BRAZIL (NATURAL MONDO NOVO/YELLOW BOURBON/RED CATUAI) + SUMATRA (WETHULLED S795/TYPICA/CATURRA) 250g $14 1kg $42 Brazilian Coffee (Minas Gerais Monte Santo de Minas Pedra Grande) COFFEEBIRD.COM.AU Fazenda Pedra Grande sits on the border of two major states in Brazil; São Paulo and Minas Gerais. This microregion has beautifully rich volcanic soil, in which coffee trees thrive. Impeccable farm practice and growing conditions are what make this a consistently high quality coffee. The farm sits at 900 meters above sea level, where the hills provide a unique microclimate. This Estate has been growing coffee for 100 years, The same family has owned and run the estate for the entire time, spanning three generations. Pedra Grande has a large warehouse and mill onsite, which are used to process, sort and grade their coffee. Sumatran Coffee (Aceh Province and Sipangan Bolon) This coffee is sourced from the most amazing locations, at the very end of Lake Tawar in Aceh province and also near the town of Parapat near Lake Toba. This particular lot has been Triple Picked, which means that the coffee has made its way through a warehouse containing many handsorting tables, each separating defects and low quality green beans from the beautiful/uniform coffee we always look for. This particular coffee has been through the sorting process 3 times (hence triple picked), making it as clean a coffee as you will find from Sumatra. All our Sumatran coffees are directly sourced through a small family export company and our good friend Dody Sayhrum from CV Yudi Putra. YP have an extensive network of small micromills in the Sumatra lake Toba region of Sumatra and Aceh. Dody and his family really are leading the charge for specialty coffee production in Sumatra and we re proud to be working with them.
6 BLACK BLEND Floral aroma, grape acidity, berry sweetness, creamy, rich and smooth. ETHIOPIA (WASHED HEIRLOOM ETHIOPIA) + ETHIOPIA (UNWASHED HEIRLOOM ETHIOPIA) 250g $16 1kg $48 Ethiopia Tade GG (Washed Oromia Shakiso) Tade GG is a beautiful estate in Shakiso, Oromia. The owner, Tesfaye Bekele is a trained Agronomist and processes coffee with care and attention. He grows his own coffee trees as well as buying cherries from local farmers. When processing, lots are separated by the altitude at which the coffee trees have grown. Raised drying beds are covered with a black mesh that allows coffee parchment to dry evenly and slowly. The processed coffee parchment is spread very thinly across this mesh and is mixed often to keep the drying process even. Drying coffee is covered with mesh during the peak heat of the day, which prevents the parchment from cracking due to rapid heating. Everything about this estate screams quality. ARTISAN COFFEE ROASTERS Ethiopia Wonberta (Unwashed Oromia Guji zone Sarisaba Kercha) Wonberta farm has consistently produced outstanding coffee. The cherries are bought from local markets as well as grown on their own farm. These cherries are picked ripe and left out to dry on raised drying beds. The coffee is spread out very sparingly to allow sufficient airflow between and around the cherries. The cherries are also covered with a shade cloth during the hottest part of the day, to keep the coffee from overheating. As the entire coffee fruit is left in tact, the coffee can easily taste fermenty if drying isn t conducted in the correct way. The high altitude of the drying station makes for a more even drying due to the cool conditions, which allow these fruit flavours to shine through without taint.
7 SANTA ROSA BRAZIL Fragrance: Sweet, Buttery, Berry Aroma: Sweet, Chocolate, Condensed milk Flavour: Rich, Sweet, Nuts, Berry VARIETAL: YELLOW BOURBON PROCESSING: NATURAL 250g $19 1kg $57 COFFEEBIRD.COM.AU This farm is situated in the South of Minas Gerais in an area called Carmo de Minas. This beautifully processed natural coffee has been hand picked, which is extremely rare for Brazillian coffee. Once the coffee is picked, the cherries are spread across patios where moisture levels are monitored. Once the predetermined moisture level has been reached, the coffee goes into mechanical rotary driers to complete the process accurately. Once drying is complete, the coffee cherries can be hulled, which removes the outer fruit layer of the coffee. The parchment layer is still intact, which protects the green bean inside it. The parchment covered coffee is stored at altitude until it is ready for export, when it is milled on the spot.
8 BOANA PNG Fragrance: Sweet, Creamy, Nuts Aroma: Nougat, Sweet, Milk Chocolate Flavour: Citrus, Creamy, Sweet VARIETAL: TYPICA BOURBON 250g $18 1kg $54 ARTISAN COFFEE ROASTERS This is a regional coffee bought from local smallholder farmers by the operators of Baroida Estate (Colbran family). The smallholders have their plots in the Lamari Valley, which is part of the Eastern Highlands of PNG. Every season, the Colbrans visit local farmers and inspect their coffee plants before they are picked. The best looking cherries are contracted on the spot, which ensures that the very best quality fruit becomes part of the Boana Plantation lot. Once the cherries are ripe and ready, the local farmers bring their freshly picked fruit to Baroida Estate. The cherries are again inspected for quality by the team at Baroida and the smallholder farmers are paid on the spot for their high quality fruit. Baroida then does all the processing on site (pulping, fermentation, washing and drying) in order to control the process as much as possible.
9 MIIRI KENYA Fragrance: Sweet, Mango, Citrus, Floral Aroma: Berry, Citrus, Bright Flavour: Juicy, Sweet, Tropical fruits VARIETAL: SL28 SL34 250g $24 1kg $72 COFFEEBIRD.COM.AU A great example of a bright and juicy Kenyan coffee. Coffee cherries are picked and processed on the same day to ensure freshness and cleanliness of flavour. After the cherries are pulped, they are soaked with fresh water from the Tuir Springs. Fermentation can take 1248 hours, depending on weather conditions. Once the coffee is fermented, it is dried on raised drying beds, which helps to dry the parchment coffee slowly and evenly.
10 EL TAMBO COLOMBIA Fragrance: Floral, Sweet, Caramel Aroma: Chocolate, Liquorice, Caramel Flavour: Citrus, Balanced, Chocolate VARIETAL: CATURRA CASTILLO COLOMBIA 250g $17 1kg $51 ARTISAN COFFEE ROASTERS El Tambo is a municipality of Cauca Department in Colombia s South West. The coffees that come from Cauca Department are often very rich with distinct chocolate notes. Colombia is known for its diversity of microclimates, even within a small region. This means that coffee is growing somewhere in Colombia all year round. This is a blessing for Colombian coffee growers as they can receive steady incomes throughout the year, rather than having only one harvest as in some other coffee growing regions.
11 GITUAMBA KENYA Fragrance: Sweet, Toffee, Citrus Aroma: Sweet, Caramel, Citrus Flavour: Rich, Citrus, Toffee VARIETAL: SL28 SL34 100g $12 250g $22 COFFEEBIRD.COM.AU This estate is owned by Benjamin G. Ndegwa. He has placed all of his time and energy into coffee farming. This beautiful coffee comes from Kenya s Nyeri district, North of Nairobi. This district sits in the central highlands of Kenya and has many positive attributes for coffee growing such as; Volcanic, sandy soils and a solid annual rainfall of 1200mm. This rain is supplemented by an irrigation system, which is fed from the Chania River and the Aberdare Mountain Ranges.
12 KAGUMOINI KENYA Fragrance: Sweet, Berry, Chocolate, Citrus Aroma: Caramel, Nuts, Chocolate Flavour: Bright, Chocolate, Citrus VARIETY: SL28 SL34 100g $12 250g $22 ARTISAN COFFEE ROASTERS This coffee comes from the Kagumoini Washing Station in the Nyeri region of Kenya. This Washing Station is a member of the Mugaga Cooperative Society. Kagumoini translates to fig tree in Kikuyu language. They named the station after the fig tree due to the high number growing in the region. This coffee is fully washed with fresh water from the nearby Ruiru Springs. Coffee is picked ripe, pulped and then immersed in water. Once fermentation is complete, the parchment coffee is then laid on raised drying beds. The coffee is mixed throughout the drying process to ensure even drying.
