2 A message from our Chief Executive, Peter Newman Dream Tea is now in it s 5th year and we are delighted that this event has captured the nation s hearts promises to bigger and better than ever, so please join in. Every cuppa counts! The money raised by Dream Tea helps us to fulfil dreams for children and young people with serious and lifelimiting conditions - often at a time when they need it most. Dreams encompass entire families, create precious moments and bring joy in the darkest of times. So please, host a Dream Tea and help to change young lives with a cuppa. 4 Inspiring young lives... Younger bakers can take inspiration from Dream Tea Ambassadors and budding chefs Gemma and Ellen who fulfilled their dreams with Dreams Come True. Check out their recipes for Rocking Rock Cakes and Gingerbread Traybake on our website: reamtea Ellen s story Ellen is 16, from Weston-super-Mare and was born a triplet. Sadly, one brother passed away but she and George, although born premature, managed to survive. Ellen suffered from kidney failure aged five days old, but this was well managed with medication until she became a teenager when her kidney function worsened and she became reliant on daily dialysis while she waited for a donor. Since her transplant in 2012, she says she has had a new lease of life. Ellen feels lucky that her kidney transplant was a success. She describes herself as Outgoing and quirky and as smooth as butter. She aspires to be a chef when she leaves school and asked Dreams Come True if she could fulfil her dream to work in a professional kitchen and what better place to learn than at Heston Blumenthal s, Michelin-starred restaurant, The Fat Duck. Ellen said: The dream inspired me to go out and do different things. It also made me think about how people do nice things for other people. Funds raised through Dream Tea go directly to helping children like Ellen. Sophie Allport, Designer Jonathan s Story Jonathan from Gwent was diagnosed with mouth cancer following routine surgery. A biopsy of the tumour was sent for specialist opinion to the Czech Republic as it is a rare tumour which confirmed a carcinoma of salivary gland origin. This was successfully treated. However, Jonathan relapsed and went on to have further revision surgery which has resulted in nerve sacrifice and facial palsy. Jonathan is a keen chef and wrote on his application form I am a young chef of 21 and it has been my dream to cook with a celebrity ebrity chef. I hope my dream can become reality for me as this is all I think about. A masterclass cooking day or something. With the help of Raymond Blanc and his wonderful team at Le Manoir aux Quat Saisons in Oxfordshire we arranged for Jonathan and his girlfriend Beth to spend two nights at the hotel in the Lemongrass Room. Jonathan spent a day working in the kitchens alongside Head Chef Gary Jones and his team. From 10am to 1pm he was in the main kitchen helping to prepare lunch and then from 1pm to 4pm he worked in the pastry kitchen, Jonathan was keen to learn more about desserts and pastries. Beth and Jonathan enjoyed a 7 course taster menu on their second night. The hotel also gave him two signed books as a surprise gift, waiting for them on the table when they came down to dinner. Jonathan said It was the best experience of my life. Not only did I get to stay in a beautiful hotel and eat wonderful food, I also got to see what it is like to work in a world class kitchen. This experience has given me the desire to follow his dreams. For recipe inspira on head over to our website for lots of mouth-watering recipes kindly donated by Great Bri sh Bake Off Finalist Miranda Gore Browne and our celebrity chef supporters. Here s one to get you started... Pretty Little Strawberry Cakes by Miranda Gore Browne Heavenly vanilla sponge is baked with swirls of strawberry jam then sandwiched with the palest pink strawberry mascarpone frosting and slithers of fresh strawberry. Decorate with delicate sugar flowers or strawberries to make the prettiest little cakes for your Dream Tea. A traybake tin 20x30cm For the cake: 225g unsalted butter, softened 225g caster sugar 4 eggs 2 tablespoons of milk 225g self-raising flour 1 teaspoon of baking powder 1 teaspoon of vanilla extract 6 tablespoons of good quality strawberry jam For the frosting: 325g mascarpone 125g icing sugar 3 tablespoons of strawberry jam 100g strawberries, thinly sliced Pretty sugar decorations Making and baking: Preheat the oven to 180 c. Line a traybake tin with baking paper. Cream together the butter, sugar and vanilla extract. Add the eggs and mix again. Add the dry ingredients and mix gently. Add the milk. Scrape into the prepared tin. Swirl in the jam, leaving a ripple effect and smooth with a palette knife. Bake in the preheated oven for minutes or until firm and springy to touch. Leave to cool in the tin for at least ten minutes before transferring to a cooling rack. Whilst the cake is cooling, make the frosting. Put the mascarpone in a bowl and beat with a wooden spoon, sift in the icing sugar then beat again until smooth. Or use a mixer. Add the strawberry jam a little at a time, mixing well after each addition. Put in the fridge to firm up a little. When the cake is completely cold, place it on a chopping board and trim the edges off with a sharp knife. Slice the cake into 24 squares then slice each square in half so that you can fill it with the frosting. Use a palette knife, or pipe the frosting into the middle of each of the cakes. Put a few sliced strawberries on top of the frosting, add another dollop of frosting and put the other piece of cake on top. Spread or pipe frosting on top, then decorate with sugar flowers.

Extreme Tea Ideas; Parties: Host a fundraising glow in the dark tea party Host a fundraising tea (or wine if preferred) party in an odd location, were thinking beach, top of a mountain, jungle Cookie monster party Join us to beat the largest cream tea world record A purple and orange pyjama party, whether it s at your office or school, swap uniform and suits for a donation Challenges: Tea Pot juggling, get your friends and family to sponsor you to set a new world record for tea pot juggling - note the World record for juggling three objects was 12 hours 5 minutes, think you can beat that? Tea pot relay - any sport, any distance, grab some tea pots and get started fundraising! Glow stick run - with tea and cake to finish Colour run - with tea and cake to finish Roller skating race Tea Tips from Edgcumbes Allow tea to infuse for a good length of time up to 5 minutes for your usual cuppa, but don t forget that infusions like camomile and peppermint will benefit from the same time. Learn to enjoy the relaxing and pleasurable effect of drinking high quality tea. Consider using loose tea as there is no better taste than a pot of freshly made, loose tea.
