New products In keeping with our commitment to supply you with quality innovative products we are pleased to add thirteen exciting products to this edition of our product guide. Nine of these products were introduced to our range in the second half of These products include five gluten free cup cakes (Blondie Mud, Vanilla Blush, Rocky Road, Spiced Pumpkin and Carrot see page 4 5), three pre-cut fruit loaves (Banana, Apple and Raspberry [dairy free] and Date and Orange see page 7) and Brandied Fruit Pudding in the heat and serve pudding range see page 8. Already establishing themselves as popular additions to our range, these nine new products are being joined by the following four products now introduced into the range with this product guide. Be an individual We are delighted to introduce two classic Australian sponge cakes in a new convenient individual format. Passionfruit Cream Sponge and Ginger Fluff Sponge represent all that is delightful in that truly melt in the mouth light fluffy sponge see page 3. The Whole Picture Two new pre-portioned products offer interesting new options. The Amy Johnson Slice has been added to our ever popular range of gluten free slices (see page 6) and a smooth rich creamy White Chocolate and Berry Cheesecake added to our pre cut range of cold-set cheesecakes (see page 12). By Popular request All of our slices are now gluten-free and presented on a silver coated cardboard base making them easy to use and presentable at any occasion see page 6. Our very popular heat and serve dessert range of puddings now come with an easy tear zip tab and for function caterers etc, three of our puddings are now bulk packed with separate bags of sauce (no collar) to make service even faster for large numbers see page 9. Chocolate on the Rocks is now conveniently pre cut into 14 portions rather than uncut see page 13. Lemon Meringue Pie is slightly larger with straight sided pastry for easier cutting and is now on a silver coated disc, replacing the aluminum foil shell see page 15. The superbly flavoured Chocolate Muscat Marquise has had a facelift with an added layer of white chocolate mousse centre and white ganache and white chocolate shavings garnish before it is finally dusted with cocoa see page 10. A Fond Farewell To make way for these new products we say fond farewell to Malibu Mango Gateau, Peach and Berry Cheesecake, Carrot Cake, Orange and Almond Slice, individual Caramel Panna Cotta, Fig and Ginger Pudding, and Orange and Almond Pudding.

3 INDIVIDUAL PORTIONS SPONGE CAKES PASSIONFRUIT CREAM SPONGE Sealed and individually collared sponge cakes approximately 7cm diameter and 5.5cm high. 12 per box. The classic Australian favourite melt-inthe-mouth sponge, now in a convenient individual format to serve for morning tea, cake with coffee or as a delightful light dessert for all occasions, quick to defrost and ready to serve always fresh when required. Light fluffy sponge with a centre layer of raspberry jam and vanilla cream, topped with passion-fruit icing. To use: defrost for 30 minutes at room temperature (18-20 C) or minutes in the refrigerator (2-5 C). Defrosted life of approximately 2 days in refrigerator. GINGER FLUFF SPONGE Sealed and individually collared sponge cakes approx. 7cm diameter and 5.5cm high. 12 per box. The other classic Australian fluffy sponge, ginger fluff sponge with the simple flavours of fresh cream and crystallised ginger topped with a vanilla icing. 3

5 CUP CAKES -. Securely packed box of 12. To use: defrost for minutes at room temperature (18 20 C) or minutes in the refrigerator (2 5 C). Approximate top diameter 60 mm in a classic cup cake form. Defrosted shelf life of 4 days at 2 5 C (refrigerated), shelf life can be extended by storing in an airtight container. Flavours and textures may be enhanced by serving at room temperature. Cup cakes can be briefly warmed in the microwave oven for 2 3 seconds with care. BLONDIE CUP CAKE Lush blonde mud cake coated with white ganache and garnished with a dark ganache rosette and chocolate hearts. SPICED PUMPKIN CUP CAKE Made with roasted pumpkin and spices, this luscious cake is topped with a white icing, cinnamon butter cream and garnished with homemade gluten free almond bread. ROCKY ROAD CUP CAKE A rich dark chocolate mud cake coated with dark ganache topped with marshmallows and chocolate. CARROT CUP CAKE Moist gluten free carrot cake topped with white icing, lemon cream cheese and finished with a medley of citrus peel, diced apricot, walnut and chocolate. VANILLA BLUSH CUP CAKE Fluffy vanilla cake topped with white icing, a pink strawberry butter rosette and a dark chocolate filigree heart. 5

6 GOURMET SLICES Four convenient gourmet slices made from the very best quality nutritious and natural ingredients cut into 15 (5 x 3) slices. Slices are presented on a silver base, sealed and packed in an inner carton for easy use, serving and improved presentation. Slices cut in half are suitable for finger food style portions CARAMEL SLICE 30cm x 20cm pre-cut in to 15 portions approx. 6.5cm x 5.8cm each. Fudgey caramel centre on a glutenfree biscuit crumb base and topped with dark chocolate. A moist golden layer of coconut macaroon on a mocha hazelnut cake base which is coated with a layer of raspberry and bush plum (quandong) jam just like grandma used to make! CHOCOLATE BROWNIE SLICE 30cm x 20cm pre-cut in to 15 portions approx. 6.5cm x 5.8cm each. A flavour combination reminiscent of the pioneering spirit of the 1930s, epitomised by Amy Johnson s world first female solo flight from England to Australia, which this slice was made to commemorate. This classic home style delight consists of a delicate, sweet short crust pastry base coated with raspberry jam and currants, a layer of moist vanilla cake and finished with flaked almonds on vanilla icing.

BANANA BREAD Easy to use, the traditional moist banana bread incorporates a great balance of flavour and texture. 8 HEAT AND SERVE DESSERTS Patented Kooka Brotha s popular range of heat and serve desserts feature four delicious flavours all individually portioned complete with their own complementary sauce designed to eliminate waste and save you valuable time. The innovative format and printed packaging (with handling instructions) of these generous desserts mean absolutely no wastage, simply heat and serve from frozen as required zero waste! ZERO WASTE BRANDIED FRUIT PUDDING WITH BRANDY CREAM CUSTARD Approx. 6.1cm diameter 12 per box. Defrosted shelf life of 4 days at 2 to 5 C, best served heated. A rich pudding loaded with plump brandy soaked fruits is topped with a traditional style brandy custard sauce. The aroma and flavour of citrus peel and all-spice set the mood. This is a Christmas Pudding to be used year around. REMOVING COLLAR AND HEATING INDIVIDUAL PUDDINGS OPTION ONE: Heat in the collar then remove the collar, this allows some of the sauce to penetrate into the pudding during the heating process and makes the pudding even moister. A modern variation of golden syrup pudding combining the flavours of pecan and golden syrup butter pudding with an indulgent butterscotch sauce. Defrosted shelf life of 3 days at 2 to 5 C, best served chilled. Contrasting layers of coffee and sambucca infused sponge and creamy mascarpone create this provincial Italian style cheesecake. CHOCOLATE MUSCAT MARQUISE 30cm log, portions. Defrosted shelf life of 3 days at 2-5 C, best served chilled. A silky smooth dark chocolate marquise (mousse) set on a layer of chocolate, fruit and nut cake infused with a Muscat liqueur syrup. This dessert presents in a versatile log format highlighted with a central layer of white chocolate mousse and garnished on top with a white ganache plait, white chocolate shavings and finished with a fine dusting of cocoa. HANDLING PRODUCTS An important part of Kooka Brotha s HACCP program ensures that our allergen free products, such as Gluten-Free products, meet the allergen free requirements (in the case of Gluten-Free products, less than 2 parts per million of gluten). Our Gluten-Free product range is clearly flagged in this product guide. Gluten can be transferred to gluten free products from products that contain gluten by utensils, plates and containers that have come in contact with non-gluten free products. To avoid the risk of cross contamination from gluten between gluten free and non-gluten free products: Store gluten free products in clean containers that have not been used for storing products that contain gluten. Always store gluten free. products above products that contain gluten. Present gluten free desserts on clean plates that have been stored away from any risk of contact with gluten. Use dedicated utensils such as knives, cake server and tongs (clearly labelled or colour coded) for gluten free products that are not used for products that contain gluten. Check the ingredients label for any traces of gluten that might be listed in garnishes or components you intend to serve with gluten free desserts. If in doubt do not use. 10

A light, refreshing and tangy lemon and lime flan baked in a deep, crisp short pastry shell finished with a light dusting of icing sugar. Premium pecans contrast with a smooth fudge-like caramel centre to create this classic! APPLE PIE PRE-CUT INTO 12 PORTIONS. 24cm diameter defrosted shelf life of 4 days at 2 to 5 C, best served warm. A traditional deep dish pie filled with tangy apple in a sweet golden pastry shell. A thin layer of bread crumbs on the pastry base limits moisture. May be served hot or cold. Alternative display option for round products on a long tray where refrigerated display space is a premium. 13

14 TELO FAX O GATEAUX (UN-CUT) The Cointreau Gateau chocolate leaf can be cut frozen or defrosted with a hot dry knife BLACK FOREST GATEAU 24cm diameter portions. Defrosted shelf life of approx. 2 days at 2 to 5 C, best served chilled. Kirsch infused chocolate sponge layered with fresh cream, sour red cherries and finished with chocolate shavings, fresh cream rosettes and grated chocolate. COINTREAU GATEAU 24cm diameter portions. Defrosted shelf life of approx. 2 days at 2 to 5 C, best served chilled. Layers of blonde and chocolate sponge and fresh cream flavoured with oranges, orange liqueur, mandarin and orange zest coated with chocolate leaf and topped with chocolate shavings. CAKES AND DESSERTS (UN-CUT) CHOCOLATE FUDGE TRUFFLE CAKE 25cm diameter 16 portions. Defrosted shelf life of 4 days at 2 to 5 C. A mouth watering chocolate fudge and nut cake finished with smooth chocolate ganache and fine handcrafted truffles. A re-sealable bag of Caramel Sauce is provided in the box with each Sticky Date Pudding. Break the seal before heating. The sauce can be put on the product or product portion and heated, or the whole bag can be heated first for multiple portions and poured over the product. STICKY DATE PUDDING 24.5cm diameter portions. Defrosted shelf life of 4 days at 2 to 5 C, can be served warm or chilled. A classic rich, dense sticky date pudding best served warm, a 600ml sachet of caramel sauce is included (approx 35ml per portion). PORTION CUTTING CAKES To cut even portions, cut the whole cake into half and then quarters. An Australian favourite with a deep tangy lemon filling on a golden pastry shell topped with peaks of fluffy meringue. The pastry shell has straight sides for easier cutting and is on a silver coated disc.
