Todd s impressive 146 year heritage of mint production, ADM is one of the world s largest suppliers of natural mint oils and mint flavors. Our mission is clear: A. M. 4 MINT ORIGINS IN MICHIGAN Heritage With a Technology-Driven Future The fresh scent of mint is at least in Kalamazoo, Michigan inextricably linked to the entrepreneur A. M. Todd who, within a few years, starting in 1869, had created a mint empire. By the turn of the 19th century, the Kalamazoo region was the mint hub of the world. A. M. Todd grew from a local Michigan mint processor to a company shipping mint oils and flavors to 64 countries. Today A. M. Todd is an important part of the WILD Flavors and Specialty Ingredients business unit of ADM. At the time Albert M. Todd founded the company, mint products from Michigan did not enjoy the best reputation. Since there were no uniform standards of quality, farmers and dealers were able to sell adulterated mint oil. By the turn of the century, A. M. Todd was the biggest manufacturer of mint oils worldwide, being responsible for half of the world s mint production Todd s mission was clear: With his Crystal White peppermint oil, created in 1875, A. M. Todd had already set standards for the industry. To define purity and establish uniform quality standards, Albert M. Todd developed twelve scientific methods of testing mint distillates.

5 When a destructive plant disease, called verticillium wilt, infested mint plantations, Todd developed plant varieties resistant to the fungus. The Plant Science Research Program was started to create wilt resistant plants and develop sustainable growing methods. A. M. Todd purchased by WILD Flavors, which was acquired by ADM in A part of WILD Flavors since 2011, the A. M. Todd brand is now offered though ADM s WILD Flavors and Specialty Ingredients business unit. A. M. Todd s capabilities in the natural mint market add to ADM s goal of providing the highest level of quality, innovation and consistency in the development of flavors, colors and ingredient systems. 1940s 1970s A. M. Todd developed the first non-gmo hybrid plants that were highly resistant to verticillium wilt and released two strains, Todd Mitcham and Murray Mitcham, to the industry. Following the expansion to the Western USA, A. M. Todd established operations in India.

7 GROWING AND HARVEST OF MINT Plant Growers begin by planting certified rootstock or transferring roots extracted from existing fields since most commercial mint plants are sterile. Swath & Chop Once the mint plants are ready for harvest, they are cut. The cut hay is laid in windrows, where it cures for one to three days. Then it is chopped and conveyed into portable mint tubs. Distill Steam is injected into the bottom of the tub. It percolates through the hay causing the oil glands to collapse, releasing mint oil. In a cold water condenser the oil laden vapor is turned back into liquid. Draw Off The oil and water then separate, as the lighter density mint oil rises to the top and is then drawn off.

It is the only comprehensive commercial agronomic, botanical non-gmo mint plant research program in the flavor industry. TODD WORLD OF MINT Commercial Mint Varieties in the ADM Portfolio» More than 95% of all commercially available mint oil basically comes from four Mentha plant varieties. «Peppermint [Mentha x Piperita L.] This sterile perennial herb is the result of a hybrid between Mentha aquatica and Mentha spicata. Its oil composition is characterized by menthol as the main component. The composition is further made up of menthone and menthyl esters. Oil from this plant has a sensory profile that is cool and refreshing with a sweet ketonic background. Native Spearmint [Mentha x Spicata L.] The sterile perennial herb was the first commercially propagated spearmint. It is the result of a hybrid between Mentha spicata and Mentha longifolia. Its oil composition is characterized by a high carvone content accounting for 60 to 70 percent and by a limonene content of 8 to 15 percent. The odor profile is a fresh green odor, with very high floral top notes. The body of the oil is warm and herbaceous.

13 Scotch Spearmint [Mentha x Cardiaca L.] The sterile perennial herb is the result of a hybrid between Mentha spicata and Mentha arvensis. It is characterized by a high carvone content between 60 and 70 percent. The prime indicator of Scotch spearmint is a high limonene content of up to 20 percent. The sensory profile of this oil is a light, fresh, diffusive, and ethereal top note, with a woody rapid body expansion. The body is typically very sweet. Corn Mint [Mentha Arvensis] A sterile perennial whose resulting essential oil is the feedstock for both menthol and dementholized oil (DMO). The oil is characterized by a very high menthol content of 72 to 80 percent. The derived DMO contains relatively low and almost equal menthone and menthol at 30 to 35 percent. US Pharmacopeia (USP) menthol is commonly used in flavor and pharmaceutical applications for its intense cooling properties.
