3 Table of contents/introduction REAL Eggs make a REAL difference The term egg products refers to processed and convenience forms of eggs for commercial, foodservice and home use. These products can be classified as dried, frozen, refrigerated liquid and specialty products. Egg products are widely used as ingredients in many food products because they provide certain desirable functional attributes. The American Egg Board Egg Product Buyers Guide provides the latest and most accurate listing of U.S. Egg Product Suppliers and the products they produce*. This publication is designed to help you easily identify and locate the type of egg product(s) you require. The sections are color-coded for quick reference. In addition there is a section containing nutrient values and typical specifications for egg products. 4 210 facts to know about eggs 2 Allergens Egg allergy affects an estimated 2 percent of children younger than five-years-old. While studies show that 80 percent of children eventually outgrow their egg allergy, and most in the general population do so by school age, there are still many children retaining an egg allergy into their teenage years. According to a study published in the August 2012 issue of Journal of Allergy and Clinical Immunology, research indicates some egg-allergenic individuals can tolerate baked egg (as in a muffin), because heating decreases allergenicity by altering the protein structure responsible for triggering an allergic reaction. 5 Non GMO According to USDA, eggs in their natural state in the shell, are not a genetically modified (GM) or bioengineered food. This includes shell eggs and eggs used for processed egg products. In the U.S., only traditional breeding techniques are used to raise laying hens; neither chickens nor eggs are modified by genetic engineering. Even when a laying hen eats genetically engineered feed, any products unique to genetic engineering are destroyed by the hen s digestive process. If hens are fed a grain that contains gluten like wheat or barley, the gluten proteins are broken down during the digestive process. 6 Dried egg products Because most of their moisture is removed, dried egg products have a longer shelf life and are shelf stable. Dried egg products readily reconstitute and easily blend with other dry ingredients. 4

After opening, store in the refrigerator at 4 C / 40 F or below. Once containers of egg solids have been opened, reseal tightly to prevent contamination and absorption of moisture. Reconstituted egg products should be used immediately or refrigerated and used that day. If dried eggs are combined with dry ingredients and held for storage, they should be sealed tightly in a closed container and stored in the refrigerator at 32 o to 50 o F (0 o to 10 o C). Plain unstabilized whole egg solids have a shelf life of about one month at room temperature and about a year at refrigerated temperatures. Store dried eggs as any other dried, powdered food in a cool, dark place. Dried egg products should flow freely and not be clumped or hardened. Use well within expiration dates.
