1 Homebrew Society Meeting Minutes 10/04/14 Feedback is now coming from the written notes of all involved. Quite interesting to see some strongly conflicting views and then some real consensus on certain beers. Hope the feedback is useful to all. Brewer Beer Notes Jono E / Kev H Luke Luke Salamander. Chilli, Cinnamon, Coffee and Vanilla Stout Wild Beer. Yeast from organic oats. DME and Summer hops. Olive wood matured Saison. -bitter and dry, nice and subtle chilli. -Cinnamon and bitterness too full on, lessen the flavourings and IBUs a bit. -The combination of chilli and bitterness could do with more body to balance it out, to give the other flavours a chance. -Infected? Bottle bomb s and sour. Otherwise scale back the roasted and black malts- Astringent. -Solid banana clove aroma. Very wheat beer looking and smelling. Tastes strongly of alcohol for a 2.4% ABV. Funny wheat beer, not bad. - Banana and a bit of nutmeg, liked it. - Love the aroma, wild weat beer find. -tastes like its unfinished. More aging required. -Different, impressed. Slightly green woody taste, on top of an Innis and Gunn sweetness. Good aroma of layered different smells. -Needs more time on wood. Feel like I ve been eating grass. Sam American Amber ale -Creamy body, hoppy, herbal nose. -Fantastic -Funky hop aroma, dry with a really smooth mouthfeel. Really nice Jeff and Helen American Amber Interesting thing going on with the biscuit and crystal malt. The twangy malt sweetness vs that slightly puckering quality of two malts. Works alright. Little bit cloying. Would use dark crystal. Rory L /Theo B Slug Destroyer- Samphire Gose -Tastes a bit like syrup, in a good way. Could perhaps do with a little more hop character. Overall nice. - A touch bitter. -sourest salt beer I ve had, well done handsome princes. -lovely, super refreshing, perfect for summer. -not normally a salty beer fan, works well here. -Nose of tomato pasta, high volume of zinc in
2 samphire, taste of V8 tomato juice. -elderflower? -don t know the style, but nice. -I was allergic to samphire but lived. Better than salty kiss (Magic Rock) -Bit acidic, a little salty. -Nice lacto twang aroma, not sour enough to balance the savory palate. Minerally finish. More salt. Tim IPA 69 -Consistant, great hop mix. Great beer. Great hop taste. Max and Alex Daniel Johnny Beer 3. Citra and Pale malt. Zaltvyksly. Sour with hibiscus. Chocco Monster, Sweet chocolate stout. Version 1. Hefe Yeast Version 2. London Ale yeast. Schuyler W Imperial Destroyer. 9%. 312 IBU. -Super beer, dry enough, hops perfect. Top notch IPA. -Tastes a bit like damp feet, you may want to check how you store your hops. -Sparged too high, Tannic, astringent. Works alright for the Citra. Good stuff -An interesting orangy character to the end. Could be less dry. I like it. -Lovely fruity smell, Strawberries, unique flavour, vauguely cidery, Marzipan. -Lovely colour, Great Flavour. -Slight smokiness after all the orvaliness.great sour fruitiness. By smokiness, like in somerset cider, meaty oxidation taste. -Lovely mix of sourness and fruit. -With a lower ABV the hibiscus would come through cleaner and the pungent sourness would not be as abrasive. -Not too sour, very drinkable. -Great sour taste. -Both excellent, prefer 2 for more bitterness. Prefer 1, more balanced. 2 is super chocolatey. I like chocolate milk, 2. -(mixed reaction- more people liked the chocolate of 2 and its smoothness. Criticism of 2 was that it was less balanced andtoo sweet.) -You destroyed my ability to taste let alone describe. I liked it more than your other one. -Flavour grows on you after initial hit.
3 -Chlorine, TCP smell. Very strong. Medicinal. Not pleasant. Schuyler W American Pale Ale -Fusel alcohols. Aftertaste makes more sense than the start. Theo B Buildres brew. Yorkshire tea and Lactose. -Very bitter, not much hop flavour. -Agree with above, quite bitter but do not get the Citrus. -Really dry. Could do with more flavour from hops. -I like the bitterness, dryness. Distinctive aroma and flavour. A bit tropical, Medicinal, soapy. Cat piss from the Citra. -Acetaldehyde. -Sharp malty aroma, very bitter, sharp taste. -Interesting brew, not sure about the smell but tasted nice. -More bitter than I remember it. Great aroma but not much on flavour. -Aged out well. Now tastes like a proper strong builders tea. Kev H / Jono. Bonnington. Black IPA. -Subtle sourness in the aroma? Very thin, and not very hoppy. Infection. Rory Daniel Mosaic single hop, shop series. NHS. Nelson Hibiscus Sauvign IPA -Slight sweetness works better in this as a dark IPA, could do with more flavour. -A bit Broon for a Black. Bit thin. -Malty orange Aroma. Dry at first, finishes a little sweet for my taste. OK mouthfeel and carbonation. -Nice bitterness. -Too sweet for my taste. -A bit too much banana fusels. That s probably the source of the sweetness described above. -Love mosaic, very herbal. Lovely aroma. WINNER of the single hop competition. -Low aroma, Alcohol flavour developing into hop fruitiness. Good mouthfeel, suitable dryness. -Lemon Sorbet -Malty, like the aroma, good balance with hibiscus. -Nelson matches the hibiscus. To make a mango orange. Front notes are strong and bitter. -Great aroma, bitter fruitiness of Nelson. Kind of restrained in a good way. Smells like fruit juice and
4 Edinburgh University Beer and Brewing Society Styrian Bobek Saison tastes a bit fruity. (dregs) Slightly rubbery. Not unpleasant. -Would work Citra and Palisade. -Bit watery, light fruiteness, could use more spice and less sweetness. -Saltiness on the front of the tongue. -Didn t get much flavour from this apart from the sour sweetness. More Carbonation? (growler) -Doesn t taste that strong. Raisin aroma or maybe tea. Light strawberry in flavour, biscuity. Jono E. Green Bullet Black IPA -Thick body, benefit from maize or wheat maybe. Could benefit from later additions of hops. -Lovely aroma, carafa and hops mix well. Good hop flavour, a little thin on the finish. -Like its got chilli in it, very spicy. A bit brown rather than black. Green bullet pretty heavy spicy raisin, overpowering. Cloying sweetness with 19% crystal, not so clean for a single hop I reckon. -Nice nose, dry finish, malt profile should be punchier. -Sweetness takes away from clean basic hop qualities. -Chocolate cake with lemon frosting. -Nice spiciness, works well with underlying chocolate. -Smells lik,e hops, Fresh, like a new opened bag. Taste dissipated quickly, slightly trendy in flavour? -Nice fruitiness to start. A little too much carafa for me. Good though. Sam S Saison Aroma quite muted. Could be drier or better carbonated? Slight alcohol flavour. Nice fruity finish. Too much banana alcohol. Pitched yeast too high a temperature or underpitched. Quite fruity, love the aroma. Liquorice and banana. I don t know the style very well, generally a beer a find a little dry. Sam S Dark Ale Aroma a mix of brown malt and muskiness. Too much roast malt? I like the coffee type flavours and touch of chocolate. A bit alcoholic at first, enjoyable. Nice, malty and reasonably clean yeastwise. Good roasty back.

Brettanomyces and Rum barrel matured. Berlinerweisse. Enjoying this, warming booziness, pleasant. Kind of murky roastiness good job. Would this go well with a christmas cake taste? Thinking Magnum for spicy resiness to match some of the Maillard reactions? Huge on the coffee, roastiness. Love it. 330ml bottles and your sorted. Chocolate, coconut? Booziness apparent in flavour. Rename foam finger. RUNNER UP- single hop challenge Lovely lime aroma, balanced flavour, malt edge to the bitterness. Bit of alcohol in the finish and slightly dusky, good though. A bit sweet, Pretty dry, but a mellow bitterness. Tasty stuff. Nice mellow bitterness, good resinous quality, hides ABV well. A little more aroma? Very good. Well balanced, softer than expected. Dangerously drinkable. Could benefit from later hop additions. (Dregs) Slightly hot alcohol taste. A.Drier, corbonic bite.appletizer. Slightly smokey and malty. Starts like white wine then goes flat.tart white wine then vinegar. A bit too dry. B. Overwhelmingly preferred. More prominent fruity esters Very well received. Tasted hotter in alcohol. More complex. Outstanding. Great sourness. Competition for next month is IPA s. Due in August. Competition set this month is Speciality category. Due in September. As always encourage folk to come along. We enjoyed seeing some new faces. Hope everyone is likening the new structure and location in Summerhall.
