Add at the end of the boil. Bitter orange peel lends an herbal, citrusy flavor and aroma to beers. Used in Belgian Wits, Grand Cru's, and Holiday ales. Add 1 ounce during the last 2-5 minutes of the boil. Use cinnamon sticks in ciders, holiday ales and pumpkin beers for a warm-tasting, spicy flavor and aroma. Add 1 whole stick to darker beers with five minutes left of the boil. Use ½ to 1 oz coarsely ground coriander to 5 gal of wort at the end of the boil before chilling. Flavor intensity is varied by amount used, coarseness of grind and amount of time allowed to stand before cooling. Licorice root adds a pleasing flavor to porters, stouts and dark ales. Also, sweetens and improves head retention. Indian sarsaparilla has a very pleasing aroma and can be added to rootbeer to improve flavor and head retention. Star anise has a similar flavor to black licorice. Use 1/2-1 ounce per gallon to flavor sodas or specialty beers. Make sure not to crush this additive. Boil for 30 minutes or more to extract flavor. Wintergreen leaves are used as a flavoring agent in beer or soda. To get the flavor, wintergreen leaves must be allowed to sit 3 to 4 days until they naturally begin to ferment, then added to the brew.
