In the 18th & 19th centuries there were over 200 licensed distilleries in Ireland and along with countless unlicensed ones produced diverse styles of poitín, whiskey, gin and even absinthe.

2 IRISH WHISKIES GLENDALOUGH The Glendalough Distillery was set up by five friends from Wicklow and Dublin with a deep passion for reviving the heritage of craft distilling in Ireland. In the 18th & 19th centuries there were over 200 licensed distilleries in Ireland and along with countless unlicensed ones produced diverse styles of poitín, whiskey, gin and even absinthe. Until recently that dropped to a small handful. Glendalough Distillery is now part of a revival of this heritage. The idea behind Glendalough Distillery is to make innovative spirits while staying true to the tradition and heritage of our ancestors. Initially started with the first ever spirit, poitín and since then have moved to whiskey and most recently the release of a seasonal, wild botanical gins. These three whiskies from Glendalough have been setting the world on fire since their release, winning award after award. At the San Francisco World Spirit Awards 2015, the Double Barrel was awarded Gold medal as the "Best Irish Whiskey Under 7 Years Old", whilst the 13 Year Old won a double Gold as the "Best Irish Whiskey". Before there was whiskey, there was Poitín. It s Ireland s gift to the world, one of the first spirits ever to be distilled. Glendalough have harnessed tradition, craft and heritage to capture a millennium and a half of distilling expertise in this ancient and notorious drink. It is carefully crafted from an old poitín recipe using the finest Irish sugar beets and malted barley. It is batch distilled and finished in virgin Irish oak. 6 ABSINTHE LA FÉE ABSINTHE Absinthe is a distilled, highly alcoholic spirit derived from herbs and the fundamental ingredient: grand wormwood (Artemisia absinthium). It was popular in the late 19th and early 20th century, especially in France, particularly among impressionist artists and writers such as Van Gogh, Lautrec and Baudelaire. The ban remained in place until 1998 when George Rowley, owner of La Fée secured the UK government s authorization on the landmark document allowing absinthe to be legally sold in the European Union thus sparking a world wide modern revival. He then worked closely with Marie- Claude Delahaye, world-expert and absinthe historian, and together they recreated, for the first time since the bans of 1915, the first traditional absinthe to be distilled in France. COGNAC COGNAC FRAPIN Frapin is family owned by Geneviève Frapin and her husband Max Cointreau. Their estate comprises 300 hectares, all of which is in the Grande Champagne district.

Frapin produces Cognacs in the pale and dry style. The access to this superb raw material allows Frapin to produce Cognacs of the highest quality. They produce quite a wide range of styles and quality, but we have chosen the following three for the Irish market. Torres 10 is a benchmark style, with a fruity, fully-flavoured palate. It is made using the native Parellada, Macabeo and Xarel-lo grape varieties. Torres 20 is a multi-gold medal winner in international competitions. The base wines are of Parellada and Ugni Blanc grape varieties. These are double distilled in copper pot stills and the finest fractions are aged in Limousin oak. The brandy has an amber colour, tones of dried fruit and nuts and a lush, velvety palate. Jaime I is made from aged reserves, and blended with some of the oldest soleras, some as old as 30 years. Finally, to these highly aromatic brandies are added a small amount of 1972 eau-de-vie from Folle Blanche lees, from which the finest brandies are produced. The company s most famous product in Ireland is undoubtedly A Winter s Tale. A blend of Palomino and Pedro Ximenez, the wine is aged for a minimum of six years in the Criaderes y Solera system. It is a mediumsweet Amontillado, with an intense nose of nuts, a full body and persistent finish. It shines as an aperitif.
