2 MEET AUSTIN FIERO GENERAL MANAGER TROPIC FISH MAUI Austin is originally from San Diego, California but raised in Phoenix, Arizona and later moved to Hawaii. Growing up in a fishing family, his father use to offload his fish to Hilo Fish Company. It was during that time that he was introduced to Charlie and Kerry Umamoto and they offered him an opportunity to learn the seafood industry. He first started with the company back in 2005 at Kona Fish Company and worked there for 4 ½ years learning every aspect of the business from cutting fish to sales and servicing customers. In 2009, Austin moved back to Phoenix and started his own seafood distribution company that is still in operation with his business partner and brother currently overseeing the day-to-day tasks. When Austin is not working, he enjoys spending time with his fiancé, five Dachshunds (yes five), cooking good food and watching the Denver Broncos during the NFL football season.
3 MEET COLETTE AGUIAR OPERATIONS MANAGER FRESH IMPORT AND DOMESTIC LOGISTICS HILO FISH COMPANY Colette has been with the company for twenty-two years where she worked in accounts payable, accounts receivables, fresh inventory and all fresh imports. She attended Hilo High School and has an Associate Degree in Accounting from the University of Hawaii at Hilo. She thoroughly enjoys her job as she is constantly in contact with industry representatives from around the world and travels frequently to the mainland U.S. Her travels include product shows and implementing and training staff on the latest accounting system at offices in Los Angeles and New Jersey which are owned by CMU & Associates, the parent company of the Hilo Fish Company. She is married with two girls and her time off is spent with family and friends.
4 MEET JOLENE AURELIO FROZEN LOGISTICS MANAGER HILO FISH COMPANY Jolene has been with Hilo Fish Company for nineteen years and started in the Fresh Fish Imports Department. She eventually began working in the Frozen Imports Department and now serves at the Frozen Logistics Manager. Her current position requires much attention to detail and ensuring the many movement parts work properly. Jolene must oversee several tasks such as the freight process, trucking of goods, consolidation on the mainland west coast to Hawaii and making sure there is a proper paper trail for all transactions. When she is not working, Jolene loves to watch movies. Some Sundays are spent binging on Netflix or renting movies she has not seen. She is married to Jeffrey and is a proud mother of four, ages three to twenty. She says she has a very sports family so much of her time has always been engaging, encouraging and watching her children in football, baseball, track and cheerleading. All while working full time at Hilo Fish Company.

6 JAPANESE LOCAL STYLE MENPACHI Menpachi (aka Big Eye Reef Fish) is one of the best eating small reef fish found in Hawaii and there has been a good run on Kauai which is one of the best locations to find this delicious fish. INGREDIENTS: 2 Menpachi, scaled and cleaned ½ Cup Soy Sauce 1 Cup Water 2 Tablespoons Sugar 1 Package Somen Noodles, prepared according to instructions 2 Tablespoons Green Onions, chopped for garnish METHOD: In a large frying pan, add soy sauce, water and sugar and bring to a boil. Place cleaned fish in sauce and turn down heat to medium. Spoon sauce over fish while cooking, approximately 12 to 15 minutes. In a serving platter, place prepared somen noodles and carefully place fish on top. Pour remaining sauce over the fish and garnish with green onions. You may also add your favorite ingredients to the sauce such as mirin, sake and finely sliced ginger.
