10 FOR THE BEER The Story of MALZ: In 2001 the two German companies Pala a Malz and Malzfabrik Hoepfner decided to market their quality malt together in order to be er meet the increasing demands of their customers. MALZ AG was founded; the founding companies remained legally independent. Pala a Malz was founded in 1899 as a flour mill and converted to a malt house in The recipe for success of the family business which is now in its third genera on has remained the same to this day: dynamic mal ng tradi on and produc on under the most up to date condi ons guarantee the excellent brewing quality of all malts. In 1987 Pala a Malz bought a further malthouse in Wallertheim that today similarly produces malt. Malzfabrik Hoepfner was built in 1798 by Pastor Friedrich Hoepfner in Liedolsheim near Karlsruhe along with a small brewery. Modern malt produc on plant today documents the successful con nued opera on of this family business which is now in its sixth genera on. In 2009 MALZ built a new plant to manufacture specialty malts, such as dark malts, dark caramel malts and roasted malts. This enables us to manufacture and supply a wide range of different malts with consistently high quality for the diverse requirements of the brewery. In addi on, an efficient packaging plant with a capacity of 700 sacks per hour was constructed. As a result we pack the malt gently and quickly in the desired sacks and hand these over to our logis cs partner. This means short delivery mes for our customers. Our malts are among the best in the world and offer everything required by breweries and brewmasters: All of our products are manufactured in strict compliance with the purity provisions of the German Reinheitsgebot of We only use the best, high quality raw materials: mal ng barley and mal ng wheat. 12 Te s t T! T S E the B O M PILSEN MALT 3 4 EBC / L D Our first class Pilsen Malt gives beer a fresh and rounded taste. It can be used for all types of light beer. It also forms an excellent light and enzyme rich founda on for almost all beer styles. The malt is produced from high quality two row spring barley, which was grown in the best German and European barley re gions. Malt characteris cs: low protein levels, high extract content, light colour and high enzyma c ac vity. U R Premium Pilsner Lagers Ales Kölsch Märzen Light beer as well as all other beers 100 Heidelberg Malt is suitable for brewing beers extremely light in colour. It can be used for the same applica ons as Pilsen Malt and imparts a fresh, rounded beer flavour. Malt characteris cs: low protein levels, high extract content, very light colour and high enzyma c ac vity. Premium Pilsner Kölsch Märzen Light beer as well as all other beers 100 Pale Ale Malt deepens the light golden colour of top fermented beers, crea ng a pleasant flavour. It is an excellent base malt for brewing many different styles of Bri sh Pale Ale as well as for brewing Kölsch beer. Pale Ale Kölsch Pilsner as well as all other beers 100 Vienna Malt deepens the light and brilliant colour of the beer and creates a pleasant, full bodied taste. Selected mal ng barley is used to produce the malt and it is creat ed according to a special mal ng process. This malt also has a high enzyma c poten al. Vienna Amber Lager Golden Ale Märzen Porter as well as all other beers 100 Munich Malt intensifies the colour of the beer and emphasis es the malt aroma of dark beer in an invi ng way. This malt is produced using a special mal ng process designed to bring out certain desirable quali es, such as high solubility. Alt Dark Lager Dark beer Stout Brown Ale Dark Ale Amber Beer Bock Beer up to 100 Melanoidin Malt contains a par cularly large amount of dextrins. It gives the beer a strong flavour and a slightly reddish colour. The full bodied nature of the beer is enhanced. It is produced according to a special kilning process. The malt is characterised by its ease of processing. Märzen Light and dark beers Bock Beer Wheat beer Special beer as well as many other beers 5 50 Caramel Malt Pils op mises the foam proper es and full bodied character of the beer. The malt character resembles that of Pilsner malt. A er the germina on is finished, the green malt is stewed and gently roasted using a special process. This produces the special caramel aroma. As with all caramel malts, this malt is of ex cep onal quality, both due to its excellent processing characteris cs and superior flavour. CARAMEL MALT BLACK MALT U Black Malt (roasted malt) gives the beer greater depth of colour and adds fine nuances of chocolate or coffee aromas. The malt flavour is also emphasised. The foam characteris cs are not affected. The malt is produced from green or kiln dried malt in an intensive roas ng process. The colour of the malt can be adjusted to customer requirements within a range of ± 5. Wheat Malt emphasises the effervescent freshness and the Wheat beer, Light beer typical top fermented flavour of wheat beer. Reduced alcohol and non alcoholic beer It is produced from high quality brewing wheat. Mal ng processes Top fermented beer adapted to the raw material highlight the par cular quali es of Kölsch, Ales this malt Wheat Malt dark emphasises the effervescent freshness and the typical top fermented flavour of wheat beer in the same way as the light wheat malt. In addi on, the colour and the aroma of the beer is intensified. It is produced from high quality brewing wheat. Mal ng processes adapted to the raw material highlight the par cular quali es of this malt. Dark wheat beer Top fermented beer Reduced alcohol beer Non alcoholic beer Ales Chit Malt is used for balancing the characteris c of a highly solubilized malt and for promo ng foam forma on and increasing foam stability. The malt is produced from the same high quality two row spring barley as used for our other malts. For all beers Smoked Malt gives beer a typical smoky flavour (similar to that in smoked ham). The quan ty used will influence the intensi ty of the beech wood or whiskey flavour. This malt can also be used for dis llates. It has a high enzyma c ac vity. Smoked beer, Lagers Wheat beer, Dark beer Porter, Bock Beer Dis llates (Whiskey) up to 100 Acidulated Malt reduces the ph of the wort. This results in improved enzyme ac vity of the mash, greater yield and flavour stability as well as a lighter colour and a balanced aroma in the finished beer. Our malts are produced in compliance with all valid food regula ons and legal provisions. This is checked by independent laborato ries on a regular basis. All processes are conducted according to procedures that are s pulated in our quality management system in accordance with the European standard DIN EN ISO 9001:2008. This also comprises a HACCP system. Cer fica on of the systems is per formed regularly by the LGA InterCert. Mal ng barley and wheat are natural products. This means that the specifica ons given here are subject to seasonal varia on and are based on a minimum level of quality for the harvested grain.
