pleasure of our residents. Fresh lettuce is being harvested weekly for the salads along with broccoli, cauliflower and kale starting their run through the kitchen. Nothing beats the enhanced flavor of our fall/winter crops when the weather cools down. Early October is the perfect time of the year for one of the greatest joys in gardening-growing wildflowers. Around some of our homes, wildflowers are seeded to add color and cut flowers of the residents to enjoy. Sometime before Christmas and through most of summer, wildflowers will be in full bloom to brighten the landscape. Here are a few tips on growing wildflowers in your garden. First you must work the soil well by flipping or rototilling. Add some type of organic soil amendment and rake the area level. Get some wildflower seed best suited for your needs. We use a southwest blend of annuals, biennials and perennials. Sprinkle the seed according the application rate recommended by the supplier. We get our seed from American Meadows. Rake or tap the seed lightly into the ground, no need to cover the seed with lots of soil. No fertilizer is needed for the first two years. This will only enhance competition from any weed seeds in the garden. Sprinkle irrigate twice a day until the seed starts to germinate and take hold, then slowly back off on the watering. Sit back and slowly watch your garden erupt in a multitude of colors and textures. This month our free monthly garden lecture is on Saturday October 20 th at 10:30 am. Farmer Roy Wild Rice and Cider Ingredients 3 tbsp. olive oil, divided 1small cinnamon stick 2 large cloves garlic, 1smashed and 1 chopped 2 c. wild rice blend 1/2 c. fresh apple cider Kosher salt and freshly ground black pepper 1/2 c. dried cranberries 2 onions, chopped 2 tbsp. white wine vinegar 1/4 c. chopped fresh flat-leaf parsley 4 scallions, chopped Directions Heat 1 tablespoon oil in a medium saucepan over medium heat. Add cinnamon and smashed garlic. Cook until fragrant, about 1 minute. Add rice and toss to coat. Add cider and 2 1/2 cups water. Season with salt and pepper. Bring to a boil; reduce heat to low, cover, and cook until rice is tender, 15 to 17 minutes, adding cranberries during the last 10 minutes of cooking. Meanwhile, heat remaining 2 tablespoons oil in a large skillet over medium heat. Add onions and season with salt and pepper. Cook, stirring occasionally, until onions are tender and beginning to brown, 18 to 20 minutes. Add chopped garlic and cook, stirring, until fragrant, 1 to 2 minutes. Stir in vinegar and parsley.
