9 PHIL GREENE nola cocktails Sazerac 3 or 4 dashes Peychauds Bitters 2 ounces Rye Whiskey Splash of Absinthe or substitute, such as Herbsaint or Pernod Half teaspoon sugar Splash water Lemon peel Take 2 rocks glasses, chill one while preparing the drink in the other. Muddle the sugar and bitters in the second glass until the sugar is dissolved. Add the rye whiskey and several ice cubes and stir to chill. Toss the ice out of the first glass and splash in the Pernod or absinthe and swirl it to coat the inside of the glass and then pour out any remaining liqueur. Strain into the chilled rocks glass and garnish with a lemon peel. Remember to book your trip for July s Tales of the Cocktail event soon!
